Banana Parfaits with Chocolate Granola

1 C of rolled oats
1/2 C of toasted almonds, sliced
1/3C of toasted walnuts, chopped
1 1/2 C of unsweetened coconut, toasted and shredded
1 T of brown sugar + 1/4 C of brown sugar, packed and divided
1 t of cinnamon
2 T of unsweetened cocoa powder
1/4 C honey, divided
1/4 C semisweet mini chocolate chips
1/2 C of raisins
1 (32 oz.) container of vanilla yogurt
Zest from half of an orange
6 T of unsalted butter
4 ripe bananas cut into 1/4 inch slices

How to Make It:

Line a baking sheet with parchment paper and place the rack into the center of the oven.
Allow the oven to preheat to 350 degrees.
Toss together the oats, almonds, walnuts and coconut in a mixing bowl.
Sprinkle 1 T of brown sugar, the cinnamon and the cocoa powder over the top.
Toss until all the ingredients are mixed together well.
Spread 3 T of the honey over the mixture and toss until well covered.
Spread the mixture evenly over the prepared baking sheet.
Bake the granola 15 without stirring.
Allow the granola to cool.
Dump the chocolate chips into a mixing bowl.
Add the raisins and the remaining honey and stir until well combined.
Fold in the granola mixing until all the ingredients are blended together well.
Whisk together the yogurt and orange zest.
Cover the bowl and refrigerate until ready to use.
Melt the butter in a skillet over medium heat.
Stir in the remaining brown sugar.
Cook 2 minutes, stirring constantly, until the sugar is dissolved.
Lay the banana slices into the skillet and stir gently to coat.
Cook 1 minute or until the bananas just begin to color.
Place one spoon of warm bananas into the bottom of the parfait glasses.
Add 1/2 C of the yogurt mixture.
Top with the chocolate granola.

Makes 8 servings

Vanilla Applesauce Dip

2 C of applesauce
6 T of vanilla yogurt
1 t ground cinnamon

How to Make It:

In a serving bowl put the applesauce.
The yogurt is folded in until combined well.
Stir in the cinnamon and mix well.
Put in refrigerator covered tightly for at least 1/2 hour before serving.

Makes 8 servings

Serve this to the little ones who can’t handle the other snacks and appetizers. For the little ones use animal crackers, graham crackers or vanilla wafers for dipping.

Cornbread Cinnamon Twisters

2 (8 oz.) cans refrigerated cornbread twists
2 T of butter, melted
4 t of cinnamon sugar

How to Make It:

The oven is preheated to 375 degrees F.
A cookie sheet is lightly sprayed with a non stick cooking spray.
Separate both cans of the dough into 2 separate rectangular pieces.
With you fingertips seal any perforations in the dough.
Each rectangle is rolled to 12 inch long and 7 inch wide.
With butter evenly brush each rectangle.
Over both rectangles sprinkle the cinnamon sugar. evenly.
The dough is cut crosswise into 12 strips each.
Each strip is cut in half.
The strips are twisted and put on the prepared cookie sheet.
Put in the preheated oven and bake 10 minutes or until a dark golden brown.

Makes 12 servings

These sweet twists make the kids go a little crazy. You may add yogurt or pudding on the side for dipping.

Mixed Dried Fruit Dip

1/2 C of pineapple cream cheese, softened
2 (8 oz.) containers of lemon yogurt
1/2 C of dried mixed fruit

How to Make It:

Place the cream cheese and yogurt into a mixing bowl.
Use an electric mixer on low speed and mix until combined and smooth.
Fold the dried fruit into the mixture until blended in well.
Cover with plastic wrap and chill for at least 1 hour before serving.

Makes 8 servings

This is a great dip to serve to children. Add sliced fruit such as oranges, pears or apples or place grapes on party toothpicks for a fun addition to the dip.

Lamb Chops and Bread Pudding Dinner

4 lamb chops
2 carrots cut into 1/2 inch slices
10 small new potatoes
1 C of uncut green beans
2 C of chicken broth
4 slices of bread
4 t of strawberry preserves
2 eggs, lightly beaten
1 C of milk
1/4 C of honey
1 t of vanilla
2 T of raisins
1/4 t of ground cinnamon
2 C of yogurt
1/2 C of fresh dill

How to Make It:

Lightly coat the bottom of the cooker with cooking spray or oil.
Trim the lamb chops and place them in the bottom of the cooker.
Spread the carrots, potatoes and green beans evenly over the top of the chops.
Slowly pour the broth over the meat and vegetables.
Place the cooker trivet over the meat and vegetables.
Spread 1 tsp of the preserves over one side of each slice of bread.
Cut the bread slices into 1 inch cubes.
Whisk the egg and milk together in a small mixing bowl.
Whisk in the honey and vanilla until blended together well.
Coat a custard dish with cooking spray.
Place half of the bread cubes into the custard dish.
Sprinkle the bread cubes with half of the raisins.
Pour half of the milk mixture over the bread and raisins.
Repeat the layers a second time.
Sprinkle the top with the cinnamon.
Wrap the custard dish with foil being sure it is sealed tightly.
Place the wrapped dish onto the trivet.
Bring the cooker to high pressure and cook for 10 minutes.
Quickly release the pressure under cold water.
Whisk the yogurt and dill together in a small dish until well combined.
Spread the dill sauce over the chops just before serving.

If you prefer, you can brown the chops in the cooker before adding the other ingredients. This will improve not only the flavor but the appearance of the dish.

Nutritious Berry Blitz

1 1/2 C fresh or frozen blueberries
2 C of vanilla yogurt
1/2 large banana
2 T honey

How to Cook It:

Place the blueberries and yogurt into the blender.
Cut the banana in chunks and add to the blender.
Puree until the mixture becomes smooth and creamy.
Add the honey and blend just long enough for the honey to mix in.

Frozen blueberries are just as nutritious as fresh blueberries. You may use fresh blueberries instead of frozen ones if you prefer. Adjust the honey to your taste or use lemon juice if you prefer a little bite.

Cold Breakfasts Can be Healthy Too

Go to the cereal aisle of any grocery store and you will find that the choices are unlimited. You can buy breakfast bars, energy bars, and cereal bars as well as healthy cereals. Go down the produce aisle and you can find all kinds of healthy fruit that can be cut into slices and eaten. Even choosing dried fruit such as raisins, bananas and cranberries can be a healthy choice.

Keep sliced cheese and sliced meat on hand. Nuts are also a wonderful choice. Buy yogurt that are in tubes or single serving containers and keep fresh nuts on hand. Keep some tortillas in your refrigerator for those mornings when time is a factor.

Always have peanut butter, honey and jelly on hand. Grapes are also a great choice for breakfast food. Vegetables such as carrots and celery sticks can also come in handy for a nutritious breakfast. Ants on a log are a great breakfast food. Take a celery stick, fill it with peanut butter and put raisins on top. The kids will fall for these in an instant.

Not much time, roll some ham and cheese together and make a meat sandwich. Add some cream cheese to a bagel and you have a healthy breakfast. Take a slice of bread and add some fruit and cream cheese and it’s a cold breakfast in a flash.

Don’t try to skip breakfast. Most doctors say it is the most important meal of the day. You need energy to make your brain work and breakfast supplies that energy as well as much need nutrition to keep the body and brain going.

Just think ahead and use your imagination. Breakfast can be an easy meal to prepare. Use prepared breakfasts ideas as well as you own and your family will start feeling the brain power earlier in the day.

Kids don’t have a clue what is good for them. The next time they want breakfast, just hand them one of the many ideas mentioned above. Add a juice box and they will think that they have conquered all.

Cooked Mixed Fruit Dish

1/2 C of no soak dried peaches
1/2 C of no soak dried apricots
1/3 C of no soak dried pineapple
1/4 C of no soak dried mango
1 C unsweetened clear apple juice
4 T of low fat plain yogurt

How to Cook It:

Place all the dried fruits into a saucepan.
Pour the apple juice into the pan.
Over medium heat bring the above mixture to a slow boil.
Simmer 10 minute, covered tightly over low heat.
Transfer the fruit to 4 small bowls and top each bowl with 1 T of yogurt.

If you can’t find any of the dried fruit in this recipe you may substitute your favorite ones instead. For a special breakfast treat top with a flavored yogurt instead of plain

A Quick Breakfast Can Be More Than a Bowl of Cereal

Fruit is a wonderful alternative. Cut up some fresh strawberries, cantaloupe, honeydew melon, some kiwi, some watermelon or even bananas and place in easy to go snack bags made for the refrigerator. Grapes are another great way to start the day.

You can add almost anything to a tortilla to make a great breakfast. Peanut butter and jelly is a great choice. Honey, cream cheese, some cut up raw vegetables or salad mix with your favorite dressing, even applesauce will make breakfast tortillas a favorite with your family. Use your leftover steak or chicken in a sandwich form or in a tortilla with some shredded cheese and some low fat mayonnaise and roll and go.

Cereal bars or breakfast bars that you can find at the grocery store are wonderful to start the day. Add a juice box of orange juice for the car and you have healthy breakfast for them to consume.

Grocery stores have granola bars, graham crackers, and even single serving yogurts in easy to serve packages. Try taking a graham cracker and some honey or cream cheese and making a sandwich out of it. The kids will crave them. They also have yogurt in a tube like a Popsicle that is easy to eat and very nutritious. Nuts are a great source of protein. How to Cook It:

Divide the two fruits in half and place into the bottom of 4 glasses.
Whisk together the yogurt, sugar and cinnamon until blended well.
Spoon the yogurt over the top of the fruit.
Add the remaining fruit over the top of the yogurt mixture.
