Beef and Bean Cowboy Wraps

What You Need:

1 lb. lean ground beef
1 (28 oz.) can barbecue flavored baked beans
2 C frozen whole kernel corn
4 1/2 tsp Worcestershire sauce
1 C reduced fat cheddar cheese, shredded
12 (8 in.) flour tortillas
3 C lettuce, shredded
1 1/2 C tomatoes, chopped
3/4 C reduced fat sour cream

How to Make It:

Break the beef up in a large skillet.
Place the skillet over medium heat and cook the beef, stirring often for 8 minutes or until cooked through.
Drain the beef and return it to the skillet.
Stir in the beans, corn and Worcestershire sauce well.
Bring the mixture to a bowl then reduce the heat to low and simmer for 5 minutes.
Evenly sprinkle the cheese over the top of the meat mixture and cook 2 minutes or until the cheese has melted.
Spread the 1/2 C of the mixture down the middle of each tortilla.
Place lettuce, tomatoes and a little sour cream over the meat.
Roll each of the tortillas around the filling and serve.

Makes 12 wraps

These wraps are a great way to get the men in your life to start eating healthier. Try adding chopped onion or chopped bell peppers for a little extra flavor and add nutrition.

Mushroom Burgers from the Microwave

What You Need:

1/4 C of cornstarch
2 (10 1/2 oz.) cans of condensed beef consommé
1 (6 oz.) jar of sliced mushrooms
4 tsp Worcestershire sauce
1 tsp dried basil
1 egg, lightly beaten
1/2 C of bread crumbs
1 onion, chopped fine
1/2 tsp season salt
1/4 tsp pepper
1 1/2 lbs. ground beef

How to Make It:

Place the cornstarch and consommé together in a bowl and whisk until smooth.
Add the mushrooms, Worcestershire sauce and basil and stir until blended in well.
Place the egg, bread crumbs, onion, salt and pepper into a bowl and stir to combine.
Add the meat to the bread crumb mixture and mix well.
Form the meat mixture into 6 patties.
Arrange the patties in a 1 1/2 qt microwave safe dish and cover.
Place the dish in the microwave and cook on high for 6 minutes.
Drain off any liquid and rearrange the patties moving the ones inside to the outside and the ones outside to the inside.
Pour the mushroom gravy over the patties.
Recover the dish and return to the microwave.
Cook the burgers on high 10 minutes or until the meat is completely cooked through.

Makes 6 servings

Could a delicious meal be any simpler? These mushroom burgers taste great with mashed potatoes and a side of fresh corn or a side of noodles or rice topped with the delicious gravy.

Flavorful American Pot Roast

3 C of frozen pearl onions
4 large potatoes, halved lengthwise and cut into 1/2 in slices
1 t of salt, divided
1/2 t of pepper, divided
1 1/2 lbs. boneless chuck roast
6 T of tomato paste
2/3 C of beef broth
2 T of Worcestershire sauce
2 C of whole baby carrots
3 C of frozen green beans
8 fresh mushrooms, sliced thick

How to Make It:

Preset the oven temperature to 450 degrees allowing the oven to preheat.
Use a non stick cooking spray and coat the bottom, sides and lid of a Dutch oven pan.
Spread the onions and potatoes out over the bottom of the pan.
Sprinkle with half of the salt and half of the pepper.
Season the roast with the remaining salt and pepper and place it over the vegetables.
Put the tomato paste into a mixing bowl.
Pour the beef broth and Worcestershire sauce in the bowl and whisk until blended well.
Pour half of the mixture over the meat.
Layer the carrots, then the green beans and then the mushrooms over the top of the meat.
Pour the remaining sauce over the vegetables.
Cover and bake 50 minutes or until the vegetables are tender and the meat is cooked through.

Makes 4 servings

Be sure to choose a good quality roast for a moist, tender and flavorful meal. Be careful not to over cook this dish. Overcooking will cause the roast to become tough. When the aroma of the meal is evident check the dish to see if the meat is done and the vegetables are tender then adjust your cooking time as necessary.

Sweet and Sour BBQ Chicken Quarters

6 chicken leg quarters
3/4 C of ketchup
1/2 C of orange juice
1/4 C brown sugar, packed
1/4 C red wine vinegar
1/4 C of olive oil
4 t fresh parsley, minced
2 t Worcestershire sauce
1 t garlic salt
1/2 t pepper
2 T + 2 t of cornstarch
1/4 C of water

How to Make It:

Cut the leg quarters at the joint then place them in the crock pot.
Whisk the ketchup, orange juice and brown sugar until the sugar is dissolved.
Whisk in the vinegar, oil, parsley and Worcestershire sauce.
Add the garlic salt and pepper and whisk to blend in well.
Pour the mixture evenly over the chicken and turn the chicken to coat completely.
Cook covered on low temperature 6 hours or until the internal temperature reaches 180 degrees.
Remove the chicken to a warmed serving platter.
Dip out 2 C of the cooking sauce from the slow cooker and pour into a pan.
In a small bowl whisk together until smooth the cornstarch and water.
Place the pan over medium heat and stir in the cornstarch water.
Bring to a brisk boil and stir constantly for 2 minutes or until thick.
Just before serving pour the sauce over the chicken.

Makes 12 servings

If you’re looking for something a little different why not try this for Christmas. Cook it in the slow cooker while you prepare the rest of the meal. Kids love this dish. Separated chicken legs and thighs can be used for quicker preparation.

Spiced Up Ham Hash

1 onion, chopped
1 (14 1/2 oz.) can kidney beans, drained well
2 C of tomatoes, chopped
2 C new potatoes, diced
2 C of frozen corn
8 oz. ham, cooked and diced
2 T tomato paste
1 T Worcestershire sauce
1 T of soy sauce
1 dash of Tabasco sauce
1/2 t of salt
1/4 t of pepper

How to Make It:

Spray the bottom of the pressure cooker with cooking spray.
Place the onions, beans, tomatoes, potatoes and corn into the pressure cooker.
Layer the ham slices over the vegetables.
Stir in the tomato paste, Worcestershire, soy and Tabasco sauce.
The cooker is brought to high pressure and cook for 15 minutes.
Slowly release the pressure.
Before serving season the hash with salt and pepper.

This is great served on a cold morning. You can replace the canned beans with 2 C of quick soaked fresh kidney beans. 14 1/2 oz. cans of vegetables can be used in place of the fresh and frozen vegetables if you prefer. Be sure to drain canned vegetables well before placing them in the pressure cooker. The Tabasco sauce is optional in this recipe.
