Microwave Taco Snack Mix

snackmixWhat You Need:

3 C baked cheese crackers
2 C butter flavored pretzel sticks
1 C of peanuts
1 T of vegetable oil
2 T of dry taco seasoning mix

How to Make It:

In a large microwave safe mixing bowl put the crackers.
Gently toss in the pretzels and peanuts.
The oil is drizzled over the top and stirred with a spoon to coat evenly.
The taco seasoning mix is sprinkled over the top and stirred again.
On high temperature microwave the mixture 2 minutes.
Take from microwave and stir with a wooden spoon.
Put back in microwave and heat 2 minutes longer on high.
Let the mixture cool 5 minutes before serving.

Makes 12 servings

The kids will enjoy this snack all evening long. Use the left over taco seasoning to sprinkle over popcorn or put next to the Taco Mexican mix for another delicious snack.

Glittery Popcorn Cereal Treats

1 (1.75 oz.) bag microwave popcorn
1 C of fruit flavored cereal
1 C of chocolate flavored cereal
1 T of edible glitter

How to Make It:

Microwave the popcorn as directed on the package.
Carefully place the popcorn into a large mixing bowl.
Toss the cereal in with the popcorn and combine well.
Add the glitter and toss until all of the mix is covered well.

You can find edible glitter in the cake decorating department at a craft store or use colored sugars instead. This fun snack can be placed in plastic pumpkins for snacks during a party or give it out to your trick or treaters instead of candy.

Unusual Halloween Popcorn Balls

4 qt. popcorn, popped
2 (1 oz.) squares unsweetened chocolate
2 C of sugar
1/2 C light corn syrup
1 C of water

How to Make It:

Set the oven to preheat to 200 degrees.
Pour the popcorn into a large heat proof bowl and place the bowl in the oven to keep warm.
Place the chocolate squares into a heavy saucepan.
Place the saucepan over low heat.
Heat the chocolate 5 minutes stirring constantly until completely melted.
Stir in the sugar and corn syrup.
Add the water and stir until all the ingredients are blended together well.
Over medium heat cook until it comes to a steady boil, stirring constantly.
Cook until a hard ball stage or 250 degrees on a candy thermometer.
Take the popcorn from the oven and add the chocolate mixture.
Stir the mixture with a wooden spoon until the popcorn is evenly coated.
When the popcorn is cool enough form it into 3 inch balls.
Cool the balls on a wire rack.

These are different from the popcorn balls we grew up eating. To keep the popcorn from sticking to your hands dip your fingers in cold water. These popcorn balls can be wrapped in plastic warp and tied with a Halloween ribbon to hand out to trick or treaters.

Makes 1 dozen
