Easy Walnut Cookie Squares

1 cup flour
1/4 tsp salt
1/4 tsp baking soda
2 cups brown sugar, packed
2 cups walnuts, chopped
2 eggs
1 tsp vanilla extract

Preheat oven to 325 degrees and line baking sheet with parchment paper.
In large bowl, stir together the flour, salt, and baking soda.
Add the brown sugar and walnuts and mix until blended well.
In separate bowl, whisk eggs together with vanilla extract.
Stir egg mixture into dry mixture and stir until combined.
Press dough onto bottom of baking sheet.
Bake in preheated oven at 325 degrees for 12 to 15 minutes or until browned lightly.
Remove and let cool on rack, then cut into squares.

Floret Salad with Raisins and Walnuts

What You Need:

6 C broccoli florets, steamed until tender
3 C cauliflower florets, steamed until tender
1/2 C of raisins
1/3 C walnuts, broken
1/4 C salad oil
1/4 C cider vinegar
1 tsp honey
1 tsp salt
1/2 tsp dried basil
1/2 tsp pepper

How to Make It:

Place half of the broccoli in a large salad bowl.
Layer half of the cauliflower over the broccoli.
Sprinkle half of the raisins and walnuts over the top.
Repeat the layers again.
Cover the bowl and chill for at least 2 hours.
Whisk the oil, vinegar and honey together in a mixing bowl.
Add the salt, basil and pepper and whisk until blended in well.
Pour the dressing over the salad just before serving.

Makes 10 servings

What a yummy budget friendly salad to serve at those potluck dinners or large families get together. It’s colorful and healthy but most importantly it tastes great. After adding the dressings serve the salad within 2 hours to keep it from losing its crisp fresh taste.

All in One Turkey Supper

1 lb. boneless turkey breast
1/4 t of salt
2/3 C of frozen cranberries
2/3 C of orange marmalade
1 t of lemon juice
1/8 t of pepper
1/2 C of walnuts
1/2 C of turkey broth
2 C of pearl onions
1 large sweet potato cut in 1/4 inch slices
3 C of frozen cut green beans
1 t of dried sage

How to Make It:

Spray the inside and the lid of a cast iron Dutch oven with a non stick cooking spray.
Allow the oven to preheat to 450 degrees.
Lay the turkey into the bottom of the prepared pan.
Sprinkle the salt evenly over the top of the turkey.
Put the cranberries into the blender or food processor.
Blend until the cranberries are broken into small chunks.
Place the marmalade, lemon juice and the pepper in with the cranberries.
Pulse a couple of times to mix the ingredients together well.
Put the walnuts and broth in and blend until the walnuts are chopped into bite size pieces.
Pour half of the cranberry mixture over the top of the turkey.
Spread the onions over the top of the turkey.
Place the sweet potato slices evenly over the onions.
Add the remaining cranberry mixture.
Scatter the green beans over the potato slices and sprinkle the sage evenly over the top.
Place the lid on the pan and bake for 35 minutes or until the turkey is cooked through.
Remove the turkey to a platter and cool slightly before slicing.
Serve the sauce over the top of the turkey slices.

This is a great way of including a special meal into our everyday life without spending hours in the kitchen. The cranberries may be dried, fresh or frozen. The turkey and green beans may also be frozen. There is no need to thaw frozen ingredients as it will not change the amount of cooking time but will save you valuable kitchen time. If you’re in a pinch use orange juice with pulp instead of the marmalade.

1/2 C butter, melted

How to Make It:

In a 1 1/2 qt crock pot put the pie filling.
Combine the cake mix and butter in a small bow and mix until crumbly.
Crumble the mixture over the pie filling.
Spread the walnuts evenly over the top of the crumb mixture.
Cover the crock pot and cook on low for 3 hours.

Sneaking to kitchen to take a bite is often the most stressful time for family and friends. They don’t want to be in the way but those smells make it impossible to stay away.

Appetizers can help to curb the hunger but still leave room for that turkey and all the fixings. Appetizers don’t have to be heavy. Depending on how long it will be before dinner or if a hearty breakfast was served will determine on the type of appetizers you serve.

Some examples of Christmas appetizers might be:

• Nuts
• Cheese
• Vegetables and dip
• Fruit
• Finger sandwiches
• Chicken nuggets

Nuts can be placed in bowls right from the package. Roasted nuts such as pecans or walnuts are quite tasty. Spruce them up by adding a sugar glaze.

Cheese can be cut in cubes and placed on trays. Cheese and crackers are also a good idea. Cheese balls rolled in nuts or herbs or spreadable cheese topped with bacon, tomatoes or olive slices are great with any type of crackers.

Vegetables and dip make a great appetizer. It’s healthy and won’t spoil their Christmas dinner appetite.

Applesauce Walnut Breakfast Cake

1/3 C of brown sugar, packed
1/2 C walnuts, chopped and divided
2 C baking mix
1/2 t ground cinnamon
1/3 C of milk
1 C chunky applesauce

How to Cook It:

In a bowl toss together the brown sugar and half of the walnuts then set aside.
In a separate bowl put the baking mix, the remaining walnuts, cinnamon, milk and applesauce.
Mix for 30 seconds or until the dry mix is moistened through.
With a non stick cooking spray lightly grease a round microwave safe dish.
Spread out the batter in the prepared pan and sprinkle the brown sugar mixture evenly over the top.
Place in the microwave on high 6 minutes or until the top springs back when touched.
Cool slightly and cut into wedges before serving.

This is a quick satisfying microwave coffee cake that makes a great quick breakfast. It will keep in an airtight container for up to 2 days.

Filled Baked Apples

What You Need:

4 large apples
1/4 C walnuts, chopped fine
1/4 C brown sugar
1 tsp ground cinnamon

How to Make It:

Heat the grill to very low temperature.
Cut 1/2 inch off the top of the apples and set aside.
Core the apples and peel them about 1/3 of the way down.
In a small bowl put the walnuts, brown sugar and cinnamon and mix together.
Each hollowed out apple is stuffed with 1/4 of the filling.
Put the tops back on the apples and wrap each with foil.
Place the prepared apples on the grill and close the lid.
Cook the apples for 25 minutes or until soft.

Creamy Apple Raisin Salad

1 (24 oz.) container small curd cottage cheese
2 apples, diced
4 tbsp raisins
2 large carrots, shredded
4 tbsp walnuts, chopped
1/4 tsp pepper

How to Make It:

In a large serving bowl mix together the cottage cheese and diced apples.
Fold in the raisins and shredded carrots until blend in well.
Add the walnuts and mix until combined.
Sprinkle the top with pepper just before serving.

Makes 8 servings

Need a last minute salad for your July 4th cookout? This one will easily fit the bill. If you are serving your guest outside keep this salad cold by placing it in a larger bowl filled with ice. The walnuts and the pepper are optional.
