Mixed Vegetable with Vinaigrette Dressing

5 red potatoes cut in small chunks
1 sweet red pepper, cut into strips
1 C of frozen corn, thawed
1 celery rib, sliced thin
1 carrot, shredded
3 green onions, sliced thin
1 1/2 C mozzarella cheese, cubed
2/3 C olive oil
1/4 C of white wine vinegar
2 cloves of garlic, minced
2 tbsp fresh thyme, minced
1 tsp salt
1/2 tsp sugar
1/2 tsp garlic powder
1/2 tsp pepper

How to Make It:

Cover the potatoes with water and place over medium heat.
Bring the water to a brisk boil; reduce the heat to low and simmer 12 or until tender.
Drain the potatoes and allow them to cool to room temperature.
Place the cooled potatoes into a large serving bowl.
Toss in the red pepper, corn, celery, carrot, green onion and cheese.
Place the oil and vinegar together in a mixing bowl.
Add the garlic, thyme, salt, sugar, garlic powder and pepper and whisk until well blended.
Add the vinaigrette to the vegetables and gently toss until all the vegetables are well coated.

Makes 12 servings

Overnight Vegetable Pasta Salad

2 C spiral pasta
1 zucchini, cubed
1/2 C ripe olives, sliced
1/2 C sweet red pepper, chopped
1/4 C onion, chopped
1/2 C of mayonnaise
1/4 C of sour cream
1 1/4 tsp dill

1/2 tsp ground mustard
1/4 tsp pepper
1/4 tsp garlic powder

How to Make It:

Prepare the pasta as directed on the package, drain well and rinse with cool water.
Place the pasta into a large serving bowl and add the zucchini, olives, peppers and onion.
Whisk the mayonnaise and sour cream together until smooth.
Stir in the dill, salt, mustard, pepper and garlic powder until well combined.
Pour the dressing over the pasta and vegetables and gently toss to coat.
Cover the salad and refrigerate overnight.

Makes 8 servings

Chilling Time: at least 2 hours
Total Time: approximately 2 hours and 20 minutes

Pasta that is used in this type of salad needs to hold up well and compete with the texture of the other salad ingredients. Good choices would be elbow macaroni, wagon wheels, shells or bow ties.

Crunchy Catalina Vegetable Salad

1 (16 oz.) can kidney beans, rinsed, drained
1 (15 oz.) can shoe peg corn, drained
1 zucchini, chopped
1 cucumber, chopped
1 tomato, chopped
1 green pepper, chopped

1 red onion, chopped
6 green onions, chopped
1 C Catalina salad dressing
1 1/2 C cheddar cheese, shredded
1 1/2 C of corn chips

How to Make It:

Toss together the beans and the corn in a large serving bowl.
Add the zucchini and cucumber to the bowl.
Place the tomato, green pepper and the olives into the mixture.
Add the both types of onions and toss until all the vegetables are mixed together.
Spread the dressing over the top of the salad and gently stir until the vegetables are well covered.
Sprinkle the top evenly with the cheese.
Evenly spread the corn chips over the entire salad.

Makes 10 servings

Regular corn works just as well as the shoe peg corn in this recipe. The combination of these summer vegetables, the dressing and corn chips make this salad a delight for everyone who tries it.

Pea and Bean Salad with a Twist

1 (10 oz.) pkg. frozen peas
1 (10 oz.) pkg. frozen lima beans
1 red onion, chopped
1 C mayonnaise
1 tbsp vegetable oil
1 1/2 tsp Worcestershire sauce
1/2 tsp salt
1/4 tsp pepper
3 hard boil eggs, sliced
4 green onions, sliced

How to Make It:

Fix the peas and beans as directed on the packages, drain and set aside to cool.
Place the red onion into a bowl.
Add the mayonnaise, oil and Worcestershire sauce, salt and pepper and stir until well blended.
Place the cooled vegetables into a serving bowl.
Gently fold the mayonnaise mixture into the vegetables.
Lay the sliced eggs over the top of the salad.
Sprinkle the salad evenly with the green onions.

Makes 6 servings

Frozen green beans can be used in place of the lima beans if you prefer. Want to give this salad a little color add chopped pimentos before folding in the mayonnaise sauce.

Summertime Pineapple Fluff

1 (3 oz.) pkg. cream cheese, softened
2 tbsp green onions, chopped very fine
1 fresh mushroom, chopped very fine
1 garlic clove, minced
1/4 tsp salt
1/8 tsp pepper
1/4 C crushed pineapple, drained well

How to Make It:

Place the softened cream cheese in a mixing bowl.
Beat with an electric mixer for 5 minutes until fluffy.
Stir in the green onions, mushrooms and garlic until blended in well.
Sprinkle with the salt and pepper and stir to combine.
Add the crushed pineapple and mix until all the ingredients are blended together.

Makes 1 C

This summertime pineapple fluff is a tasty addition to any July 4th barbecue.

Summer Asparagus Dish

1 C of water
1 1/2 lbs. fresh asparagus, trimmed and cut into 2 inch pieces
2 tomatoes cut into wedges
3 tbsp cider vinegar
3/4 tsp Worcestershire sauce
1/3 C of sugar
1 tbsp onion, grated
1/2 tsp salt
1/2 tsp paprika
1/3 C of vegetable oil
1/3 C of almonds, toasted and sliced
1/3 C of blue cheese, crumbled

How to Make It:

Bring the water to a boil in a large saucepan placed over medium heat.
Add the asparagus to the boiling water and cover the pan.
Cook 5 minute or until the asparagus is crisp tender, drain and return to the pan.
Place the tomatoes in with the asparagus and cover the pan.
Pour the vinegar into the blender.
Add the Worcestershire sauce, sugar, onion, salt and paprika to the vinegar.
Slowly add the oil to the mixture while blending.
Blend until all the ingredients are incorporated together well.
Pour the mixture over the asparagus and tomatoes.
Transfer the mixture to a serving bowl and toss to coat.
Sprinkle the almonds and cheese over the top before serving.

Makes 8 servings

Celebrate July Fourth at a Park

parktablewaterOn the 4th of July, in small town, USA, there really isn’t much to do! But some of the neighboring towns have some great firework shows and some all day activities that are great for the family to partake in.

Our nearby town has an art show, and face painting for the kids, and they usually have local bands or barbershop quartets at the bandstand that everyone wants to hear. So planning snacks can be a challenge. There are usually food vendors available but snacks and drinks and one meal can be packed from home. All you need to do is pre-plan.

Make sure to pack foods and drinks that are easy to use and get to. Snack foods and munchies can be packed in individual bags for handing out at any time. Drinks can be stored in a cooler along with some of the snacks that don’t require a lot of refrigeration but might be better kept at a cooler temperature.

The trick to packing a cooler is to remember to place your drinks on the bottom then pour ice on top then add your snacks on top. One cooler is usually enough since there are drinks and snacks also available at the park.

Packing snacks can be easy and healthy at the same time! Fruits like apples, grapes and even dried fruit are great choices! Add some nuts, maybe some dried cereal and you have created your own special trail mix. This is a treat that young and old will enjoy. Add some pudding snacks on top of the ice or some cheese cubes or slices and some crackers and another healthy snack is available at any time.

For drinking, try packing small bottles of water and the flavored packets they make now that you can add to it. Gatorade in small bottles is another great choice or even juice boxes in various flavors. This should satisfy even the most discriminating tastes.
Don’t forget the lawn chairs and the blankets! Even in July, sometimes the nights get a bit chilly and a light blanket is always appreciated. Besides, if you don’t use it to cover up with, you can always lay down on it to watch the fireworks overhead!

To clean up with, use the new hand sanitizers or baby wipes that are available in travel sizes. They don’t take up much space but can remove the sticky from anyone’s hands.

Cool Cucumber Orange Salad

2 cucumber, sliced
4 naval orange, peeled and sectioned
1/2 C of honey
1 C of orange juice
1/2 C of olive oil
1 tsp cider vinegar

How to Make It:

Place the cucumber slices and orange segments in a serving bowl.
Place the honey into a small mixing bowl.
Whisk the orange juice, oil and vinegar into the honey until blended in well.
Pour the sauce over the cucumbers and oranges and gently toss to coat.

Makes 8 servings

Slice the cucumbers with a serrated knife and place the salad over a bed of lettuce before serving to give this salad an elegant look. Sprinkle the top with chopped pecans for a little crunch.
