Magic Bunny Salad

mrsbunnyWhat You Need:

4 canned pear halves
8 whole cloves
8 almond halves
4 t cottage cheese
4 lettuce leaves

How to Make It:

Place one lettuce leaf on each of 4 serving plates.
Lay each pear cut side down on the lettuce.
Use toothpicks to attach 2 cloves to the smaller end of each pear half for eyes.
Add 2 almond halves to each side of the pear for ears.
At the larger end of each pear place 1 t of the cottage cheese to make a tail.

Serves: 4

Children will be delighted when they see these little bunnies setting at their place at the Easter table. Add a chopped red maraschino cherry to the front of the pear with a toothpick for a twitching bunny nose.

Roasted Walnut Pear Salad

What You Need:

4 pears
1/2 C honey
6 C salad greens
3 T extra virgin olive oil
1 C toasted walnuts, chopped coarse
1 (8 oz.) pkg. Italian cheese, shredded

How to Make It:

Peel the pears and remove the core.
Cut the pears into thick slices then cut each slice into quarters.
Pour the honey into a bowl.
Place the pear quarters into the honey and coat.
Place the salad greens into a salad bowl.
Drizzle the oil over the greens and toss to coat well.
Place the honey coated pears into the salad.
Sprinkle the walnuts over the entire salad.
Top with the shredded cheese.

Serves: 4

To toast walnuts place them in a single layer on a baking sheet. Place the baking sheet in a preheated 375 degree oven for 6 minutes, stirring occasionally, until the walnuts are a pale brown and fragrant. Cool the walnuts before adding them to the salad.

Stand Up Pear Salad

What You Need:

4 large pears
2 C watercress
2 T pecan halves, toasted
1/2 C blue cheese, crumbled
1 C raspberry vinaigrette dressing
2 T lemon juice

How to Make It:

From the bottom of the pears remove the cores keeping the pears with the stems intact.
Place the watercress into a mixing bowl.
Add the pecans and blue cheese.
Pour the vinaigrette into the mixture and toss to coat.
Slice the pears into 4 horizontal pieces.
Brush the cut side of each piece with the lemon juice.
Place the bottom piece of each pear onto a serving plate or salad bowl.
Place 1/4 of the salad mixture over the bottom slices.
Place the next slice of pear on top of that.
Then add more of the salad mixture.
Continue in this manner with each pear finishing with the stemmed top on each one.

Serves: 4

Use your favorite vinaigrette dressing in this recipe. Honey can also be drizzled over each pear after it has been assembled.
