Marvelous Chocolate Waffles

1 1/2 C of baking mix
1 C of sugar
1/3 C of baking cocoa
3/4 C of water
2 T of canola oil
2 eggs

How to Cook It:

Spray a waffle iron with a non stick cooking spray and allow the iron to heat.
Toss together the baking mix, sugar and cocoa in a large mixing bowl.
Add the water, canola oil and eggs and blend until all the ingredients are mixed together well.
Pour the batter by spoonfuls onto the heat waffle iron.
Bake 5 minutes or until the steaming stops.

Top these waffles with sliced bananas, strawberries or raspberries for a special treat. If you made more waffles than you can eat in one setting go ahead and freeze them. They are easy to reheat in the toaster or microwave.

Makes 6 servings

Wake Up Breakfast Burrito

2 T of butter
12 large eggs
1/4 C of milk
1/2 t of salt
1/2 t of pepper
1 C of Cheddar cheese, shredded
1 C cooked ham, chopped
6 (6 inch) flour tortillas

How to Make It:

Preset the oven temperature to 400 degrees.
Place the butter into a 15X10 inch jelly roll pan and place in the oven until the butter has completely melted.
Place the eggs, milk, salt and pepper into a bowl and whisk until well combined.
Pour the egg mixture into the pan with the melted butter.
Sprinkle the cheese over the top of the egg mixture.
Layer the ham over the top of the cheese.
Wrap the tortilla shells in foil.
Place the eggs and tortilla into the preheated oven.
Bake 8 minutes or until the eggs are set and the tortillas are warm.
Cut the egg mixture into six squares and place one square onto each tortilla.
Roll the tortillas closed over the egg mixture.

These make a great grab and run breakfast. Filled with ham and cheese they are a quick but healthy on the go breakfast. Sprinkle chopped onion, green pepper or mushrooms over the top of the meat if you like.

Breakfast Burritos-Think Outside the Box

burrito-and-moreBreakfast time is always a rush. Getting kids ready for school and yourself off to work can take its toll. Breakfast doesn’t have to be cold cereal or even non-existent. Breakfast burritos are becoming a big hit and they can be quick and easy too. Think outside the box by adding ingredients that you might not think of for breakfast. You probable already have some of these items in the kitchen or better yet just use leftovers from the night before.

Warm up a tortilla and add honey and peanut butter. Roll them into an easy and quick breakfast on the run. They are delicious and healthy and who doesn’t want that for their family?

How about a hot tortilla with a couple of hot dogs wrapped in them? Add your favorite hot dog toppings like chili or cheese and yes, you have breakfast to go. It may not seem like a normal breakfast but still it is energy for the day. Who can argue with that?

Try some leftover spaghetti in a tortilla. You could be surprised at how good it tastes. No spaghetti noodles? Try the sauce wrapped with a hot dog in a tortilla and you still have a fairly healthy breakfast.

Try heating up that leftover chili and spreading it on a tortilla. Just roll it up and go. Who would think that this is a great taste sensation and so easy to do? Cook a couple of scrambled eggs and add the chili and you have another great choice for breakfast.

Do you ever have leftover baked potatoes? Slice and dice them, warm them in the microwave. Add some seasonings, onions or chives and sour cream. Wrap in a warm flour tortilla and you can eat on the run.

Take a can of refried beans and spread them on a tortilla, place in the microwave with some cheese and a little sour cream and you have a great Mexican tortilla. Beans have a lot of protein and can make a great morning eye opener.

Have leftover salad mix from the night before? Take the salad mix, place in a tortilla and add your favorite salad dressing, roll and eat. Not necessarily something you would choose for breakfast but it’s healthy and makes a great day starter.

Do you have leftover steak from last night? Slice, dice or cube it and add it to a tortilla for a great source of protein and a very easy breakfast meal.

Energy Building Breakfast Drink

1 T of fine oatmeal
1 C of milk
1/4 C of seedless raisins
1 small ripe banana
1 t honey

How to Cook It:

In a small saucepan over medium heat put the oatmeal.
Stir in the milk.
Stirring occasionally bring the mixture to almost boiling.
Once boiling, remove from the heat and pour into the blender.
Add in the raisins and banana.
Pour the honey over all the other ingredients.
Blend just until smooth.

This is guaranteed to get your body up and going. The milk might form a skin when heating. If it does don’t skim it off. This skin contains valuable nutrients that will help the body to build energy.

Nutmeg Rice Fritters

2 C buttermilk pancake mix
1/2 t nutmeg
1/3 C + 1/2 C sugar, divided
1/4 t+ 1 t cinnamon, divided
1 C cooked white rice
1/3 C of water
1 egg, lightly beaten
1 t vanilla extract

How to Cook It:

The oil in a deep fryer is heated to 375 degrees.
In a mixing bowl put the pancake batter.
Stir in the nutmeg, sugar, and cinnamon and blend together well.
Fold in the rice until blended in well.
Add the water, egg and vanilla and mix just until moistened and thick.
Drop the batter by spoonfuls into the hot oil and fry 3 minutes or until golden brown, turning for even browning.
Place the fritters on paper towel to drain before serving.

Sprinkle warm fritters with powdered sugar or cinnamon sugar. Cinnamon sugar topping is made with 3 parts sugar and 1 part cinnamon and blended together. These fritters can be frozen and then reheated in the microwave. They will stay fresh for 1 month in the freezer.

Quick and Easy Breakfast in a Flash

orangesjuiceWhat is the one meal you are not supposed to skip. It’s breakfast of course. It regulates your blood sugar and starts your body’s metabolism. It also starts your day off with energy. Most people work outside the home and sleep to the last minute so they don’t figure that they have enough time to eat a good breakfast. Here are a few ideas to change that way of thinking.

There are some wonderful ideas for freeze ahead breakfasts that take 30 seconds or less to make them a wonderful meal on the go. Try preparing different things for breakfast that you can take from the freezer and stick in the microwave while you are brushing your teeth or doing your hair? Then you can kill two birds with one stone.

Egg muffins are one freezer to microwave idea. Whisk several eggs together and add any of these ingredients, peppers, crumbled sausage, diced ham shredded cheese, onions or even bacon that has been crumbled up. Simply add your favorites and bake in a 350F oven for about 20 minutes in a muffin pan with cupcake liners. Allow them to cool on a wire rack to room temperature. Then place a couple of your egg muffins in a bag made for freezing. When you are ready, remove a bag and place your egg muffins in the microwave for about 30 seconds. When the microwave dings, breakfast is ready!

Next time pancakes are on the menu, make extra and put them in the freezer. Stack them with wax paper between each pancake in a freezer bag. Next time for breakfast on the go, take a couple of the pancakes out of the freezer and microwave them for about 1 minute. Add some powdered sugar, honey or even and roll the pancake up. Breakfast on the go is ready.

Meat biscuits are another fast way to make a breakfast on the go. When you are frying bacon, ham or sausage patties, cook a little extra for a quick breakfast on the run. You can use either croissants or prepare some biscuits, cut them in half, and add the meat patty. Store a couple in a freezer bag for a breakfast that is quick and easy. Remove a couple from the bag, place in the microwave wrapped with a microwave safe towel or napkin and reheat in the microwave for about 1 minute and they are done.

Southwest breakfast roll-ups are another great way to start the day. Scramble some eggs and add your favorite ingredients plus either some hot sauce or salsa. Roll them up and place in a freezer bag. To prepare, just pull out of the freezer and microwave for about 1 minute. Presto, breakfast in a jiffy.

Skipping breakfast doesn’t have to be the norm with a little preparation. Give it a try and see just how quick, easy and tasty your new breakfast routine can be.

Cheesy Potato Eggs and Ham

8 eggs
8 T of Parmesan cheese, grated and divided
2 T of olive oil
2 russet potatoes, peeled and diced
1/2 C of onion, chopped
1/2 C of red bell pepper, chopped
1 garlic clove, minced
4 oz. Serrano ham, chopped
1/8 t marjoram
1/2 t salt
1/4 t pepper

How to Cook It:

Turn on the broiler and allow it to preheat.
Carefully break the eggs into a large mixing bowl.
Sprinkle the eggs with 4 T of the cheese and whisk until well combined.
Pour the oil into a large oven proof skillet positioned over medium high heat.
Add the potatoes to the skillet and cook, stirring often for 5 minutes or until browned.
Stir the onion, bell pepper and garlic into the potatoes.
Cook 2 minutes or until the onion and peppers are just beginning to tender.
Add the ham, marjoram, salt and pepper and stir to blend.
Spread out the mixture evenly in the skillet.
Pour the egg mixture over the top of the potato mixture, tilting the skillet so the eggs spread to the edges of the skillet.
Reduce the heat to medium low, cover the skillet and cook 5 minutes or until the top is set around the edges but the center is still lightly runny.
Remove the skillet from the stove and sprinkle the remaining cheese evenly over the top of the eggs.
Place the skillet in the oven and broil for 30 seconds or until the center of the frittata is set.

Serrano ham is the Spanish version of Italian prosciutto. Serrano ham is salt cured, air dried then aged. Serrano ham is not smoked so you get a more pure and intense ham taste. If you can’t find Serrano ham smoked ham will work just as well in this recipe.

Makes 4 servings

Pecan Apple Buttermilk Pancakes

2 C of flour
1 C of sugar
2 t baking powder
1 t baking soda
1 t cinnamon
1/2 t salt
1/2 t ground ginger
1/2 t ground cloves
2 eggs
1 3/4 C of buttermilk
3 T of vegetable oil
1 3/4 C of apples, peeled and shredded
1/2 C of pecans, chopped

How to Cook It:

In a mixing bowl whisk together the flour, sugar, baking powder and baking soda.
Stir in the salt, ginger, mace and cloves until combined.
Whisk together in a separate bowl the egg, buttermilk and oil until well blended.
Pour the egg mixture into the flour mixture and stirred until just blended.
Fold in the apples and pecans well.
With a non stick cooking spray generously spray a skillet.
Heat the skillet slightly over medium low heat.
Into the hot skillet pour 1/4 C of the batter.
Cook 2 minutes or until it starts to bubble on top.
Flip the pancake and continue cooking 2 minutes or until lightly browned.
Cook the remaining batter in the same way until all has been used.

These pancakes are sweet and filled with spices. They make breakfast a special event. Serve them with apple jelly instead of syrup for a little morning surprise. Leftovers can be frozen for up to 2 months.

Makes 1 1/2 dozen flapjacks

Sausage Patties with Zip

1 lb. ground turkey
3/4 t of salt
1/2 t of rubbed sage
1/2 t dried thyme
1/2 t ground nutmeg
1/8 t cayenne pepper
2 t canola oil

How to Cook It:

In a small mixing bowl crumble the ground turkey.
Add in the salt, sage, thyme, nutmeg and cayenne pepper.
Mix together well and formed into 4 patties.
In a skillet over medium high heat put the vegetable oil.
Cook the patties 5 minutes in the hot oil.
Turn the patties and cook an additional 5 minutes or until cooked through.
Place the patties on paper towel to drain before serving.

Because of the cayenne pepper these patties have a little zip. These patties go well with eggs. If you like you can leave out the cayenne pepper or adjust it to your taste.

Makes 4 servings

Easy Cinnamon Cranberry Oatmeal

3 C of milk
1/4 t of salt
1 ½ C quick cooking oats
1/3 C dried cranberries
1/3 C of golden raisins
3 T of maple syrup
1 1/2 t of cinnamon

How to Cook It:

Pour the milk into a large saucepan and sprinkle the salt into the milk.
Over medium heat bring the mixture to a steady boil.
Stir the oats in while boiling and cook 2 minutes or until thick, stirring often.
Take from the heat and fold in the cranberries and raisins.
Stir in the maple syrup and cinnamon and blend well.

Oatmeal is a fast breakfast but can be quite boring. Adding cranberries, raisins and maple syrup can make this a real treat. Try any of your favorite dried fruits in this recipe. For a healthier breakfast add honey instead of the syrup.
