Biscuit Topped Chicken Dinner

3/4 C of milk
4 t flour
1/4 t pepper
1 (10.75 oz.) can condensed minestrone soup
2 C cooked chicken, cubed
1 (3 oz.) pkg. cream cheese, cubed
1 (5 ct.) pkg. refrigerated country style biscuits

How to Make It:

Set the oven temperature to 375 and preheat.
Place the milk, flour and pepper into a jar with a screw down lid.
Screw the lid down tightly and shake until well blended.
Pour the mixture into a saucepan.
Whisk in the soup and place the pan over medium heat.
Cook stirring continuously until it bubbles and gets thick.
Fold in the chicken well.
Stir in the cream cheese and stirring continuously cook until the cheese melts.
Spoon the mixture into four 10 ounce baking dishes that have not been greased.
Cut each biscuit into 5 pieces and place the 5 pieces onto of each chicken dish.
Bake the chicken for 15 minutes or until the biscuits are golden brown.

Makes 4 servings

If you have left over turkey try it instead of the chicken in this tasty dinner. Add your favorite vegetable such as peas, corn or carrots to this dish for something a little different. Serve with a side salad for a quick dinner time treat.

Winter Roasts are Comforting and Warming

Meat and potatoes have a way of making us feel good and help us to ward off those cold winter days. Sometimes when it’s cold and snowy outside the comfort of a good home cooked meal is all you need to forget the chill outside. Fixing a good roast is as easy as making a sandwich.

Beef, pork and lamb cuts make the best roast. Look for flecks of fat or “marbling” when choosing a large cut of meat for your roast. Marbling helps in making a tenderer roast along with enhancing the flavor and juiciness of the roast. Beef that has been aged also enhances the flavor of the meat.

When it comes to types of meats to roast, there are many to choose from. Beef roasts and pork roasts are favorites, but roasted prime rib and leg of lamb have a great taste when roasted. A roasted chicken is moist and will have more flavor than fried chicken. Turkeys and hams are often roasted to enhance their flavor and texture.

Look for a cut of meat that is at least 2 inches thick. The larger the cut of meat, the moister the finished product which in turn makes for a less chewy piece of meat. Moist heat is important when roasting a large cut of meat. A large cut of meat when slow cooked should be braised to give it a moist texture and to seal in the flavors.

Browning the meat is a plus. It doesn’t matter if you are slow cooking on top of the stove, in the crock pot or in the oven. Browning meat before hand over high heat will help to caramelize the proteins and sugars found on the outside of the meat. This gives your roast a richer flavor.

It is best to season a roast before browning it. By doing this prior to browning, the flavors are sealed into the meat and not left in the bottom of a roasting pan. Roasts are best cooked between 300 and 350 degrees.

If you are adding vegetables such as potatoes, carrots, onions and celery to a roast in the oven, add them about 1 hour before the roast has finished cooking. They will be soft instead of mushy from being overcooked or crunchy from being undercooked.

If you are using vegetables and using a crock pot, always add the vegetables at the beginning of the cooking process. You want your vegetables to be soft and by letting them cook longer at the slow temperature, your end result will be vegetables that are soft but not mushy.

Water, broths, soups, juices, wine and even soda can be added to help keep your roast juicy and flavorful. Always be sure to cover your pan with foil or a tight lid to keep the liquids from escaping and causing your roast to become too dry.

Don’t forget to use a meat thermometer. Different meats cook in different time spans. A meat thermometer is the most reliable way to tell when any meat product is cooked all the way through. Roasts make the best fix it and forget meals. Add a side of fruit and a slice of warm homemade bread and you have a meal that is both comforting and warming.

Cumin Turkey with Squash

1 1/2 C of quinoa grain
2 C of chicken broth
1 1/2 lb. turkey tenderloin
1 t ground cumin
1/4 t of salt
2 scallions, sliced
2 mild green chilies, stemmed, seeded and chopped
1 squash, halved lengthwise and sliced
2 C of fresh spinach leaves, roughly chopped
1 red bell pepper, cored, seeded and sliced
1 C of salsa

How to Make It:

Place the oven temperature at 450 degrees allowing the oven to preheat.
Generously spray a cast iron Dutch oven with a non stick cooking spray.
Pour the chicken broth into the pan.
Add the quinoa and spread the mixture out evenly over the bottom of the pan.
Place the turkey into the pan and sprinkle with the salt and cumin.
Spread the scallions and green chilies over the turkey.
Add the squash and spinach leaves.
Top the spinach with the sliced bell peppers.
Spread the salsa evenly over the top of the spinach.
Cover tightly and bake 30 minutes or until the turkey is cooked through.

Makes 4 servings

Quinoa is a light grain with a light nutty flavor. It can be found in most supermarkets in the pasta/rice sections. If you prefer a little more bite to your dish use jalapeno peppers instead of the green chilies.

Honey Mustard Pork with Vegetables

1/2 t salt
1/4 t of pepper
1/2 C of honey
6 T of Dijon mustard
1 t ground ginger
1 t ground cinnamon
1/2 t ground cloves
10 small new potatoes
4 carrots, sliced into coins
3 C of frozen cut green beans

How to Make It:

Adjust the oven temperature to 450 degrees and allow the oven to preheat.
Lightly spray a cast iron Dutch oven with a non stick cooking spray.
Season the meat with the salt and pepper and place it in the bottom of the pan.
Place the honey and mustard into a small mixing bowl and whisk until well blended.
Add the ginger, cinnamon and cloves and stir until blended in well.
Pour the honey mustard mixture over the top of the meat.
Scatter the potatoes over the top of the meat.
Add the carrots and then the green beans.
Cover the pan and bake 45 minutes or until the pork is cooked through.

Makes 4 servings

Kids love this dish because of the honey mustard sauce. It is also low in fat and full of nutrients. Substitute chicken or turkey breast in place of the pork if you prefer.

All in One Turkey Supper

1 lb. boneless turkey breast
1/4 t of salt
2/3 C of frozen cranberries
2/3 C of orange marmalade
1 t of lemon juice
1/8 t of pepper
1/2 C of walnuts
1/2 C of turkey broth
2 C of pearl onions
1 large sweet potato cut in 1/4 inch slices
3 C of frozen cut green beans
1 t of dried sage

How to Make It:

Spray the inside and the lid of a cast iron Dutch oven with a non stick cooking spray.
Allow the oven to preheat to 450 degrees.
Lay the turkey into the bottom of the prepared pan.
Sprinkle the salt evenly over the top of the turkey.
Put the cranberries into the blender or food processor.
Blend until the cranberries are broken into small chunks.
Place the marmalade, lemon juice and the pepper in with the cranberries.
Pulse a couple of times to mix the ingredients together well.
Put the walnuts and broth in and blend until the walnuts are chopped into bite size pieces.
Pour half of the cranberry mixture over the top of the turkey.
Spread the onions over the top of the turkey.
Place the sweet potato slices evenly over the onions.
Add the remaining cranberry mixture.
Scatter the green beans over the potato slices and sprinkle the sage evenly over the top.
Place the lid on the pan and bake for 35 minutes or until the turkey is cooked through.
Remove the turkey to a platter and cool slightly before slicing.
Serve the sauce over the top of the turkey slices.

This is a great way of including a special meal into our everyday life without spending hours in the kitchen. The cranberries may be dried, fresh or frozen. The turkey and green beans may also be frozen. There is no need to thaw frozen ingredients as it will not change the amount of cooking time but will save you valuable kitchen time. If you’re in a pinch use orange juice with pulp instead of the marmalade.

12 slices of bacon
18 slices of sandwich bread
1/2 C of mayonnaise
4 T of Thousand Island dressing
12 lettuce leaves
12 slices of cooked deli turkey
2 tomatoes, sliced into 6 slices each
8 cherry tomatoes
8 sweet pickle slices

How to Make It:

In a skillet over medium high heat cook the bacon 10 minutes or until crisp, turning once.
The bacon is drained well using paper towels.
In a toaster toast the bread.
In a small mixing bowl put the mayonnaise stir in the Thousand Island dressing until well blended.
Over one side of each toasted slice of bread spread the mayonnaise mixture.
On the counter put 6 slices of bread mayo side up.
On each piece of bread put one lettuce leaf and 2 slices of turkey.
Over the turkey put 6 slices of bread mayo side down.
To the sandwich add 6 more lettuce leaves.
Over the lettuce put 2 slices of tomatoes.
On each sandwich put 2 slices of bacon.
The remaining toast mayo side down is put on top of the bacon.
Cut each sandwich into 4 pieces diagonally using a sharp knife.
On a wooden skewer put 1 sandwich piece and then a cherry tomato.
Another sandwich piece is added to the skewer.
One sweet pickle slice is added.
Another sandwich piece is added to finish the skewer.

Breaded Turkey Bites

1/2 C of dry bread crumbs
1/2 C of green pepper, chopped
2 egg whites
4 garlic cloves, minced
8 drops of hot sauce
1 lb. lean ground turkey
1 T of canola oil
1 C of ketchup
1/2 C of water
1/4 C of lemon juice
1/4 C red wine vinegar
2 T molasses
2 T of brown sugar
2 t of dry mustard powder
1 t chili powder
1/2 t cayenne pepper
1/2 t pepper

How to Make It:

In a large mixing bowl whisk together the bread crumbs, green pepper, egg whites, garlic and hot sauce.
Break up the turkey into the mixture and mixed well.
Shape the mixture into small meatballs.
Pour the canola oil into a skillet over medium heat.
Lay the meatballs in a single layer into the oil.
Cook 8 minutes, turning frequently until browned on all sides.
Drain the meatballs and put them back in the skillet.
Whisk together in a mixing bowl the ketchup, water, lemon juice, vinegar and molasses.
Add the brown sugar, mustard, chili powder and both peppers and whisk in until combined well.
Cover the meatballs with the sauce.
Allow the mixture to come to a boil then turn the heat to low.
Simmer covered for 10 minutes or until heated through.

Makes 10 servings

If you want turkey on your buffet but don’t want to cook a whole turkey this is the way to go. The hot sauce, chili powder and cayenne pepper may be omitted.

These tips can help get you off and running:

1. Decide on the menu ahead of time so you can make a list. Be sure to keep it simple but add enough variety to please everyone.

Yam and Turkey Stew

1 lb. turkey breast, cubed
1 onion, chopped
2 C of chicken broth
1 1/2 C dry white wine
1 bay leaf
1/2 t of basil
1/2 t of garlic powder
2 sweet potatoes, peeled and sliced
2 white potatoes, peeled and cut into cubes
1 C of celery, sliced
1/2 C of water
2 T of arrowroot
1/2 t of salt

How to Make It:

Spray the cooker with a cooking spray.
Place the turkey into the cooker and sprinkle with the onions.
On medium heat brown the turkey and onions for 8 minutes.
Pour the broth and wine into the cooker and stir to blend.
Add the bay leaf, basil and the garlic powder.
On medium heat bring the cooker to high pressure and cook 6 minutes.
Release the pressure quickly under running cold water.
Add in the sweet potatoes, white potatoes and celery.
The cooker is brought back to high pressure and the mixture cooked for 3 minutes.
Release the pressure quickly again under running cold water.
Remove the bay leaf from the pressure cooker and discard.
Stir the arrowroot into the 1/2 C of water until dissolved.
Add the arrowroot water mixture to the ingredients and stir until blended in well.
Return the cooker to medium heat and stirring constantly cook until thickened.
Sprinkle in the salt and stir to blend.

This taste like it has been simmering all day but it’s quick and simple. Use leftover turkey and potatoes to save time and money.

Turkey and Spinach Pita Wraps

What You Need:

1/2 C of mayonnaise
2 t curry powder
1 lb. ground turkey breast
2 oz feta cheese with basil and tomato, crumbled
1/2 t of salt
4 pieces of pita bread
8 slices of red onion
8 spinach leaves

How to Make It:

Set the oven to the broiler setting and allow the broiler to eat.
Blend the mayonnaise and curry powder together in a small mixing bowl.
Break the turkey up slightly in a mixing bowl.
Stir in 2 T of the mayonnaise curry mixture.
Add the cheese and salt and mix until all the ingredients are incorporated together.
Form the mixture into 4 even patties.
Arrange the patties on the rack of the broiler pan.
Broil 4 inches from the heat source for 12 minutes, turning once.
Spread the remaining mayonnaise curry mixture over the 4 pieces of pita bread.
Place one patty on each of the pieces of bread.
Layer 2 slices of onion and 2 spinach leaves over each patty.
Fold the pita over the meat to make the wrap.
