Cheesy Sweet Pepper Burgers

What You Need:

1 tsp olive oil
1 green bell pepper, sliced thin
1 sweet red bell pepper, sliced thin
1 sweet yellow bell pepper, sliced thin
1 onion, sliced thin
1 garlic clove, minced
1 tbsp balsamic vinegar
4 slices of mozzarella cheese
1/4 C of mustard
4 hard rolls, split and toasted
8 lettuce leaves
1 tomato, sliced thin

How to Make It:

Preheat the broiler.
Pour the oil into a skillet and place the skillet over medium heat.
Add all the peppers, onions and the garlic and sauté 5 minutes or until crisp tender.
Drizzle the vinegar over the vegetables and toss to coat.
Spread the mustard over the top of roll.
Spoon the vegetables over the bottom of each roll.
Place a slice of cheese over the vegetables.
Place the bottom of the rolls on a broiler pan.
Place the pan in the broiler and broil 4 inches from the heat for 2 minutes or until the cheese melts.
Top each sandwich with a couple slices of tomato and a lettuce leaf and cover with the top of the bun.

Makes 4 sandwiches

This tasty burger is great for those who are trying to cut back on their meat intake. The sautéed vegetables give it a low fat twist. For something a little different try a couple of fresh basil leaves on each sandwich instead of the lettuce leaves. You can also make a great sauce by mixing together 1/4 C of mayonnaise and 1/2 tsp of horseradish together and spreading it on the buns instead of the mustard.

Maple Topped Cinnamon Rolls

What You Need:

1/3 C + 1 tsp sugar, divided
1 pkg. dry yeast
3/4 C warm water, 100 to 110 degrees
5 tbsp butter, melted and divided
1/2 tsp salt
1 large egg
3 1/2 C of flour
2/3 C of brown sugar
1 tsp ground cinnamon
1 tsp orange peel, grated
1/4 C pecans, chopped
1 C powdered sugar
2 tbsp maple syrup
1 tbsp fat free milk

How to Make It:

Stir 1 tsp of the sugar and the yeast into the warm water until dissolved.
Allow to stand undisturbed for 5 minutes.
Whisk together the remaining sugar, 3 tbsp of butter, the salt and the egg together.
Add the yeast mixture and beat with an electric mixer on medium until well blended.
Add the flour slowly, beating as you add on low until the mixture forms a soft dough.
Lightly flour a flat surface and turn the dough out onto the flour.
Knead the dough for 5 minutes, adding 1 tbsp of flour if necessary, until the dough is smooth and elastic.
Spray a non metal bowl with cooking spray and add the dough ball, turning to coat.
Cover and allow to rest 1 hour or until doubled in size.
Turn the dough out onto a lightly floured surface and punch it down using your knuckles.
Roll the dough into a rectangle and brush the top side with the remaining butter.
Toss together in a mixing bowl the brown sugar, cinnamon and orange peel.
Scatter the mixture over the dough to within 1/2 inch of all the edges.
Roll the dough, beginning with a long side into a tight jelly roll.
Slice the rolls into 18 pieces and place cut side up into a baking pan.
Cover and allow rising for 1 hour or until doubled in size.
Set the oven temperature to 375 allowing it to preheat.
Bake the rolls 20 minutes or until the tops are a golden brown.
Place the powdered sugar, syrup and milk into a bowl and whisk until smooth.
Top the warm rolls with the glaze and serve.

Makes 18 rolls

Try these rolls for breakfast or a brunch and see how fast they go. A regular glaze of powdered sugar and milk may used if you wish. Waiting on the dough to rise before you baking them is the only hard part when it comes to making these tasty breakfast treats.

Garlic Butter Parmesan Rolls

What You Need:

1 (11 oz.) pkg. refrigerated breadsticks
2 Tbsp garlic butter, melted
1/2 C Parmesan cheese, grated
1 tsp dried parsley
1/8 tsp cayenne pepper

How to Make It:

Line a baking sheet with foil and preheat the oven to 350 degrees.
Flour a flat surface, separate the breadsticks and place them on the floured surface.
Cut the breadstick lengthwise into 3 strips leaving 3/4 inch uncut ends.
Roll the outside strips in opposite directions around the uncut portion at the end.
Roll the center strip in either direction around the uncut end and pinch to help hold its shape.
Lay the rolls on the prepared baking sheet and brush the tops with the garlic butter.
Whisk the cheese, parsley and cayenne pepper together in a small bowl.
Sprinkle the tops of each roll with the cheese mixture.
Bake the rolls for 13 minutes or until they are just turning a golden brown.

Makes 6 servings

If you have grated Romano cheese instead of Parmesan cheese feel free to use it instead. The cayenne pepper is optional. Make an extra batch and freeze them for later. Don’t have time to create the rolls? Leave the breadsticks as they are and proceed as directed above.

Children and the Christmas Cooking Craze

santaIt’s a know fact that most of our holiday time is spent in the kitchen. Often it’s at the expense of spending time with our families. This year why not invite Dad and yes the children into the kitchen to help with all the fun and joy of making those holiday treats.

Believe it or not kids love to cook. It gives them a chance to be a part of a family tradition. Start them out small and let them work up to the turkey and ham. Everyone will have a blast and the kids will feel as if they have helped to put on the feast of a lifetime.

The first step to allowing children in the kitchen is to teach them cleanliness. Teach them how to properly wash their hands and keep plenty of paper towels available. Aprons will also help in protecting clothing. They will love the idea of wearing that Christmas apron while creating their own masterpiece.

The best place to start is with the baking. Biscuits are always a favorite. They can make a mess and not get into trouble. Walk them through it step by step with easy to understand directions.

When it comes to baking most of the work is away from the hot stove or oven. Set them up at the table or at the counter if they can reach. You can be preheating the oven or working at the stove while they prepare batters or dough.

Let the children help you in gathering up the bowls, utensils and ingredients necessary for the recipe. Walk through each step of the process and then let them have it. They will love the freedom it allows them. Just stay close in case they have questions or need assistance.

Children can help with just about anything that goes in the oven. Cookies, cakes, rolls, casseroles and other baked foods are a great place to start your children in their culinary experience.

Let the children help with preparing the meat for your holiday dinner. More than likely they won’t be ready to carry it to oven or check on it as it bakes but they can help to make glaze, add seasonings and sprinkle in nuts and marshmallows on those sweet potatoes.

Your kids will get the hang of baking and stove top cooking with a little assistance. The holidays are a relaxing and jovial time to let your kids begin cooking with you. Teach them the basics of hygiene, preparation and creating so they will want to cook all of the time.

Potato Oatmeal Wheat Yeast Rolls

1/2 C potatoes, peeled and cubed
1/2 C quick cooking oats
1/2 C of butter, room temperature and divided
2 (1/4 oz.) pkgs. active dry yeast
1 C of warm water (115 degrees)
2 eggs
2/3 C of sugar
1 t salt
4 C of bread flour, divided
1 C of whole wheat flour

How to Make It:

In a saucepan put the potatoes and just cover with water.
Over high heat bring the water is brought to a brisk boil.
Boil the potatoes until very tender about 8 minutes.
Drain the potatoes saving 3 TBSP of the cooking water.
In a mixing bowl put the oats and add the 3 TBSP of potato water stirring until the mixture is crumbly.
Mash the potatoes in a mixing bowl and add 6 TBSP of the butter
Stir in the oat mixture until blended together.
In a mixing bowl put the yeast and stir in the water until the yeast is dissolved.
Add the eggs, sugar, salt, 2 C of the bread four and the potatoes to the yeast, stirring to mix in well.
The remaining bread flour is added with just enough wheat flour to form stiff dough.
Lightly flour a flat surface and lay the bread dough onto the flour.
The dough is kneaded 6 minutes or until smooth and elastic.
Place the dough into a non metallic bowl that has been well greased.
Coat all sides of the dough with the oil by turning it over once.
Cover with plastic wrap and chill overnight.
The oven is set to preheat to 350 degrees F
Grease two 9 inch round pans.
Put the chilled dough on a lightly floured surface.
Separate the dough into 32 equal size balls.
Place the balls into the round pans with the sides touching.
Bake in the preheated oven 25 minutes or until golden brown.
Put the rolls on wire racks to cool then brush with the remaining butter.

Makes 32 rolls

The tops of these rolls can be sprinkled with garlic butter or cinnamon sugar.

Give the cooks a break by treating them to a brunch on Christmas midmorning. Everyone can get the nourishment they need to finish preparation for dinner that night.

The good thing about a brunch is that it combines the best of breakfast and lunch. Those who love breakfast foods anytime of the day will be in heaven. For others who want to eat light, they can enjoy the lunch half of the fare.

If you are going to host the Christmas brunch, include the cooking items you need in your master list for Christmas dinner shopping. This will help when purchasing all of the items you need. While one half of the group is working on Christmas dinner, the other half can be preparing for brunch.

These tips can help get you off and running:

1. Decide on the menu ahead of time so you can make a list. Be sure to keep it simple but add enough variety to please everyone.
2. Decide how you will present the brunch. Buffet style is simple and easy both in preparation and clean up.
3. Perform the prep work the night before when the other half of the cooks are preparing for Christmas dinner. This will save time and make the morning preparations easier.
4. Remember to provide drinks such as juice, milk, coffee and tea.
5. If preparing for a buffet, set it up the night before along with setting the table.

The secret to a holiday brunch is in the preparation with a bit of cheating. If you decide to serve muffins or rolls buy them already prepared from the store. Breakfast on Skewers

What You Need:

1/4 C sugar
1 tsp ground cinnamon
8 brown and serve rolls, cut into quarters
4 tbsp butter, melted
1 pint strawberries, hulled
2 firm bananas, peeled and cut into chunks

How to Make It:

Prepare the grill for low heat.
Toss the sugar and cinnamon together well.
Brush the rolls evenly with the butter.
Sprinkle the rolls with the cinnamon sugar mixture to coat very well.
On 4 skewers thread a strawberry, a roll piece and a banana chunk until the skewers are filled.
Grill these for 8 minutes or until the rolls are toasted, turning often for even grilling.

Homemade Cinnamon Rolls with Strawberries

1 (16 oz.) pkg. hot roll mix
4 T of sugar, divided
1 C warm water (120-130 degrees)
1 egg, lightly beaten
2 T + 1/2 C butter, softened and divided
2 C frozen strawberries, sliced
1/2 C brown sugar, packed
1/2 C light corn syrup
2 t ground cinnamon

How to Make It:

Allow the oven to preheat to 375 degrees.
Pour the hot roll mix into a mixing bowl.
Add the yeast from the hot roll mix.
Add 2 T of sugar to the bowl.
Pour the water into the bow but do not stir.
Add the egg and 2 T of butter and blend the ingredients together to form soft dough.
Turn the dough out on a lightly floured flat surface.
Knead for 5 minutes or until the dough is smooth.
Place the dough into a mixing bow, cover and allow standing 5 minutes.
Place a saucepan over medium heat.
Add the strawberries to the pan.
Stir in the brown sugar, corn syrup and remaining butter.
Bring the mixture to a gentle boil.
Once boiling, cook the berry mixture for 3 minutes, stirring constantly.
Pour the berry mixture into the bottom of an ungreased rectangular baking dish.
Roll the dough out on a lightly floured surface to form a rectangle.
Toss the remaining sugar and the cinnamon together in a small mixing bowl.
Spread the cinnamon sugar mixture evenly over the entire piece of dough.
Starting with the longer edge roll the dough into a jelly roll then cut into 12 pieces.
Place the dough cut side down onto the berry mixture in the pan.
Bake the rolls for 22 minutes or until they have turned a light golden brown.
Allow to cool slightly then invert onto a serving platter.

Makes 1 dozen cinnamon rolls

It’s a guarantee that Mom will be surprised when you serve her one of these little treats. Add a cup of coffee or tea and it will be a breakfast she will always remember. Fresh strawberries or fresh or frozen rhubarb can also be used.

Easter Angel Biscuits

4 T unsalted butter, at room temperature and cut into pieces
1 large egg, lightly beaten
2 C of hot roll mix
3 t yeast (if a packet comes in the hot roll mix use 3 t of that yeast)
1 t baking powder
2 t sugar
1/2 C very hot water (125 degrees)
1 C of flour, divided
4 T unsalted butter, melted

How to Make It:

Coat a baking sheet lightly with a cooking spray.
Place the butter and egg into a mixing bowl.
Sprinkle the hot roll mix into the bowl.
Add the yeast, baking powder and sugar to the mixture.
Pour the water over the top of the mixture.
Stir until the butter is blended into the dough.
Add 6 T of flour to the dough and knead the dough until no longer sticky.
If necessary, 1 T of flour can be added at a time, and then stirred into the mixture to reach this consistency.
With floured hands knead 2 T of flour into the dough kneading until the dough becomes smooth and elastic.
Cover the bowl and let the dough rest for 5 minutes.
Turn the dough onto a lightly floured surface and pat to a 1/2 inch thick round.
Cut the biscuits out using a lightly floured round cutter.
Place the biscuits on the prepared sheet.
Brush melted butter over the top of each biscuit then fold each one in half.
Brush again with the melted butter.
Cover the biscuits and allow them to rise for 2 hours in a draft free, warm area.
Heat the oven temperature to 400 degrees.
Bake the biscuits, uncovered, for 12 minutes or until nicely browned.

Serves: 12 biscuits depending on size
