teaMother’s Day is right around the corner. Now is the time to start planning your special activities for this special day. Have you ever considered a Mother-Daughter tea party? This can include family and friends also. Below are just a few ideas to get your tea party rolling.

Keep in mind that simple is better. If you keep things simple it will be easier and more elegant without all of the worries. Don’t have a full tea set sitting around? You can find some very nice sets in places like Goodwill, flea markets or thrift stores at a very reasonable price. Another idea is to ask everyone to bring their own special set. This will allow everyone to tell why these sets are so special to them.

First things first, decide on a particular theme for your tea party. Below are three simple yet special themes you can try.

The Mother-Daughter Theme

This works well with Mothers who have grown up daughters. Keep the decorations simple like small flower arrangements that will grace the table alongside the tea cups and saucers. This setting will be pleasing to the eyes and the heart. The menu can consist of finger sandwiches, cookies and scones. Have the Mothers and daughters write a note or letter to each sharing how much they love and appreciate each other.

The Mommy & Me Theme

For the Moms of younger girls this will be really cute. Mom can dress up elegantly and the girls can rummage through Mom’s closet to find dresses, shoes, gloves and jewelry to be equally as elegant as Mom. This tea party can include cookies or simple finger foods along with lemonade, punch or hot chocolate. Create the invitations to request every child to bring a stuffed animal guest to share the table.

The Summer Time Tea Party

We all know that Mother’s Day is celebrated in May. This is just prior to the official start of the summer season. Why not take this opportunity to serve flavored iced tea instead. Instead of tea cups use iced tea glasses and serve the typical summer time appetizers. Everyone can dress in straw hats, sunglasses and flip-flops or sandals. This should get you excited about the warmer weather to come.

Brewing tea actually isn’t that difficult. Once you learn the ins and outs you will be able to brew the perfect pot of tea. You can start by purchasing the sampler boxes of tea. This will allow everyone a choice. You can also add flavorings to a glass of iced tea for a refreshing taste.

Onion and Bacon Rib Roast

What You Need:

1 (4 to 5 lb.) bone in rib roast
1 garlic clove, minced
1 t salt
1/2 t pepper
1 onion, sliced
8 strips of bacon

How to Make It:

Allow the oven to heat to 325 degrees.
Place the roast on a rack placed in a shallow baking dish fat side up.
Rub the garlic over the entire roast.
Sprinkle the entire roast with the salt and pepper.
Lay the sliced onions over the top of the roast.
Place the strips of bacon evenly over the onions.
Bake, uncovered until a meat thermometer inserted in the thickest part of the meat reads 160 to 170 degrees, about 3 hours.
Place the cooked roast on a meat platter and allow standing 15 minutes before carving.

Makes 10 servings

Preparation time: approximately 15 minutes
Cooking time: approximately 3 hours and 15 minutes
Total time: approximately 3 hours and 30 minutes

This elegant but very simple meal will knock Mom off her feet. Add a salad and baked potato and she’ll know just how much you care. It’s so simple to prepare and while it’s roasting you can pamper Mom in other ways.

Sweet and Spicy Rice Dinner

What You Need:

1 T olive oil
1 (20 oz.) can pineapple chunks in their own juice
12 oz. ham, cooked and coarsely chopped
1 C sweet red pepper, chopped
1 jalapeno pepper, chopped
1/2 (15 oz.) can black beans, rinsed and drained
1 (14.8 oz) pkg. long grain rice, cooked

How to Make It:

Place the oil in a skillet placed over medium heat and allow the oil to become hot.
Reserve the juice from the pineapple.
Stir the pineapple into the skillet and cook 3 minutes or until browned on all sides, stirring frequently.
Transfer the pineapple to a bowl and cover loosely with foil to keep warm
Place the ham into the skillet.
Stir in the red pepper and jalapeno pepper until well combined.
Cook the mixture for 3 minutes, stirring frequently.
Add the beans and rice and stir until well combined.
Cook 3 minutes, stirring frequently or until the mixture is completely heated through.
Transfer to a serving bowl and stir in the pineapple and the pineapple juice.

Makes 4 servings

Just a scrumptious dessert to this main dish and you will have a special meal ready for Mom to enjoy on her day.

Pepperoni Salad with Vinaigrette Dressing

What You Need:

1 (8 oz.) pkg. lettuce greens
4 C cherry tomatoes
1/2 sweet red onion, sliced
1/2 sweet red pepper, sliced
1 (6 oz.) pkg. sliced pepperoni
1 (4 oz.) pkg. mozzarella cheese, shredded
1/2 C extra virgin olive oil
1/3 C white balsamic vinegar
1 t parsley
1/8 t dried basil
1 t garlic, minced
3/4 t salt
1/2 t pepper
1 (5.5 oz.) box Italian seasoned croutons

How to Make It:

Break the lettuce up slightly and place it into a salad bowl.
Toss in the tomatoes, onions and red pepper slices.
Spread the pepperoni slices over the top.
Sprinkle the salad with the cheese, cover and refrigerate at least 4 hours.
Pour the olive oil and vinegar into a jar with a tight fitting lid.
Sprinkle the parsley, basil, garlic, salt and pepper into the jar.
Cover and shake until the ingredients are incorporated together well.
Pour the dressing over the salad and toss to coat all the ingredients well.
Top with the croutons before serving.

Makes 6 servings

This salad is sure to be hit with Mom if she likes her salads and pepperoni pizza. Black olives and or mushrooms may also be added to this salad.

Citrus Fruit Salad with Shrimp

What You Need:

1 C Romaine lettuce, rinsed and dried
1 bunch of fresh watercress, rinsed, dried and stemmed
1 ripe avocado, peeled and sliced
1 navel orange, peeled and sliced
1 mango, peeled and sliced
1 t lime juice
1 t cilantro
1/2 t salt
1/4 t pepper
1/3 C extra virgin olive oil, divided
1/2 lb. extra large shrimp, peeled and deveined

How to Make It:

Break the lettuce up into a large mixing bowl.
Add the watercress to the lettuce and combine well.
Layer the avocado slices into the salad.
Layer the orange and mango slices over the avocado slices.
Place the lemon juice into a shaker or jar with a lid.
Pour 1/4 C of olive oil into the juice.
Place the cilantro, salt and pepper into the shaker, cover and shake until well blended.
Place the remaining oil into a skillet.
Place the skillet over medium high heat.
When the oil is hot add the shrimp.
Cook the shrimp, stirring frequently, until the shrimp turns bright red.
Remove the skillet from the heat and pour the dressing over the shrimp.
Allow the shrimp to set for 5 minutes.
Spoon the shrimp and sauce over the salad.

Makes 2 servings

Preparation time: approximately 15 minutes
Cooking time: approximately 8 minutes
Total time: approximately 23 minutes

Be careful not to let the dressing boil while being heated. If the dressing becomes to hot it will separate. It can also cook the fruit in the salad and cause the lettuce to wilt when poured on the salad. If you can’t find fresh watercress, drained canned watercress works just as well.

Chili Sauce Steak Salad

What You Need:

1 lb. beef flank stead
1 T soy sauce
8 oz. rice noodles
1 cucumber
1/2 C Asian sweet chili sauce
1/2 C of water
1 C fresh julienned carrot
Fresh cilantro

How to Make It:

Place the oven setting to broil and allow the broiler to heat up.
Brush the steak well with the soy sauce.
Place the steaks on a broiler pan and broil 5 inches from the heat source for 18 minutes or until the internal temperature reaches 160 degrees, turning once.
Allow the steak to cool on a meat platter then cut across the grain into thin strips.
Cook the rice noodles according the directions listed on the package.
Drain the noodles and rinse under cold water and drain again.
Cut the cucumbers into 3 sections and use a vegetable peeler to cut ribbons from the section.
Pour the chili sauce into a mixing bowl.
Add the water and whisk until well blended.
Place the steak strips into 4 serving bowls.
Add noodles, cucumber ribbons and carrots to each bowl.
Pour the sauce evenly over each salad then top with the fresh cilantro.

Makes 4 servings

Preparation time: approximately 13 minutes
Cooking time: approximately 18 minutes
Total time: approximately 25 minutes

Moms love a salad and this one tops the list. If you can’t find Asian sweet chili sauce in your local supermarket Mom’s favorite Italian style dressing will work in it’s place.

Broiled Rainbow Appetizers

What You Need:

1/2 of a large green pepper
1/2 of a large sweet red pepper
1/2 of a large yellow pepper
1/2 of a large orange pepper
1 C of Monterey Jack cheese, shredded
2 T ripe olive, chopped
1/2 t red pepper flakes

How to Make It:

Set the oven setting to broil and let the broiler heat.
Cut each type of pepper into 9 strips.
Lay the peppers skin side down on an ungreased cookie sheet.
Sprinkle the top of the pepper strips with the cheese.
Scatter the chopped olives over the top of each pepper slice.
Sprinkle the red pepper flakes over all the strips.
Broil 6 inches from the heat for 5 minutes or until tender and the cheese is melted.

Makes 36 appetizers

Preparation time: approximately 18 minutes
Broiling time: approximately 5 minutes
Total time: approximately 23 minutes

It may be hard to find all four types of peppers. Any color will work as long as you have enough to equal 36 strips. The olives can also be replaced with chopped pimento or chopped mushrooms if you prefer.

Thoughtful Mother’s Day Ideas

Mother’s Day can actually be the perfect day to show our Mother’s just how much we appreciate them. By careful planning ahead of time these thoughtful ideas can be a way to show her just how much you care.

Include your Mother in your vacation plans. Of course, not everyone will be able to afford to pay for an entire vacation. It would be great if you already have a vacation planned and you can invite your Mother along. A lot of memories can be captured by taking your Mom on a “girlfriend’s getaway”. If the vacation involves your entire family, then invite grandma along to share the fun.

Have a family BBQ. This can be as simple or elaborate as you would like. You can make Mom’s favorite main course, side dishes and desserts. This will allow you to enjoy your time together. Want something bigger? Make it into a family reunion type of invite. Invite everyone, aunts, uncles, cousins, brothers and sisters. Everyone can pitch in by bringing a side dish or dessert while you can provide the meat and paper goods.

Make Mom something by hand. Your mother is sure to love anything you have created. A handmade gift is anything made by your own hands. These gifts whether it be her favorite dessert or a new sweater or quilt this is sure to put a smile on her face. If you’re not too good at this type of thing, keep in mind that “hand made” may not even have to be “made by your hand”. If your Mother is into hand crafted items or frequently visits craft fairs maybe there is something that has caught her attention. This can be purchased for her as a surprise.

What Mom wouldn’t like a hand with the chores? There are a lot of chores that your Mom might appreciate help with. One idea is gardening. Help her out by mowing the yard, weeding the garden or even help planting flowers and shrubs. Houses can mean high maintenance. Maybe you can stop by Mom’s house and take inventory of everything that needs to be done from painting to helping with remodeling.

Why not give Mom a hand at washing the windows. This is everyone’s least favorite job. You can bring the cleaning solution, buckets, rags and squeegee and get those windows spotless. Wash and vacuum out Mom’s car, too.

Give Mom the gift of pampering. Call for an appointment to her favorite hair stylist for a cut and style. Why not include a manicure, pedicure and facial as well? You can be your Moms chauffeur for the day and even treat her to lunch, too.

Turkey and Spinach Pita Wraps

What You Need:

1/2 C of mayonnaise
2 t curry powder
1 lb. ground turkey breast
2 oz feta cheese with basil and tomato, crumbled
1/2 t of salt
4 pieces of pita bread
8 slices of red onion
8 spinach leaves

How to Make It:

Set the oven to the broiler setting and allow the broiler to eat.
Blend the mayonnaise and curry powder together in a small mixing bowl.
Break the turkey up slightly in a mixing bowl.
Stir in 2 T of the mayonnaise curry mixture.
Add the cheese and salt and mix until all the ingredients are incorporated together.
Form the mixture into 4 even patties.
Arrange the patties on the rack of the broiler pan.
Broil 4 inches from the heat source for 12 minutes, turning once.
Spread the remaining mayonnaise curry mixture over the 4 pieces of pita bread.
Place one patty on each of the pieces of bread.
Layer 2 slices of onion and 2 spinach leaves over each patty.
Fold the pita over the meat to make the wrap.

Makes 4 servings

Preparation time: approximately 10 minutes
Cooking time: approximately 12 minutes
Total time: approximately 22 minutes

These pita wraps along with some potatoes and a fruit salad make a great surprise lunch for Mom on her special day.
