Cantaloupe and Pork Salad

What You Need:

1 (1 lb.) pork tenderloin
1 tbsp + 1 tsp dry Caribbean jerk seasoning, divided
1 tsp lime zest, grated
1/4 C lime juice
1 tbsp honey
8 C of mixed salad greens
1/2 cantaloupe, cut into wedges

How to Make It:

Heat the oven to 425 degrees.
Rub 1 tbsp of jerk seasoning over the loin and place the loin on a rack in a shallow baking pan.
Place in the oven and roast for 30 minutes or until the internal temperature reaches 155 degrees.
Transfer the loin to the cutting board and cover loosely with foil to keep warm.
Let the loin stand at least 10 minutes, uncover and slice.
Whisk together the lime zest, juice and honey.
Place the greens on to a platter, add the cantaloupe wedges and carefully pour the sauce over the top.

Makes 4 servings

Jerk seasoning comes in many forms such as powder, dry paste or even as a marinade. Try making your own by mixing together allspice, hot chilies, salt and thyme then add your own special touch. These touches can be garlic, cinnamon, nutmeg, ginger or even brown sugar. Pork and cantaloupe compliment each other well making this both a healthy and tasty salad main course meal.

Raisin Enriched Lemon Pudding

What You Need:

10 tbsp unsalted butter, softened and divided
1 C of sugar, divided
1/2 C of heavy cream
1 large egg, beaten well
1 1/2 C of flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 C of milk
1 tsp vanilla extract
1 tbsp cornstarch
1 tsp lemon zest, grated
1 C of cold water
2 tbsp lemon juice, fresh squeezed
1/8 tsp nutmeg
1/4 C of raisins

How to Make It:

Set the oven temperature at 350 degrees and allow the oven to preheat.
Butter the bottom only of a 9 inch square baking pan.
Beat 8 tbsp of the butter on low until light and fluffy.
Add 1/2 C of sugar and the cream and beat for 2 minutes.
Beat in the egg until blended in well.
Sift the flour, baking powder and salt together in a separate bowl.
Add the flour mixture to the butter mixture.
Pour in the milk and beat until blended together well.
Mix in the vanilla.
Transfer the pudding to the baking dish and bake 30 minutes or until firm.
Put the remaining sugar into a saucepan.
Add the cornstarch and lemon zest and stir to combine.
Stir in the water, place the pan over medium high heat and bring to a boil.
Lower the heat to medium low and cook 5 minutes, stirring constantly, until thickened.
Remove from the heat and stir in the lemon juice and butter until the butter has completely melted.
Fold in the nutmeg and raisins.
Pour the sauce over the top of the pudding just before serving.

Makes 4 servings

This pudding is an old New England favorite. The lemon sauce gives the pudding a light and nicely sweet taste. The raisins are optional and cinnamon can be used in place of the nutmeg if you prefer.

Nutmeg Spiced Applesauce Cake

What You Need:

2 1/2 C of flour
1 1/2 tsp baking powder
1/4 tsp baking soda
3/4 tsp nutmeg
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp salt
1/2 C of butter, room temperature
2 C of sugar
2 eggs
1 1/2 C applesauce

How to Make It:

Preset the oven to 350 degrees and grease a 13X9 baking pan well.
Whisk together the flour, baking powder and soda, nutmeg, cinnamon, cloves and salt.
In a separate bowl beat the butter on medium speed for 30 seconds.
Add the sugar and beat until well combined.
Beat in the eggs one at time until well blended.
Add the flour and applesauce to the butter mixture, alternating between the two and beating well after each addition.
Pour the batter into the prepared baking dish.
Bake 40 minutes or until the top springs back when lightly touched.

Makes 15 servings

This cake is so moist that frosting isn’t necessary. To enhance the flavor add dried fruits or nuts. Just fold them into the batter after adding the applesauce. Freeze any leftover cake in an airtight container for up to 1 month.

A warm beverage can take the blustery blues out of winter and give us a warm cozy feeling from our heads to our toes. The possibilities for something warm to curl up with are endless and here are just a few ideas.

Kids and adults savor the taste of hot chocolate. Warm milk, chocolate and marshmallows have a way of soothing us. Today packaged hot chocolate mix is in abundance. There are numerous types and various flavors. Yet there’s nothing quite like homemade hot chocolate to warm and sooth a cold and tired body.

Apple cider is a great way to warm up on a blustery day. Mulled cider gets its comforting effect from spices infused in the flavor during heating. Cinnamon, nutmeg and cloves are the spices most often used. Mace, ginger, allspice, orange slices and lemon zest can also bring out the flavor of a mulled cider. Ground spices may be used, but the taste will differ slightly. It’s best to use whole spices to achieve a full flavor.

Steep cider over low heat to achieve the best results when making mulled cider. Simmering the cider for a couple of hours will bring out the best flavor. Do not boil the cider or the taste may become bitter. To keep your cider warm, place it in the crock pot after simmering.

We are fast finding in today’s world that tea is one drink that offers a healthy alternative to caffeinated beverages. There is an abundance of flavored teas, comforting teas and healthy teas available today. Herbal teas have also become a big hit.

Most herbal teas contain no caffeine. Mint teas have large amounts of vitamin C. This may also be a problem for those whose bodies are sensitive to this vitamin. Mint teas, for those who can enjoy them come in many flavors. Peppermint tea is quite soothing but can be hard on the bladder and digestive system if consumed on a regular basis. Spearmint tea is soothing and is easy on the digestive system.

To achieve the perfect mint tea that your body can tolerate try making your own. Add mint leaves to tea while steeping. It may take a few tries to find the right adjustment of mint, but it is well worth it when you do.

Chamomile tea is another comforting herbal tea. Be careful if you are allergic to ragweed as chamomile is related to the ragweed family. Chamomile is great for naturally relieving muscle spasms that can be brought on by the cold weather.

Flavored hot water might sound a little strange but with some imagination flavored hot waters can be quite delicious. Add flavored extracts with a tiny bit of brown sugar or honey. Stir in orange, lemon or lime zest to add flavor. Spices can be added to give hot water a delicious taste.

Enjoying a cup of warmth can be one way to fend off that winter chill. Head off to the grocery store and see what might be available or better yet experiment on your own. Cuddle up and enjoy.

Slow Cooked Corn Casserole

1 (8 oz.) pkg. cream cheese, soft
1/3 C of sugar
1 C of milk
1/2 C of egg substitute
2 T of butter, melted
1 t salt
1/4 t ground nutmeg
1/8 t of pepper
2 1/3 C of frozen corn, thawed
1 (14 3/4 oz.) can cream style corn
1 (8 1/2 oz.) corn muffin mix

How to Make It:

Place cream cheese and sugar into a mixing bowl and beat until smooth.
Gradually add the milk, beating the mixture while adding.
Blend in the egg substitute, butter, salt, nutmeg and pepper and mix well.
Fold in both types of corn.
Stir in the muffin mix and blend well.
Spray the slow cooker with cooking spray on the bottom and sides.
Put the corn mixture in the slow cooker.
Cook covered on high for 4 hours or until the center is set.

Prepare this dish in a slow cooker and give yourself extra room in the oven for the rest of your Christmas dinner. You may also add chopped onions and bell peppers for extra flavor to this dish.

Toasting with Holiday Beverages

punchBeverages are a big part of a holiday celebration. Holiday beverages are the perfect topper for a great dinner or the wake up for morning breakfast and are important when it comes to those holiday toasts.

Eggnog tops the list of holiday beverages. Eggnog is made with eggs of course. Some people may be concerned about raw eggs. If that’s the case, you can purchase chilled eggnog in the carton. There are numerous recipes for eggnog. Finding the one that suits your taste buds and needs won’t be hard to do.

Eggnog is traditionally an alcoholic drink but it’s not an absolute necessity to add the alcohol. Adults and children alike can enjoy a tasty non-alcoholic version. Add a little nutmeg or cinnamon to the top of each glass to give it a special holiday taste.

Heat up some apple cider for the holiday toast. This warm apple drink keeps the chill away when the weather outside is frightful. Add slices of citrus fruits and cinnamon sticks. Use citrus peels to garnish each cup.

Wassail is a popular European holiday drink that has found its place in our holidays. Served hot this spiced punch can be made with mulled cider instead of the traditional mulled beer. The ingredients were heated together and topped with toast. Even with the soggy bread this punch is a holiday tradition in many homes.

Punches of all kinds are a hit when it comes to holiday beverages. A sparkling punch, fruit punch or citrus punch can spruce up any holiday gathering. For presentation add colored ice cubes. Red and green Kool-Aid make great holiday punch ice cubes. Add red and green maraschino cherries for a special touch.

How about a Christmas tea? Peppermint teas are a great way to toast the holiday. Cinnamon teas give you that Christmas warmth. If you have a diabetic family member teas may be easier to handle than some of the sweet or alcoholic type of beverages.

One last beverage to remember is the hot chocolate. Use milk instead of water for a creamier version. There’s nothing like hot chocolate to warm the body on a snowy Christmas night. Don’t forget the marshmallows.

Cinnamon Nutmeg Sweet Potato Mash

2 C of water
5 large sweet potatoes, peeled and sliced
1 C of milk
2 t of balsamic vinegar
1 t cinnamon
1/2 t of nutmeg

How to Make It:

Place the trivet into the pressure cooker.
Pour the water over the trivet.
Layer the sweet potatoes onto the trivet.
Bring the pressure cooker to high pressure and cook the potatoes 8 minutes.
Reduce the pressure quickly under cold water.
Remove the potatoes and place in a serving bowl.
Use a potato masher and mash the cooked potatoes well.
Pour the milk and vinegar over the potatoes and stir until blended in well.
Sprinkle with the cinnamon and nutmeg stirring to blend in well.

If you want something a little different from regular mashed potatoes this is the recipe you need to use. Be sure to check the directions for your brand and size of cooker when adding water as it might require a little less than what the recipe calls for.

Sweet Chocolate Nutmeg Custard

2 C of low fat milk
3 eggs, lightly beaten
1/2 C premium sweet cocoa
1/8 t of salt
1 t of vanilla
1 t of nutmeg

How to Make It:

Lightly spray 4 custard cups with a non stick cooking spray.
In a mixing bowl blend together the milk and eggs.
Add in the cocoa and salt.
Add the vanilla and mix well with an electric mixer on medium speed.
With an electric mixer mix until combined well.
Fill the custard cups 2/3 full with the mixture.
Lay the trivet into the bottom of the cooker.
Tightly cover each cup with aluminum foil and place on the trivet.
Quickly bring the pressure up and cook for 4 minutes.
Quickly release the pressure under cold water.
Sprinkle the top of each cup with nutmeg before serving.

A basic egg custard is made from this recipe by leaving out the cocoa and adding 2 T of sugar. You can use the basic egg custard to make caramel custard by placing 1 1/2 T of brown sugar in the bottom of each custard cup before adding the custard. When the custard is cooked turn the cup upside down and let the brown sugar sauce ooze down the side of it.

Brown Sugar Bananas for Kids

4 large ripe bananas, peeled
2 T of brown sugar
1/8 t of nutmeg
1 C of water

How to Make It:

Lay the bananas in a single layer into a casserole dish.
Sprinkle the brown sugar evenly over the bananas then add the nutmeg.
Tightly seal the dish with heavy duty aluminum foil.
Place the trivet into the bottom of the cooker.
Pour the water over the trivet.
Set the casserole dish onto the trivet.
Bring the pressure up to high and cook the bananas for 6 minutes.
Slowly release the pressure.

This casserole is best served warm. This may be served as a side dish or as a dessert with any meal. This is a great way to get kids to eat fruit as they love this dish. Fresh fruit cooks very quickly in a pressure cooker so be sure to keep a timer handy.

Makes 4 servings

Golden Almond Oatmeal

2 C of orange juice
1 C rolled oats
1/4 C of golden raisins
1 T almonds, sliced
1 t vanilla extract
1/2 t of cinnamon
1/4 t of nutmeg

How to Make It:

Pour the juice into the pressure cooker.
Stir in the oats, raisins, almonds and vanilla until well blended.
Add the cinnamon and nutmeg and stir to combine.
Bring the pressure to high and cook 1 minute.
Remove the cooker from the heat and allow the oatmeal to stand 5 minutes.

This served on a cold winter morning will help remove the early morning chill. For a special treat try adding milk, honey, sliced bananas or orange slices.
