Eggplant Parmesan (LOW FAT)

Ingredients:

1 eggplant pared and sliced 1/2″ thick
1 egg white, lightly beaten with 2 tablespoons water
1/2 cup seasoned italian bread crumbs
1 cup reduced fat spaghetti sauce
3/4 cup shredded fat free mozzerella cheese
Grated Parmesan cheese for garnish

Instructions:

Coat eggplant with egg white, then dust with bread crumbs. Arrange on baking sheet and bake at 350 degrees F for 30 minutes. Flip and bake 10 more minutes until browned. Spread sauce in bottom of a square baking dish. Arrange half eggplant over sauce. Add half cheese. Repeat layering pattern. Bake 350 degrees F for 30 -40 more minutes. Eggplant should be tender when done. Sprinkle with a small amount of grated parmesean cheese at serving time.

Lunchtime Wraps (LOW CARB)

Ingredients:

1 Low carb, whole wheat tortilla
3 tablespoons Apple Butter
2 slices turkey breast deli meat
***or leftover turkey or chicken breast from dinner chopped up
1/3 apple cored and thinly sliced
1 thin sliced provolone cheese
1/2 cup lettuce shredded
1 thin slice of onion

Instructions:

Spread apple butter on the tortilla. Layer the rest of the ingredients on top of this and to one side. Roll and slice diagonally. Better than what you might find at the local sub shop.

Mashed Almost Potatoes (LOW CARB)

Ingredients:

1 bag frozen cauliflower
4 ounces cream cheese
1/2 cup sharp cheddar cheese
2 teaspoon garlic
salt and pepper

Instructions:

Cook cauliflower as usual until just tender and drain. Run through food processor, blender, or mash by hand with a masher. Mash in the other remaining ingredients. Salt and pepper to your liking and serve as you would mashed potatoes.

Want a different flavor? Replace 1/2 cup sharp cheddar cheese with a different cheese like feta, or mozzerella … or 1/4 cup of your favorite low carb salad dressing, such as blue cheese!

Blueberry Bran Muffins (LOW GI)

Ingredients:

2 cups oat bran
1/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 cup nonfat or low-fat vanilla yogurt
1/2 cup orange juice
1/2 cup fat-free egg substitute
2 tablespoons canola or walnut oil
3/4 cup fresh or frozen (unthawed) blueberries

Instructions:

In a large bowl mix together oat bran, sugar, baking powder, and baking soda. In another bowl combine yogurt, orange juice, egg substitute and oil. Add yogurt mixture to the oat mixture and stir until they are well blended. Next, add in the berries. Spritz muffin tin with nonstick spray. Fill cups approximately 3/4 full. Bake at 350 degrees F for 15 minutes or until toothpick/fork stuck in the center comes out clean.

Leftovers keep nicely in the fridge or freezer! You can easily substitute raspberries for blueberries for a different muffin.

In a Manner of Speaking It’s a Matter of Timing

When you are trying to combine eating, being active and either weight loss or management, along with staying healthy, timing is everything. The way the body breaks down different types of food and when each of those substances are either used or stored, is an important aspect when it comes to managing weight. Sugar, which is not processed immediately by the body as energy, is turned into insulin and stored as fat for later use.

When we consume food, our body converts carbohydrates into immediate blood sugar, also known as glucose, which is our main source of energy. Depending on our blood sugar level, we will feel energetic or extremely sluggish. Blood sugar levels also have an effect on how hungry we are and what we crave. Finally, blood sugar determines whether we burn fat or store it away for another time.

Insulin is a hormone, produced by our pancreas that moves blood sugar throughout our body where it is used as energy. When the body is overwhelmed with carbohydrate-rich foods, the pancreas produces insulin like crazy to tell the body to start cranking out the blood sugar for the body to use as energy and reducing the amount of blood sugar in the body. Insulin is actually meant to tell your body to use the energy to lower blood sugar.

Our body sees all of the signals that there is plenty of energy ready for use at the drop of a hat and backs off burning fat and starts to fill up the reserve stores. The biggest part to worry about is not the fact that our body stores fat, but when the blood sugar drops afterwards and forces us to crave more high-sugar foods that starts the cycle all over again while just trying to take in more sugar to balance the sudden dip.

Of course simple carbohydrates are the first to be converted to blood sugar by the body, but eventually everything ends up breaking down and getting stored as fat. The trick is to keep your blood sugar levels even instead of this roller coaster of blood sugar. Once your body gets used to having high blood sugar levels at all times, the insulin becomes non-existent to your body, leading to the onset of Type-2 diabetes.

Once your body no longer recognizes the insulin is there to help you reduce your blood sugar, you start storing everything as fat. When you are trying to lose weight or manage the weight you are currently at, having everything stored as fat completely defeats the purpose you are trying to accomplish. Eating the right foods at the right times during the day will help you maintain your insulin levels and keep you from bingeing on sweet treats.

Keeping a journal is a great way of finding out how your body is reacting to different types of foods. A journal can help you keep track of and pay attention to those sluggish times as well as your sugar “crash” times. Be sure to note these as well as the foods that are craved during these times. Paying attention to not only what you’re eating but when you are eating will help in maintaining energy levels, weight loss, weight management and a healthier lifestyle.

We have all heard of the show “The Biggest Loser”. Well, I have been on a quest to lose 87 pounds and I mentioned in my last post that I had 28 pounds to go. So while I am not necessarily in the same league as the contestants on “The Biggest Loser”, I have still gone quite a way.

I started my journey in March of this year (2009), and have made great strides to accomplish what I set out to do. For those of you who are counting, that makes 59 pounds lost so far. Eating Healthy and a Blog Give-a-Way!

It’s no secret to anyone who knows me, that for many years I have battled with my weight, and have usually been on the losing end.  I have fluctuated as little as 5 pounds to as many as 80 or more pounds of excess weight hanging on my medium build frame.  A few years ago, I decided enough was enough and I started my journey to healthier eating and a healthier life style.  I joined Medical Weight Loss, and let me tell you that was the best money I ever spent!  I have learned so much from the girls over at the Canton, MI clinic and they are always supportive and encouraging when I go in.

While Medical Weight Loss could help me lose the weight, I needed to learn how to approach that weight loss differently than I had in the past.  Being a healthy eater required that I became both educated and smart about what healthy eating actually is.  Being food smart isn’t about learning to calculate grams or fat, nor is it about studying labels and counting calories.  For me it is all about moderate eating, consisting of healthy meals at least three times per day and that what I eat is well balanced.  I needed to say good bye however to the ease of running through a drive-thru when in a pinch, or picking up a snack out of a vending machine.

Eating healthy requires quite a bit of leeway for me.  I might eat too much or not enough, consume foods that are sometimes more or less nutritious or just blow it all together. However, you should always fuel your body and your brain regularly with enough food to keep both your mind and body strong and alert.  This was something I have the hardest time remembering.

Here is what I have learned: A healthy eater is a good problem solver, we learn to solve a great many dilemmas such as how to still have foods we love but to do so on a healthy scale.  Healthy eaters have learned to take care of themselves and their eating with sound judgment and making wise decisions.  Healthy eaters are always aware of what they eat, and know the effect that it will have on their bodies.

When we are unable to take control of our eating habits, we are also likely to get out of control with other aspects of life as well.  You may find yourself spending too much, talking too much, or even going to bed later and later. I know that when I am out of control in one area of my life, generally I am out of control in many.

You should always remember that restricting food in any way is always a bad thing.  Don’t use food as a reward or punishment system…EVER.  I have fallen into that trap more times than I can count, and it usually ends in disastrous results.  Healthy eating is a way of life, something that you can do to enhance your body or your lifestyle.  If you’ve thought about making your life better, healthy eating might just be the place to start.  You’ll make life easier for yourself, those around you, and even your family.  Not to mention, for us parents… we want to practice what we preach right?
