Juice Simmered Pears

What You Need:

6 C of water
1 C of sugar
6 firm pears, peeled, cored and cut in half
1 lemon rind strip
3 tbsp pear juice

How to Make It:

Place a saucepan over medium heat.
Add the water and sugar to the pan and simmer, stirring constantly, until the sugar dissolves.
Place the pears into the water and return to a simmer.
Cook the pears for 25 minutes at a simmer or until the pears are tender.
Place the pears into a serving bowl, cover and chill until ready to serve.
Over high heat bring the pear cooking liquid to a boil.
Cook the juice for 20 minutes or until the juice is reduced to 1 C and resembles syrup.
Strain the juice through a sieve, cover and chill for at least 30 minutes.
Pour the chilled juice over the pears just before serving.

Makes 6 servings

This is a simple but elegant way to serve a fruit side dish. Everyone will love it and it gives you at least 1 serving of fruit in your daily diet. If you are serving to adults you may use pear flavored liqueur or brandy instead of the pear juice. Try making this recipe using other fruits such as apples, peaches or even plums.

Fresh Mint Melon Dish

What You Need:

1 C of water
3/4 C of sugar
3 tbsp lime juice
1 1/2 tsp fresh mint chopped
1/8 tsp salt
1/2 small watermelon, cubed
1 small cantaloupe, cubed
1 small honeydew melon, cubed
1 large peach, sliced
1 C of fresh blueberries

How to Make It:

Place the water into a saucepan and place the pan over medium high heat.
Add the sugar, lime juice, mint and salt and stir to blend in.
Bring the mixture to a boil and boil for 2 minutes.
Remove the pan from the heat, cover and let stand until completely cooled.
Mix the melon cubes together in a large non metal bowl.
Gently fold in the peaches and blueberries.
Add the cooled syrup and gently stir until the fruit is well coated.
Cover the fruit and refrigerate for 2 hours, stirring occasionally.
Drain well before serving.

Makes 6 servings

Fresh melon is a great way to cool off on a hot summer day. Add grapes, strawberries or any of your favorite fruits to this dish. Better yet make it into a delicious dessert by adding a little whipped topping to each serving.

Fruited Beef Pot Roast

1 (17 oz.) pkg. refrigerated cooked beef roast with juice
1 T of butter
2 T shallots, minced
2 T of tarragon vinegar
1 C fresh apple wedges
1 C fresh peach wedges

How to Make It:

Reserve the juice from the roast in a mixing bowl.
Place the butter into a skillet over medium heat.
When the butter has melted stir in the shallots and cook for 1 minute.
Reduce the heat to low and add the roast to the skillet.
Cover and cook the roast for 10 minutes or until heated through.
Add the vinegar to the reserved roast juice and whisk to combine.
Pour the mixture over the meat.
Place the apple and peaches along the sides of the meat in the skillet.
Cover and cook for 2 minutes.

Makes 4 servings

This throw it together pot roast is well worth the short time it takes to fix. Mix and match your fruits such as pears and plums to make this quick meal a family favorite.

Drink a Quick and Easy Breakfast

Some are really difficult and may take a while to prepare, but there are several that are really easy and don’t require a lot of prep time to make them. In fact, you usually have a lot of these ingredients on hand at home.

Take one cup of water, a 6 ounce can of orange juice concentrate, one cup of milk, 10 cubes of ice, 1 teaspoon of vanilla and a pinch or two of sugar, depending on your tastes. Place all the ingredients into the blender and blend until very smooth. Freeze to use later or drink when blended. Because there is no slicing or dicing you can prepare this drink quick and easy the morning you want to serve it.

Coffee is definitely a breakfast staple, but here is a new twist. Take 6 ice cubes, 2 bananas, about a cup of milk and 2/3 cup of coffee and blend until smooth. This drink will kick start your day and give you a flavor to savor.

How about one for the kids? Adults love this too, so prepare to enjoy! You will need to chunk 1 frozen banana, a cup of milk, 1/2 C of vanilla ice cream and 2 tablespoons of peanut butter. Blend until smooth, if it is too thick to drink, add milk until you reach the consistency you desire and drink up!

For the next one you will need some frozen fruit. You can use any frozen fruit available such as strawberries, blueberries, peaches or which every fruit may be your favorite. Use a cup of frozen fruit, a cup of milk, a 1/4 up of sugar or sugar substitute and 1 teaspoon of vanilla. Blend together until smooth. This makes a great fruit smoothie and a great taste treat for breakfast.

Breakfast doesn’t have to be eaten anymore. Drinking breakfast can be just as fun and just as nutritional as the contemporary breakfast of bacon and eggs. Since people today are very health conscience, bacon and eggs to a lot of people are a no-no but smoothies can be a yes-yes. They are low in fat and low in cholesterol and taste really great. The next time instead of reaching for the frying pan, reach for the blender instead and eat or should we say drink to your heart’s content.

Cooked Mixed Fruit Dish

1/2 C of no soak dried peaches
1/2 C of no soak dried apricots
1/3 C of no soak dried pineapple
1/4 C of no soak dried mango
1 C unsweetened clear apple juice
4 T of low fat plain yogurt

How to Cook It:

Place all the dried fruits into a saucepan.
Pour the apple juice into the pan.
Over medium heat bring the above mixture to a slow boil.
Simmer 10 minute, covered tightly over low heat.
Transfer the fruit to 4 small bowls and top each bowl with 1 T of yogurt.

If you can’t find any of the dried fruit in this recipe you may substitute your favorite ones instead. For a special breakfast treat top with a flavored yogurt instead of plain

Peach Short Cake from the Grill

What You Need:

16 canned peach halves
1/4 C orange juice
2 tbsp butter, melted
2 tbsp maple syrup
1 loaf pound cake cut in 1 inch slices

How to Make It:

The grill is heated to medium temperature.
Drain the juice well from the peaches and put them in a bowl.
Whisk together the orange juice, butter and maple syrup in a separate bowl.
Brush the mixture onto both sides of the peaches and on each of the cake slices.
Place the peaches and the cake slices onto the grill grate.
The cake slices are grilled for 3 minutes then turned over and grilled an additional 3 minutes or until lightly browned.
The peaches are grilled 5 minutes then turned and grilled 5 minutes longer or until lightly browned.
Arrange the cake pieces in a single layer on a serving platter.
Top the cake slices with the grilled peaches.

Sparkler Fruit Salad

1 C of blueberries
1 C of plums, sliced
1 C pitted cherries, sliced
1 C cantaloupe, chopped
1 C strawberries, sliced
1 C peaches, sliced
1 C of small green grapes
1 C of raspberries
1/4 C of lime juice
2 tbsp of honey
1 tsp grated lime peel
1 C lemon lime flavored sparkling water, chilled
Mint sprigs

How to Make It:

Lay the blueberries into the bottom of a 2 quart glass bowl.
Layer the plums then cherries over the blueberries.
Add the cantaloupe then the sliced strawberries and peaches.
Sprinkle the grapes then the raspberries over the top.
Whisk the lime juice and honey together in a mixing bowl.
Fold in the lime peel.
Pour the sparkling water into the mixture and whisk until blended in well.
Pour the sauce over the top of the fruit and allow it run through all the layers of fruit.
Add the mint sprigs for garnish.

Makes 8 servings

Try any combination of fruit in this refreshing salad. Watermelon, honeydew, nectarines, lemons and limes will blend in well. A lemon based sauce can also be used in place of the lime sauce by substituting lemon juice and lemon peel.

Peachy Cream Cheesecake Ice Cream

1 C of milk
1 1/4 C + 3 T of sugar, divided
3 egg yolks, beaten
2 C of heavy whipping cream
2 t vanilla extract
2 (8 oz.) pkgs. cream cheese, cubed
1/2 C peach nectar
4 t lemon juice
4 fresh peaches, peeled and chopped

How to Make It:

Heat the milk in a saucepan over medium heat until it reaches 175 degrees.
Add 1 1/4 C of sugar stirring until the sugar is dissolved.
Remove 1/4 C of the heated milk and whisk into the egg yolks.
Add the egg mixture to the heat milk stirring as you add.
Place the heat on low and cook the mixture until it coats the back of a metal spoon, stirring constantly.
Immerse the pan in ice water for 5 minutes to quickly cool.
When cool place the mixture into a mixing bowl.
Put the whipping cream and vanilla into the blender.
Carefully add the cubes of cream cheese and blend until smooth.
Stir the mixture into the custard.
Add the peach nectar and lemon juice and mix until blended in well.
Cover the bowl and refrigerate at least 8 hours or overnight.
Once chilled, transfer the mixture to the cylinder of your ice cream maker.
Freeze as the directions suggest for your maker.
When the ice cream maker is finished ripen the ice cream for 4 hours in the freezer.

Makes 2 quarts

Always be sure to transfer your ice cream to a freezer container when you ripen it. Place the container in the freezer for 2 to 4 hours. The longer it is in the freezer the firmer the ice cream will become.

Honey and Oats Peach Breakfast

What You Need:

1/2 C canned peaches in light syrup, drained
1/8 t ground cinnamon
1/2 C vanilla yogurt, frozen
1/4 C honey oats and almond cereal

How to Make It:

Pour the peaches into a microwave safe bowl.
Sprinkle the cinnamon over all the peaches.
Microwave on high for 30 seconds being sure the peaches are warm all the way through.
Scoop the yogurt into a serving dish.
Spoon the peaches over the yogurt.
Sprinkle the cereal over the top.

Makes 1 serving
