Open Faced Italian Burgers

What You Need:

1 lb. lean ground beef
2 hamburger buns
1 C mushroom pasta sauce
1 C mozzarella cheese, shredded

How to Make It:

Set the oven to broil and allow it to preheat.
Shape the beef into 4 patties and place them on the broiler pan.
Broil 4 inches from the heat for 10 minutes or until cooked to you liking, turning once.
Place the burgers on a plate and cover to keep warm.
Clean the broiler pan and place the buns, open side up on the pan.
Broil the buns for 2 minutes or until just lightly toasted.
Remove and keep warm.
Heat the pasta sauce over medium heat for 5 minutes or until bubbly.
Place the each burger on a bun and spread with the heated sauce.
Sprinkle the tops with the mozzarella cheese.
Broil the burgers for 1 minute or until the cheese has started to melt.

Makes 4 servings

Who doesn’t love a good burger? Sometimes it’s a nice change to do something a little different and the kids will love them. This is an inexpensive way to serve an old favorite with a little flash especially if you have leftovers from the big cookout. For a little more Italian flavor sprinkle a little basil over the pizza sauce before adding the cheese.

Teriyaki Onion Mushroom Sirloin

1 T of butter
1 1/4 lb. boneless top sirloin steak, trimmed and cut into 4 pieces
3/4 t pepper
3/4 C beef broth
1 T teriyaki sauce
1 onion, cut into thin wedges
1 3/4 C fresh mushrooms, sliced

How to Make It:

Heat the butter in a skillet over medium high heat until completely melted.
Season the steak on both sides with equal amounts of pepper pushing the pepper into the steak with your fingers.
Reduce the heat under the skillet to medium and add the steaks.
Cook the steaks for 9 minutes turning them once half way through the cooking time.
Remove the steaks and keep them warm.
Pour the beef broth and the teriyaki sauce into the skillet.
Scraping the bottom of the skillet to remove the brown bits from the steak, cook the liquid for 4 minutes or until bubbly.
Stir in the onions and the mushrooms and cook 10 minutes or until most of the liquid has evaporated.
Top the steaks with the onion and mushroom mixture.

Makes 4 servings

These steaks top the list of quick, easy and tasty. Just add a microwave baked potato and a side of fruit for a quick evening meal.

Portobello Mushroom Salad with Balsamic Dressing

3 T of olive oil, divided
2 C of Portobello mushrooms, sliced
1/2 t crushed red pepper
3 C mixed greens, torn
1 C of mozzarella cheese, cubed
3 T of balsamic vinegar

How to Make It:

Pour 1 T of the oil into a skillet placed over medium heat.
Stir in the mushrooms and peppers and cook 2 minutes stirring constantly.
Remove the pan from the heat.
Place the greens into a salad bowl.
Top with the mushrooms and peppers.
Sprinkle with the cheese and toss to blend all the ingredients well.
Whisk the remaining oil and the vinegar together well.
Pour over the salad and toss again to coat.

Makes 4 servings

If you don’t like the taste of balsamic vinegar, red wine vinegar may be substituted. Try this salad as a beginner for a steak dinner or better yet as a main course for dinner or lunch.

Summertime Pineapple Fluff

1 (3 oz.) pkg. cream cheese, softened
2 tbsp green onions, chopped very fine
1 fresh mushroom, chopped very fine
1 garlic clove, minced
1/4 tsp salt
1/8 tsp pepper
1/4 C crushed pineapple, drained well

How to Make It:

Place the softened cream cheese in a mixing bowl.
Beat with an electric mixer for 5 minutes until fluffy.
Stir in the green onions, mushrooms and garlic until blended in well.
Sprinkle with the salt and pepper and stir to combine.
Add the crushed pineapple and mix until all the ingredients are blended together.

Makes 1 C

This summertime pineapple fluff is a tasty addition to any July 4th barbecue.

New York Strip with Balsamic Mushrooms

What You Need:

2 (8 oz) New York Strip steaks (1 inch thick)
1/2 t coarse salt
1 T olive oil
1 T unsalted butter
6 oz. Portobello mushrooms, sliced
1 clove of garlic, minced
1 T balsamic vinegar

How to Make It:

Preheat the broiler.
Sprinkle both sides of the steaks with the salt.
Place the steaks on a broiler pan.
Broil 4 minutes then turn and continue broiling 3 minutes for medium rare.
Remove the steaks and place on plates loosely covered with foil.
Place the oil and butter into a skillet over medium heat.
Let the butter melt being sure to stir it into the oil.
Add the sliced mushroom and stir to coat.
Cook the mushrooms 4 minutes or until fork tender.
Add the garlic, stir and cook an additional 30 seconds.
Remove the skillet from the heat and add the vinegar stirring to coat.
Uncover the steaks and spread the mushroom mixture over the top just before serving.

Serving Size: 2

Portobello mushrooms have a great meaty taste and go well with any type of steak. By adding the garlic and vinegar it gives them a special robust flavor.
