Who doesn’t enjoy a nice warm gooey chocolate chip cookie or that great pineapple upside down cake? Maybe you would rather have the main course and skip the dessert. It’s easy to have it all in one meal with the oven. Baking foods has been a way to cook for more years than the oven has been around. There numerous possibilities when it comes to baking from meats, to vegetables and fruits and our beloved desserts. Let’s see what “all the baking” is about.

It’s the versatility and availability that make baking such a popular method of cooking. It is very simple and it allows everyone to be able to create those fun dinners. You can find baked goods in just about every house you visit because everyone utilizes their oven.

Some people might say it’s awful to be stuck in the kitchen next to that hot oven when it’s a beautiful day outside, but in fact that’s not the case. You might be standing by that hot oven, but when you are cooking up some tasty fruit snacks or delicious summer treats it doesn’t seem so bad when enjoying those treats outside with your friends. In the cold winter months that warm kitchen is just the place everyone wants to be.

Baking has been around for centuries growing from cooking on stones to ovens we know today. Though it has been around for centuries not much has changed about the basics of baking. Baking uses dry heat to cook your food opposed to the grease used when frying foods. Therefore foods actually turn out healthier. Well most of it anyway. Here are some hints of things you might want to keep in mind when baking.

Oh that Sweet Tooth Heaven

Watch out for those baked sweets. It might seem quick and painless to answer when that craving for a gooey cookie knocks but don’t get to comfortable. The sweets that seem the easiest to throw together aren’t always going to be healthiest choices.

Timing is an Important Factor

A lot of the foods we bake start out frozen which means it’s going to be a little time consuming. Make sure you are leaving yourself enough time for the foods to thaw. Also remember to pre heat the oven which also takes a little extra time. This is definitely not a way to fix a last minute meal. With a little preplanning you won’t find yourself running around wondering just how to thaw that roast out and have dinner on the table in 2 hours.

Oven cooking opens up the possibility for just about anything. Cook up a main course meal with maybe some vegetables then wrap it all up with a baked dessert. The possibilities are endless. Go grab that pot holder and bake up some tasty treats that everyone can enjoy.

Watch Out for Those Sneaky Little Extras

Those checkout lines in the grocery store can be the best anglers around. It’s only those little extra’s that can bait and real you in before you know it. There are so many different items that are placed within the, already tight, confines of a checkout line. There is a good chance at least one of them will catch your eye. It may be the candy, the collector cards or even the small little shiny trinket. Oh and let’s not even bring small children into the picture because the odds are instantly increased.

With everyone feeling the difficulties of the recession, stores are counting more and more on the little extra impulse buys. Have you noticed that the checkout lanes are more organized and enticing than ever before? That’s because these last minute items are extremely important to their business. It is the magazine that you need to grab because you don’t have an updated copy, the gum you really need or that favorite candy bar, just waiting to be gobbled down on the way home.

Currently, impulse shopping is down. That being said, retailers are getting savvy to how consumers are beginning to shop. They are changing up the impulsive items. Where customer once would splurge on a seven-dollar bag of beef jerky, the stores are now replacing the dried meat with more health conscious alternatives like seven-dollar bags of dried fruit. The consumer is justifying the purchase by the “at least it is good for me” standard, not even aware he or she just spent the same amount of money.

There are a few tips to curbing that impulse shopping and allowing the call from the checkout line to grow more distant every day.

LIST

This is the single most important thing you can do if you are trying to save money. Many people believe that making a list will help to keep them on track when it comes to items they are going to buy, and it does, except when impulse buys come into the picture. By taking a list, you are able to track your spending and stick with your budget. This means if you need Parmesan cheese but you want the candy bar, you may have to settle for store brand to keep the balance in check.

SNACKS AND DRINKS

Parents will bring a snack and juice for their child while walking through the store so they don’t try to grab anything outside the cart. Subsequently, those parents also grab a box of goldfish and a soda. Why not bring in your own snack and drink to satisfy that snack attack?

CHECKOUT LINE CHOICE

Picking out the shortest line when checking out is a must if you want to avoid the extras. The less time you are standing around, the less likely you are to “find” something you “need.” Check the items on your list as you put them on the conveyor and make sure you know the prices ring up correctly. Some stores offer free items if they ring up your purchases incorrectly. If you stay busy, you will not have time to act impulsively.

Of course the checkout line is not the only place impulses hide. They also lay in waiting down the chip isle, soft drink isle and the candy isle. Ever notice how these isles are thoughtfully spread throughout the store like a team of well-trained snipers? This is not saying that you cannot ever go down those isles. It’s a warning to be weary when walking around without a plan. Make a list and stick to it. If you have a craving for some junk food, be sure to have some already on hand. Choose the checkout line that fits your purpose. Being prepared will save you time, money and a lot of unnecessary stress.

Glittery Popcorn Cereal Treats

1 (1.75 oz.) bag microwave popcorn
1 C of fruit flavored cereal
1 C of chocolate flavored cereal
1 T of edible glitter

How to Make It:

Microwave the popcorn as directed on the package.
Carefully place the popcorn into a large mixing bowl.
Toss the cereal in with the popcorn and combine well.
Add the glitter and toss until all of the mix is covered well.

You can find edible glitter in the cake decorating department at a craft store or use colored sugars instead. This fun snack can be placed in plastic pumpkins for snacks during a party or give it out to your trick or treaters instead of candy.

Butterscotch Potato Candy Drops

1 (11 oz.) pkg. butterscotch chips
2 T of creamy peanut butter
1 (12 oz.) jar dry roasted peanuts
1 (4 oz.) can potato sticks

How to Make It:

Place the chips and peanut butter into a saucepan over low heat.
Heat the mixture 5 minutes stirring constantly or until very smooth.
Take the pan from the stove and stir in the peanuts until well coated.
Carefully stir in the potato sticks and coat them well.
On a pan lined with wax paper drop the mixture by teaspoonfuls.
Chill the candy drops until firm.

These make great goodies to give to trick or treaters. They will come back again and again for these sweet salty drops. You may use semisweet chocolate chips if you prefer instead of the butterscotch and the peanuts are optional.

Makes 5 dozen drops

Vanilla Chocolate Cookie Pops

1 (12 oz.) pkg. vanilla baking chips
2 T solid shortening, divided
Orange food coloring
1 (16 oz.) pkg. cream filled chocolate cookies
32 Popsicle sticks
1 (6 oz.) pkg. semisweet chocolate chips

How to Make It:

In a microwave safe bowl put the vanilla baking chips and 1 Tbsp of shortening.
Microwave on high for 1 minute and then stir until smooth.
If the chips aren’t melted enough microwave for 30 seconds longer then stir until smooth.
Stir in the orange food coloring until the desired color is reached.
Carefully remove the tops of each cookie.
Each Popsicle stick is dipped in the melted chip mixture and placed on the bottom half of each cookie.
Put the tops back on the cookie and place them on a sheet of waxed paper.
Put the cookie in the freezer for at least 15 minutes.
If the chip mixture has hardened reheat in microwave 15 seconds.
Each cookie pop is dipped into the melted chocolate allowing any excess to drip back in the bowl.
Put the cookies back on the wax paper and put back in the freezer for 30 minutes or until set.
In another microwave safe bowl put the chocolate chips and the remaining shortening.
Put in microwave on high 1 minute then stir until smooth.
Drizzle the chocolate mixture over each of the cookie pops.

Kids love these lollipops because they are different from the normal lollipops. The lollipops can be individually wrapped and given to each trick or treaters or given as a party favor.

Making Halloween Cookie Claws

witchmoonChildren of all ages will enjoy these cookies on Halloween. They add a spooky touch to your party table, trick or treat bags or after school Halloween snacks. They are not only fun to scare your little goblins but they are easy and fun to make.

There are a few tips in making these cookies fun all the way around. The egg wash can be omitted if you prefer. The reason for the egg wash is to give the cookies an old washed out look. It doesn’t change the taste but it may help in solidifying the almond into the fingertip.

This recipe does not tell you that you can slip a few slivers of almond into the cookie to give you the exposed bone effect. You can also add a few line of red gel decorating icing along the cookie to resemble blood or veins. These should be added after the cookie has been baked.

Be sure to roll these cookies very thin. It will help when the cookies spread out in the oven. If the cookies look as if they need to be reshaped during the baking process just remove them from the oven 5 minutes before they have finished baking. Carefully use your fingers to reshape the cookie into the finger shaped form.

Here is what you need to make your Halloween claws: 2 T of red food coloring; 30 almond slices; 2 large eggs; 1/4 t of vanilla extract; 1/2 C of butter at room temperature; 1/2 C of confectioners’ sugar; 5 T of regular sugar; a pinch of salt; 1 2/3 C of flour; 2 drops of almond extract

To make these scary cookies preheat the oven to 350 degrees and line 2 cookie sheets with parchment paper. Place the red food coloring into a shallow bowl and add the almond slivers being sure they are covered with the food coloring. Set the bowl aside until the almonds have reached a bright red color. Remove the almond slivers to paper towel to dry.

Break one of the eggs into a separate bowl. Separate the second egg and add the egg yolk to the first egg. Place the egg white into a separate bowl and set aside. Whisk the whole egg and egg yolk together until well combined. Whisk in the vanilla.

Place the butter into another bowl. Add both types of sugar to the butter. Using an electric mixer on medium speed beat the butter mixture until blended together well. Add the whisked egg mixture and the almond extract and beat 2 minutes or until smooth. Dump in the flour. On low speed beat with the electric mixture just until the flour is moist. Form the dough into a ball, wrap in plastic wrap and chill for 30 minutes or until firm.

Remove the dough from the plastic wrap and divide into two parts. Re wrap one section and return to the refrigerator. Lightly flour a smooth work surface and place the remaining dough on the floured surface and separate the dough into fifteen strips. Roll each strip of dough between lightly floured palms to from a finger. Pinch the dough about 1/4 of an inch down to from a knuckle. Place the finger dough onto the prepared cookie sheet. Continue until all the strips are formed then repeat with the reserved chilled dough.

Lightly brush each finger with the egg white. Press the red almond slivers into the fingers to form a fingernail. Bake 12 minutes or until a light brown. Cool on wire racks.

Colorful Cookie Scarecrows

1 (18 oz.) pkg. refrigerated sugar cookie dough
1 C of flaked coconut
Yellow, orange, red and blue food coloring
18 gum drop fruit slices
1 C of powdered sugar, divided
1 T of milk, divided
Mini chocolate chips

How to Make It:

Roll out the cookie dough on a flat, lightly floured surface.
Cut out 18 gingerbread men.
Bake the gingerbread men according to the direction on the cookie dough package.
Cool the cookies to room temperature on a wire rack.
In a small bowl put the coconut and add enough yellow food coloring to tint the color of straw.
Place the gum drops on a lightly sugared surface and roll each one out flat.
Cut a hat shape from each of the rolled gum drops.
Split the powered sugar between 3 mixing bowls.
In each of the separate bowls put 2 or 3 drops of the orange, red and blue food coloring.
Divide the milk between each bowl and stir in to form a paste, add more milk if necessary to get the desired consistency.
On the cooled cookies frost the heads, hand and feet with the orange frosting.
The tinted coconut or straw is pressed in the frosting on the head, hands and feet.
The blue and red frostings are used to make the scarecrows shirts.
The hat is put on the scarecrows head by using a little orange frosting on the back of the hat and pressing it onto the scarecrows head.
Down the front of the scarecrow put 2 to 3 chocolate chips for the buttons.

Scarecrows are very popular around Halloween. You might want to make a double batch of these cookies as they won’t last long. You can make the shirts any color you like just by using different food coloring.

Makes 18 cookies

Fruit Snack Pretzel Ghosts

candiesWhat You Need:

1 (3 ft.) roll of chewy fruit snack
14 (3 inch long) pretzel sticks
2/3 C white baking chips
1 t miniature semisweet chocolate chips

How to Make It:

Using wax paper, completely cover a cookie sheet.
Unroll the fruit snack and cut the long end of it from end to end into 1/2 inch fringe.
Using a sharp knife cut the roll into 2 segments.
Around one end of each pretzel stick, wrap a piece of the fringed fruit snack.
Press the fruit snack with your finger onto the pretzel to make sure it is secure.
On the prepared cookie sheet lay the pretzel sticks.
In a saucepan over low heat put the white baking chips.
With a wooden spoon stir almost constantly and heat the chips 5 minutes or until melted.
Remove from the stove.
Pour 1/2 tbsp of the melted chips over the middle of a pretzel to make a ghost shape.
Continue this process until you have made 14 ghosts.
3 of the chocolate chips are used to make the eyes and a nose on each ghost.
Let the ghosts set at room temperature 45 minutes or until hardened.

If you want to save time melt the chips in the microwave instead of the stove. Put the chips into a small microwaveable dish and microwave 30 seconds on high. Stir until the chips are completely melted. The completed ghosts can be put in the freezer 5 minutes to harden to save time.

Makes 14 candies

Preparation Time: approximately 20 minutes
Cooking Time: approximately 5 minutes
Hardening Time: approximately 45 minutes
Total Time: approximately 1 hour 10 minutes

Participating In Halloween Candy for Soldiers

halloweencandyDentists from all around the United States have teamed up to start Halloween buy back candy program for our soldiers. Halloween is not a favorite time for dentists. They see it as a time for tooth decay and cavity ridden teeth. While many dentists see it as a bad tooth time, many of our U.S. soldiers see it as a time of missing out on the fun and excitement that Halloween can bring. Dentists want to bring that spooky fun back to our solders while helping to rid our children from too many trips to their office.

Children love to trick or treat. They can dress up, visit family and friends and take in a pumpkin full of candy to enjoy for days to come. Children have their favorite candies and often time pick through their candy to find just the pieces they like. This leaves us with buckets of candy that never gets eaten and eventually ends up in the garbage can. What a waste of time and effort for everyone involved.

Dentists around the U.S. agree that brushing and flossing will help prevent tooth decay but they also agree that the less sugar our children eat the less chance they have in getting those dreadful cavities. This inspired dentist to come up with the candy buyback program.

This program buys unwanted Halloween candy for a dollar a pound. The intent was not to deprive the children of their candy but to buy the candy that children do not want. This gave the children a choice in deciding what candy to sell and what candy to keep.
The buyback candy will then be sent to our soldiers overseas. Operation Gratitude, a non profit organization out of California will distribute the candy so there would be no outlay of money for shipping.

This idea certainly makes everyone a winner. Children can still have their favorite candy and make a little money for the candy they would normally throw away. Dentists and parents can rest a little easier about their children’s teeth as well as parents feeling better about throwing all the expensive candy in the trash. Best of all our solders can have a special treat from our children.

Orange and Black Ice Cream Cones

1 (4 oz.) pkg. German sweet chocolate
1/4 C of butter, cubed
3/4 C of sugar
2 eggs
1/2 C of flour
1 t vanilla extract
24 (3 inch) ice cream cones
24 scoops orange sherbet
Black sprinkles

How to Make It:

Set the oven to 350 degrees and preheat.
In a microwave safe bowl put the chocolate and butter and microwave for 1 minute on high.
Stir the mixture until very smooth.
Cool the chocolate for 5 minutes.
Pour the chocolate into a large mixing bowl and add the sugar.
Mix in the eggs until completely blended together.
Fold the flour in until well blended.
Stir in the vanilla extract.
Stand the ice cream cones into the cups of a metal muffin tin.
Fill each cone with batter no more than 2/3 full.
Bake in the preheated oven 20 minutes or until a toothpick inserted in the center comes out with moist crumbs, be careful not to over bake.
Cool the cones to room temperature.
Place one scoop of sherbet onto each ice cream cone.
Sprinkle with the black sprinkles and serve immediately.

This is a fun twist to ice cream cones. They make a special Halloween treat for kids. You can use chocolate sprinkles instead of black sprinkles if you prefer.

Makes 24 cones
