Vanilla Chocolate Cookie Pops

1 (12 oz.) pkg. vanilla baking chips
2 T solid shortening, divided
Orange food coloring
1 (16 oz.) pkg. cream filled chocolate cookies
32 Popsicle sticks
1 (6 oz.) pkg. semisweet chocolate chips

How to Make It:

In a microwave safe bowl put the vanilla baking chips and 1 Tbsp of shortening.
Microwave on high for 1 minute and then stir until smooth.
If the chips aren’t melted enough microwave for 30 seconds longer then stir until smooth.
Stir in the orange food coloring until the desired color is reached.
Carefully remove the tops of each cookie.
Each Popsicle stick is dipped in the melted chip mixture and placed on the bottom half of each cookie.
Put the tops back on the cookie and place them on a sheet of waxed paper.
Put the cookie in the freezer for at least 15 minutes.
If the chip mixture has hardened reheat in microwave 15 seconds.
Each cookie pop is dipped into the melted chocolate allowing any excess to drip back in the bowl.
Put the cookies back on the wax paper and put back in the freezer for 30 minutes or until set.
In another microwave safe bowl put the chocolate chips and the remaining shortening.
Put in microwave on high 1 minute then stir until smooth.
Drizzle the chocolate mixture over each of the cookie pops.

Kids love these lollipops because they are different from the normal lollipops. The lollipops can be individually wrapped and given to each trick or treaters or given as a party favor.

Makes 32 cookie pops

Spider Ice Cream Cups

8 individual graham cracker tart shells
8 scoops of vanilla ice cream
16 chocolate cream filled cookies, crumbled
16 red M&M candy pieces
16 pieces of black shoestring licorice

How to Make It:

Lay the tart shells onto a baking sheet.
In each of the shells place 1 scoop of ice cream.
Cover the ice cream well with the crumbled cookies.
Put the shells in the freezer for at least 30 minutes or until the ice cream has hardened.
Take shells from freezer and press 2 M&M’s in the front of the ice cream to resemble eyes.
Slice each of the licorice pieces into 4 strips.
Press 8 strips of the licorice into each scoop of ice cream to form the spider’s legs.
Put back in the freezer until you are ready to serve.

Kids love these easy and simple spiders. You may use any flavor of ice cream and any colors of M&M’s that you prefer.

Makes 8 servings

Granola Apple Smoothie

2 apples, peeled, cored and sliced
4 T of water
1 C of prepared custard vanilla pudding
1/2 C of milk
1 granola bar

How to Make It:

In a small saucepan over low heat, stir together the apples and water.
Cook the apples 3 minutes or just until they are beginning to soften.
Drain and slightly cool the apples.
Place the apples in the blender.
Add the pudding and pour in the milk.
Break the granola bar in half and place one half of the bar into the blender.
Blend the mixture just until combined.
Pour immediately into glasses.
Crumble the remaining one half of the granola bar over the top the smoothie before serving.

Add a few blackberries, raspberries or blueberries into the blender along with the granola to make a special treat.

Drink a Quick and Easy Breakfast

fruitsmoothies3Fruit and breakfast smoothies are a great way to start your morning while getting the nutrition you need. Some are really difficult and may take a while to prepare, but there are several that are really easy and don’t require a lot of prep time to make them. In fact, you usually have a lot of these ingredients on hand at home.

Take one cup of water, a 6 ounce can of orange juice concentrate, one cup of milk, 10 cubes of ice, 1 teaspoon of vanilla and a pinch or two of sugar, depending on your tastes. Place all the ingredients into the blender and blend until very smooth. Freeze to use later or drink when blended. Because there is no slicing or dicing you can prepare this drink quick and easy the morning you want to serve it.

Coffee is definitely a breakfast staple, but here is a new twist. Take 6 ice cubes, 2 bananas, about a cup of milk and 2/3 cup of coffee and blend until smooth. This drink will kick start your day and give you a flavor to savor.

How about one for the kids? Adults love this too, so prepare to enjoy! You will need to chunk 1 frozen banana, a cup of milk, 1/2 C of vanilla ice cream and 2 tablespoons of peanut butter. Blend until smooth, if it is too thick to drink, add milk until you reach the consistency you desire and drink up!

For the next one you will need some frozen fruit. You can use any frozen fruit available such as strawberries, blueberries, peaches or which every fruit may be your favorite. Use a cup of frozen fruit, a cup of milk, a 1/4 up of sugar or sugar substitute and 1 teaspoon of vanilla. Blend together until smooth. This makes a great fruit smoothie and a great taste treat for breakfast.

Breakfast doesn’t have to be eaten anymore. Drinking breakfast can be just as fun and just as nutritional as the contemporary breakfast of bacon and eggs. Since people today are very health conscience, bacon and eggs to a lot of people are a no-no but smoothies can be a yes-yes. They are low in fat and low in cholesterol and taste really great. The next time instead of reaching for the frying pan, reach for the blender instead and eat or should we say drink to your heart’s content.

Vanilla Pudding Banana Ice Cream

3 eggs
1 T vanilla
1 (13 oz.) can Milnot
2 C of sugar
1 (4 oz.) box of vanilla instant pudding and pie filling
2 very ripe bananas

How to Make It:

Break the eggs into a large mixing bowl.
Add the vanilla and Milnot and whisk to combine.
Dump in the sugar and the pudding mix.
Beat the mixture on medium speed with an electric mixer until well blended.
Mash the bananas with a fork in a separate bowl.
Add the mashed bananas to the egg mixture stirring until well blended.
Place the mixture in the freezer canister of the ice cream maker.
Freeze as directed by the manufacturer.
Ripen the ice cream for at least 4 hours before serving.

Makes 2 quarts

The bananas are optional in this recipe but they add flavor to this simple ice cream. It’s the perfect way to cool off on those hot summer evenings.

Deliciously Quick Cinnamon Ice Cream

1/2 gallon vanilla ice cream, softened
3 1/2 t ground cinnamon

How to Make It:

Remove the ice cream from its container and place it in a mixing bowl.
Add the cinnamon and stir to blend together well.
Place the ice cream back in it’s original container and freeze for 4 hours or until firm.

Makes 1/2 gallon

This is the cheaters way of making cinnamon ice cream fast. If you have recipe for homemade vanilla ice cream add the cinnamon before placing the ice cream in the freezer canister to freeze.

Down Home Vanilla Ice Cream

What You Need:

1/2 C sugar
1/4 t salt
1 C of milk
3 egg yolks, beaten
1 T vanilla
2 C whipping cream, chilled

How to Make It:

Put the sugar and the salt into a saucepan over medium heat.
Add the milk and eggs and stir until well combined.
Stirring continuously, cook the mixture 3 minutes or until just starting to bubble.
Turn off the heat and allow the mixture to cool to room temperature.
When cooled stir in the vanilla.
Pour the ice cream into a refrigerator tray and freeze for 45 minutes or until turning mushy.
Refrigerate 2 bowls to chill.
Beat the whipping cream in one of the chilled bowls until soft peaks form.
Place the slightly frozen ice cream mixture into the other chilled bowl and beat until smooth.
Fold the whipped cream mixture into the smooth ice cream mixture.
Transfer the ice cream into 2 freezer trays.
Freeze for 3 hours, stirring every 10 minutes during the first hour.

Makes 1 quart of ice cream

To make this in an ice cream maker follow the above directions to adding the vanilla. Add the vanilla and the whipping cream at the same time and stir well. Place the mixture in the ice cream maker and freeze according to the manufacturer’s directions. Ripen the ice cream for 4 hours.
