Juice Simmered Pears

What You Need:

6 C of water
1 C of sugar
6 firm pears, peeled, cored and cut in half
1 lemon rind strip
3 tbsp pear juice

How to Make It:

Place a saucepan over medium heat.
Add the water and sugar to the pan and simmer, stirring constantly, until the sugar dissolves.
Place the pears into the water and return to a simmer.
Cook the pears for 25 minutes at a simmer or until the pears are tender.
Place the pears into a serving bowl, cover and chill until ready to serve.
Over high heat bring the pear cooking liquid to a boil.
Cook the juice for 20 minutes or until the juice is reduced to 1 C and resembles syrup.
Strain the juice through a sieve, cover and chill for at least 30 minutes.
Pour the chilled juice over the pears just before serving.

Makes 6 servings

This is a simple but elegant way to serve a fruit side dish. Everyone will love it and it gives you at least 1 serving of fruit in your daily diet. If you are serving to adults you may use pear flavored liqueur or brandy instead of the pear juice. Try making this recipe using other fruits such as apples, peaches or even plums.

Juicy Cinnamon Pears

What You Need:

1 C pineapple juice
1/4 tsp ground cinnamon
4 pears, cored from the bottom up with stems left intact

How to Make It:

Pour the pineapple juice into the pressure cooker.
Sprinkle the cinnamon evenly over the pears.
Place the pears in to the cooker being sure they don’t touch the sides of the cooker.
Bring the pressure up to high on medium heat.
Cook the pears for 8 minutes then release the pressure under cold water.
Spoon the juice into the bottom of 4 small bowls.
Lay 1 pear into each bowl.

Makes 4 servings

Not only do these pears make a tasty side dish but they can very easily be turned into a delicious dessert. Melt 4 tbsp of semisweet chocolate until smooth. Drizzle 1 tbsp of the chocolate over each pear before serving. If this delicious treat is for adults only dry red wine may be substituted for the juice.

Tasty Breakfast Apple Cakes

What You Need:

1 C of self rising flour
1 pinch of salt
5 Tbsp butter cut into small pieces
4 Tbsp light brown sugar
1 apple, peeled, cored and grated
2 Tbsp milk

How to Make It:

Place a heavy skillet over medium low heat and allow it to preheat.
Whisk the floor and salt together in a large bowl.
Place the butter into the mixture.
Rub it into the flour using your hands until it resembles fine bread crumbs.
Stir in the brown sugar until well combined.
Add the apples and just enough milk to form a soft dough ball.
Roll out the dough on a lightly flour surface to 1/4 inch thickness.
Cut the dough out into rounds using a cookie cutter or open end of a glass.
Melt a little butter in the preheated skillet.
Place the cakes into the skillet and cook 4 minutes or until nicely browned on the bottom.
Flip and continue to cook 4 minutes or until the bottom is browned.

Fruited Beef Pot Roast

1 (17 oz.) pkg. refrigerated cooked beef roast with juice
1 T of butter
2 T shallots, minced
2 T of tarragon vinegar
1 C fresh apple wedges
1 C fresh peach wedges

How to Make It:

Reserve the juice from the roast in a mixing bowl.
Place the butter into a skillet over medium heat.
When the butter has melted stir in the shallots and cook for 1 minute.
Reduce the heat to low and add the roast to the skillet.
Cover and cook the roast for 10 minutes or until heated through.
Add the vinegar to the reserved roast juice and whisk to combine.
Pour the mixture over the meat.
Place the apple and peaches along the sides of the meat in the skillet.
Cover and cook for 2 minutes.

Makes 4 servings

Pork Chops with Preserve Topping

4 boneless pork chops
1/2 t salt
1/2 t pepper
1 T of olive oil
1/4 C of butter
3 T of maple syrup
3 T of apricot preserves
1/2 t dried basil
3 pears, cored and sliced thin

How to Make It:

Coat both sides of the chops with the salt and pepper.
Heat the oil in a skillet over medium heat then add the chops.
Cook the chops for 10 minutes turning once, until the chops are cooked through.
Place the cooked chops on a platter and cover to keep warm.
Add the butter to the same skillet and heat until melted.
Stir the syrup and preserves into the butter until combined well.
Add the basil and stir again to incorporate.
Add the pear slices and stir to coat.
Cover the skillet and cook the pears for 3 minutes or until tender.
Top the pork chops with the sauce before serving.

Cheesy Pear Sandwich

4 English muffins spit
2 T of Dijon mustard
4 Canadian bacon slices
1 pear, peeled and sliced thin
4 slices of cheddar cheese

How to Make It:

Spread the mustard over the cut side of each muffin.
Lay a bacon slice onto 1 side of each muffin.
Place a couple of pear slices and a slice of cheese over the bacon.
Top with the other half of the muffin.
Heat a pan over medium heat.
Add the sandwich and toast for 5 minutes.
Flip and continue cooking for 5 additional minutes or until nicely browned and the cheese has started to melt.

2 (29 oz.) cans of sliced peaches, drained well
2 (29 oz.) cans of sliced pears, drained well
1 (20 oz.) can pineapple chunks, drained well
1 (15 1/4 oz.) can apricot halves, drained well and sliced
1 (21 oz.) can cherry pie filling

How to Make It:

In a slow cooker place the peaches, pears, pineapple and apricots.
Add the cherry pie filling and stir until all the ingredients are well combined.
Cook covered on high for 2 hours or until heated through.

Rich Pears in Chocolate Sauce

2 oz. unsweetened chocolate
2 tbsp butter
2 C light brown sugar, firmly packed
1/2 C half and half
1 tsp vanilla extract
4 pears, halved and cored
1/2 C almond slivers

How to Make It:

Melt the chocolate and butter in the top of a double boiler over simmering water stirring constantly.
Gently stir in the brown sugar and half and half,
Stirring constantly heat the mixture until very smooth and heated through.
Take the mixture from the heat, stir in the vanilla and cover to keep warm.
The grill is set for low heat.
Place the pears cut side down on the grill rack and grill 10 minutes or until tender.
Lay the grilled pears, cut side up onto a serving platter.
Spoon the warm sauce evenly over the top of the pears,
Sprinkle the top of the pears with the almond slivers before serving.

Bartlett Pear and Pecan Salad

1 C pecan pieces
1 C extra virgin olive oil
4 tbsp sherry vinegar
2 tbsp shallots, chopped fine
1 tsp salt
1/2 tsp pepper
4 Bartlett pears, cored but not peeled and cut into sections
1/2 C of blue cheese, crumbled

How to Make It:

Place a skillet over medium heat allowing the skillet to heat up.
Sprinkle the pecan pieces into the hot skillet.
Cook 4 minutes, stirring often until the pecans are toasted.
Remove and set aside.
Whisk the olive oil and vinegar together in a small mixing bowl.
Stir in the shallots, salt and pepper.
Place the pears into a serving bowl.
Sprinkle the cheese into the pears.
Pour the dressing over the top.
Sprinkle the salad evenly with the toasted pecans.

Makes 8 servings

Apricot halves or orange segments can be used in place of the pears if you prefer.

Fresh Gingered Pear Ice Cream

2 ripe pears, peeled and chopped
3 T + 1 1/4 C of sugar, divided
4 C of whole milk
1 (1 inch) piece of fresh ginger, peeled and sliced
10 egg yolks, beaten lightly

How to Make It:

Put the pears in a bowl and evenly sprinkle them with 3 T of sugar.
Cover the bowl and refrigerate the pears for 8 hours.
Place the milk into a saucepan.
Stir the ginger into the milk.
Place the pan over medium heat and stirring constantly heat the mixture until bubbles appear.
Take the pan off the heat and set aside to cool slightly.
Put the remaining sugar into a mixing bowl.
Add the egg yolks and stir until blended together well and the sugar has dissolved.
Stir in the slightly cooled milk mixture.
Transfer the mixture to the saucepan and place back over medium heat.
Cook the mixture for 3 minutes or until the custard coats the back of a metal spoon.
If the mixture looks as if it has curdled whisk it until it becomes smooth again.
Submerge the pan into an ice water bath for 2 minutes or until completely cooled.
Be careful and don’t allow any water to get into the ice cream mixture.
Once cooled cover the pan and chill for at least 8 hours or overnight.
Strain the milk mixture though a fine sieve removing and discarding the ginger.
Transfer to the ice cream maker and freeze according the directions for your ice cream maker.
When done fold in the chilled pears and ripen in the freezer for 4 hours.

Makes 14 servings

The best way to eat this ice cream is in a waffle cone. Dip the cone in white chocolate and top with colored sugar. When set fill the cone with this delicious ice cream and enjoy.
