Bean Soup with Whole Wheat Pasta

What You Need:

2 tbsp extra virgin olive oil, divided
1 1/2 C onion, chopped
1 tbsp garlic, minced and divided
4 1/4 C of water, divided
1 (14 1/2 oz.) can fat free reduced sodium chicken broth
1 C of small whole wheat pasta
1 carrot, cut lengthwise into fourths then sliced
1 (15 oz.) can no salt cannellini beans, rinsed and drained
4 C of broccoli florets
1 zucchini, cut in half lengthwise then sliced
1 C of cut green beans
1 C fresh parsley leaves
2 tbsp Parmesan cheese, grated
2 1/2 C plum tomatoes, chopped

How to Make It:

Place 1 tsp of the oil into a heavy 5 qt. pot.
Place the pot over medium high heat and stir in the onions.
Cover the pan and simmer for 5 minutes, stirring occasionally, or until tender.
Stir in 2 tsp of the minced garlic and cook 30 seconds or until fragrant.
Pour in 4 C of the water and the chicken broth and stir well.
Bring the liquid to a brisk boil then stir in the pasta and carrots and boil for 5 minutes.
Remove 3/4 C of the cannellini beans and set aside.
Place the remaining cannellini beans into the pot.
Stir in the broccoli, zucchini and green beans.
Bring the mixture back to a brisk boil and boil for 5 minutes or until the pasta is tender.
Place the remaining cannellini beans, oil, garlic and water into the blender.
Add the parsley leaves and Parmesan cheese and puree until smooth.
Remove the soup from the heat and stir in the tomatoes and puree mixture.

Makes 4 servings

Because of the pasta this soup is a great source of protein and fiber. Use small pasta such as elbow macaroni to keep this soup light yet healthy. Serve your soup with crusty whole grain bread for a delicious lunch or dinner idea.

Lemon Butter Braised Scallops

What You Need:

1 1/2 lb. fresh sea scallops
3 tsp butter, divided
1 C of chicken broth
1 tsp lemon zest grated
2 tbsp lemon juice
1 1/2 tsp cornstarch
1 tsp garlic, minced
1/4 tsp salt
1/8 tsp pepper
1 tbsp fresh parsley, chopped

How to Make It:

Rinse the scallops and blot dry with paper towel.
Melt 2 tbsp of butter in a skillet over medium high heat.
Add the scallops and cook 5 minutes, turning occasionally, until cooked through.
Place the scallops in a serving bowl and keep warm.
In a separate bowl combine the broth, lemon zest, lemon juice and cornstarch.
Season the broth mixture with the salt and pepper then pour the mixture into the skillet.
Bring the mixture to a boil stirring constantly and allow it to boil 1 minute or until thick.
Take the skillet off of the heat and stir in the remaining butter and the parsley.
Pour the sauce over the scallops and toss gently to coat.

It is important to purchase firm moist scallops that have a creamy white color. This will ensure you have purchased fresh scallops. Scallops that are not fresh will have a sulfur odor and have a pearly look. Do not purchase scallops that have a liquid oozing into the package. When you purchase scallops use them right away or freeze them for up to 2 months. Remember scallops do cook rather quickly so cook your side dishes first and then your scallops.

Snappy Herbed Tomatoes

What You Need:

1 pint mini pear tomatoes cut in half
1/4 C of vegetable oil
3 tbsp cider vinegar
1/4 C fresh parsley, minced
1 1/2 tsp fresh basil, minced
1 1/2 tsp fresh oregano, minced
1/2 tsp salt
1/2 tsp sugar

How to Make It:

Put the tomatoes into a salad bowl.
Whisk together the oil and vinegar in a separate bowl until mixed together well.
Add the parsley, basil, oregano, salt and sugar and whisk until the sugar is dissolved.
Pour the mixture over the tomatoes and toss to coat.
Cover the bowl and refrigerate at least 3 hours or overnight.

There’s nothing like fresh ingredients when it comes to making a summer dish. This side dish is no exception. The herb dressing gives these tomatoes a little snap. Cherry tomatoes can also be used in place of or with the pear tomatoes or mix them together for a pretty summer dish.

Grilled Balsamic Mushroom Burgers

What You Need:

4 large Portobello mushroom caps
1 tsp salt
1 tsp pepper
2 tbsp balsamic vinegar
1 tsp dried thyme
2 tsp parsley
4 slices of Provolone cheese

How to Make It:

Heat the grill to medium high heat and spray the grates with a cooking spray.
Sprinkle all the mushroom caps on both sides with the salt and pepper.
Brush both sides of the mushrooms with the balsamic vinegar and sprinkle with thyme.
Put the mushrooms on the heated grill and cook 3 minutes.
Flip and grill an additional 3 minutes or until tender.
Sprinkle the parsley over the tops of the mushrooms and add a slice of the cheese.
Place a foil tent over the mushrooms and grill for 1 minute or until the cheese melts.
Place on buns and serve with your favorite condiments.

Grilling mushrooms gives them a caramelized taste The vinegar and thyme gives the mushroom burgers their vivacious taste. Serve these burgers with a side salad of all your favorite veggies for a great summertime lunch or dinner.

Garlic Butter Parmesan Rolls

What You Need:

1 (11 oz.) pkg. refrigerated breadsticks
2 Tbsp garlic butter, melted
1/2 C Parmesan cheese, grated
1 tsp dried parsley
1/8 tsp cayenne pepper

How to Make It:

Line a baking sheet with foil and preheat the oven to 350 degrees.
Flour a flat surface, separate the breadsticks and place them on the floured surface.
Cut the breadstick lengthwise into 3 strips leaving 3/4 inch uncut ends.
Roll the outside strips in opposite directions around the uncut portion at the end.
Roll the center strip in either direction around the uncut end and pinch to help hold its shape.
Lay the rolls on the prepared baking sheet and brush the tops with the garlic butter.
Whisk the cheese, parsley and cayenne pepper together in a small bowl.
Sprinkle the tops of each roll with the cheese mixture.
Bake the rolls for 13 minutes or until they are just turning a golden brown.

Makes 6 servings

If you have grated Romano cheese instead of Parmesan cheese feel free to use it instead. The cayenne pepper is optional. Make an extra batch and freeze them for later. Don’t have time to create the rolls? Leave the breadsticks as they are and proceed as directed above.

Beef Cabbage and Tomato Layers

1/2 C of pearl barley, rinsed and drained well
1 C of water
1/2 t of salt
1/4 t of pepper
8 intact large green cabbage leaves, divided
2 (14 oz.) cans of diced tomatoes
1 T of lemon juice
2 T light brown sugar
2 eggs, lightly beaten
1 onion, chopped
2 carrots, grated
1 1/2 lb. ground beef
1 t of parsley flakes
2 garlic cloves, minced
1/2 C of raisins

How to Make It:

Allow the oven to preheat to 450 degrees.
Generously spray the inside and lid of a cast iron Dutch oven with cooking spray.
Pour the barley into the prepared pan.
Pour the water over the barley in the pan and sprinkle in the salt and pepper.
Arrange a single layer of cabbage over the barley.
Drain the tomato juice into a small bowl.
Add the lemon juice and whisk to combine.
Whisk in the brown sugar until dissolved.
Place the eggs, onion, carrot, beef, parsley and garlic into a separate mixing bowl
Mix the ingredients together well.
Fold the tomatoes into the meat mixture until well combined.
Drop half of the meat mixture in an even layer over the cabbage leaves.
Pour half of the tomato juice mixture over the top.
Sprinkle with the raisins.
Layer more cabbage leaves over the top in a single layer.
Evenly spread the remaining meat mixture over the cabbage leaves.
Layer any remaining cabbage leaves over the meat.
Pour the remaining tomato juice mixture over the cabbage leaves.
Cover and bake 45 minutes or until the cabbage is tender.

Sweet and Sour BBQ Chicken Quarters

6 chicken leg quarters
3/4 C of ketchup
1/2 C of orange juice
1/4 C brown sugar, packed
1/4 C red wine vinegar
1/4 C of olive oil
4 t fresh parsley, minced
2 t Worcestershire sauce
1 t garlic salt
1/2 t pepper
2 T + 2 t of cornstarch
1/4 C of water

How to Make It:

Cut the leg quarters at the joint then place them in the crock pot.
Whisk the ketchup, orange juice and brown sugar until the sugar is dissolved.
Whisk in the vinegar, oil, parsley and Worcestershire sauce.
Add the garlic salt and pepper and whisk to blend in well.
Pour the mixture evenly over the chicken and turn the chicken to coat completely.
Cook covered on low temperature 6 hours or until the internal temperature reaches 180 degrees.
Remove the chicken to a warmed serving platter.
Dip out 2 C of the cooking sauce from the slow cooker and pour into a pan.
In a small bowl whisk together until smooth the cornstarch and water.
Place the pan over medium heat and stir in the cornstarch water.
Bring to a brisk boil and stir constantly for 2 minutes or until thick.
Just before serving pour the sauce over the chicken.

Makes 12 servings

If you’re looking for something a little different why not try this for Christmas. Cook it in the slow cooker while you prepare the rest of the meal. Kids love this dish. Separated chicken legs and thighs can be used for quicker preparation.

Nothing but Veggie Casserole

2 C of water
1/2 C of fresh cauliflower florets
1/2 C of fresh carrots
1/2 C frozen peas
1/2 C of onion
1/4 C of red pepper, sliced
1/4 t of pepper
1/2 t of salt
2 T fresh parsley, chopped

How to Make It:

Place the cooker trivet into the cooker and add the water.
Lightly oil a small casserole dish.
Layer the cauliflower, carrots, peas, onion and red pepper slices into the dish.
Sprinkle the salt and pepper evenly over the vegetables.
Using aluminum foil, tightly cover the casserole.
Set the casserole dish onto the trivet.
Bring the cooker pressure to high pressure quickly and cook 2 minutes.
Release the pressure quickly by running under cold water.
Sprinkle the casserole evenly with the parsley before serving.

Substitute frozen vegetables for any of the fresh vegetables if you prefer. You could also add broccoli, green beans or substitute them for other vegetables.

Lemon Rubbed Roasted Turkey

What You Need:

1 (15 lb.) whole turkey, thawed
2 lemons cut in halves
1 tsp. salt
1 tsp. pepper
1 onion, quartered
2 celery stalks, cut in chunks
2 carrots cut in chunks
2 parsnips cut in chunks
1/2 tsp. parsley
3 tbsp. butter, melted

How to Make It:

Place the oven on 400 degrees and allow it to heat while preparing the turkey.
Remove the giblets and neck from the turkey and save for another use or discard.
Run under cool water both inside and out and pat dry.
Use 2 lemon halves and rub the inside of the turkey squeezing the juice into the turkey as you rub.
Sprinkle the turkey cavity with 1/2 tsp. salt and 1/2 tsp. pepper being sure to cover well.
Place the onion, celery, carrots and parsnips into the cavity of the turkey.
Sprinkle with the parsley.
Tie the legs together with twine and secure the neck skin over the back of the turkey.
Rub the remaining 2 halves of lemon over the outside of the turkey again squeezing out the juice as you rub.
Baste the turkey all over on the outside with the melted butter.
Sprinkle the remaining salt and pepper over the turkey.
Place the turkey, breast side down, on a rack in a large shallow roasting pan.
Put the turkey into the preheated oven for 30 minutes.
Reduce the heat of the oven to 350 degrees and continuing roasting 2 hours.
Reduce the heat again to 225 degrees and turn the turkey over so the breast will brown.
Continue roasting 1 hour 30 minutes or until the internal temperature reaches 170 degrees in the breast area of the meat.
Allow the turkey to rest 30 minutes before carving.
