Fresh Mint Melon Dish

What You Need:

1 C of water
3/4 C of sugar
3 tbsp lime juice
1 1/2 tsp fresh mint chopped
1/8 tsp salt
1/2 small watermelon, cubed
1 small cantaloupe, cubed
1 small honeydew melon, cubed
1 large peach, sliced
1 C of fresh blueberries

How to Make It:

Place the water into a saucepan and place the pan over medium high heat.
Add the sugar, lime juice, mint and salt and stir to blend in.
Bring the mixture to a boil and boil for 2 minutes.
Remove the pan from the heat, cover and let stand until completely cooled.
Mix the melon cubes together in a large non metal bowl.
Gently fold in the peaches and blueberries.
Add the cooled syrup and gently stir until the fruit is well coated.
Cover the fruit and refrigerate for 2 hours, stirring occasionally.
Drain well before serving.

Makes 6 servings

Fresh melon is a great way to cool off on a hot summer day. Add grapes, strawberries or any of your favorite fruits to this dish. Better yet make it into a delicious dessert by adding a little whipped topping to each serving.

Budget Candy Bar Bars

What You Need:

1 C brown sugar, packed
2/3 C of butter
1/4 C light corn syrup
1 C of peanut butter, divided
1 tsp vanilla
3 1/2 C quick cooking oats
1 (12 oz.) pkg. semisweet chocolate baking chips
1/2 C of chopped nuts

How to Make It:

Preheat the oven to 375 and lightly spray a 13X9 baking pan with cooking spray.
Stir together in a saucepan the brown sugar, butter and corn syrup.
Place the pan over medium low heat and stirring constantly cook 2 minutes.
Remove the pan from the heat.
Stir in the 1/4 C of peanut butter and the vanilla.
Pour the mixture over the oats in a large bowl and stir until combined.
Press the mixture into the bottom only of the prepared pan.
Bake in the preheated oven for 10 minutes or until just beginning to brown.
Place the chocolate chips into a saucepan over low heat.
Add the remaining peanut butter and stirring constantly cook for 2 minutes.
Spread the mixture over the baked crust and sprinkle the top evenly with the nuts.
Cool on a wire rack until the chocolate is firm.

Makes 15 bars

These little bars are a sweet treat that can take the place of those expensive candy bars. As a dessert these will put a smile on everyone’s face while you count the dollars you saved. Use whatever baking chips you have on hand such as white or mint chocolate chips or even butterscotch. Do the same with the nuts. Whatever you have on hand will work just fine.

Lemon Topped Berries

What You Need:

4 egg yolks
1 Tbsp lemon extract
1/4 C caster sugar
4 C of mixed fresh berries

How to Make It:

Whisk together the egg yolks, lemon extract and sugar in a small mixing bowl.
Place the bowl into a pan and fill with hot water just to top of the bowl.
Whisk the lemon sauce until pale and thickened.
Divide the berries between four oven proof custard cups.
Spoon the sauce over the berries.
Broil the berries for 1 minute in a preheated broiler or until the tops just begin to brown.

Makes 4 servings

This is a great budget side dish to make with the last of those summer berries. Use whatever types of berries you have just a handful of. Those ones you need to use up before they go bad. The whole family will enjoy it. Top each bowl of berries with a dollop of whipped cream and a mint leaf and serve as a great summertime dessert.

Salt and pepper are there I bet along with basil, oregano, sage, rosemary and thyme. All of these are great spices but slowing loosing their spot at the front of the rack.

Salt and pepper have reigned long enough and are slowly being picked off by other, more tasteful spices. Basil and oregano moved in for a stay at the top while rosemary and sage followed suite. The only problem with these spices, they become commonplace and are growing familiar to the tongue. Few people know that the tongue has over 10,000 taste buds, so it is safe to say that the tongue can grow tired of the same spices day after day. Here are 5 new spices that every kitchen should keep on hand.

Mint is a very romantic spice. It is the Romeo of spices and is sensuous on savory dishes, such as lamb and vegetables, while also a welcome deviation on deserts and fruits. The versatility of mint goes beyond food and adds a touch of class to almost any drink, including teas and other adult beverages. Studies show that mint also helps to produce stomach acid, thus aiding in digestion, which is a great thing if you like to eat. Another known fact about mint is that it repels rodents.

Bay leaves are delightful leaves commonly found in kitchens worldwide, they are hardly ever used except for beans, gumbo and the occasional turkey on Thanksgiving Day. This spice is rich in vitamin A and C and was once used to crown Roman Gladiators – reason enough. Next time, try bay leaves in your soup, casserole or roast, the longer the cook time, the more flavor will be pulled from the leaf. Just make sure to remove the leaf before eating, otherwise you will get a shock of strong, woodsy flavor when you bite down.

Mustard seeds are just like the common condiments yet these little balls are bursting with a spicy and noticeable flavor. Coming in a variety of colors and flavors, it will do good to try them all. Grinding up the seeds adds a beautiful color and taste while cooking rice. Using whole seeds while oil is warming, allows the seeds to pop open, releasing their sharp flavor to permeate the oil. Ground mustard seeds also go well on meats such as chicken and lamb; add a little mustard seed and brown sugar to your breading mixture and you have an extremely tasty and crunchy crust when baked.

Herbs De Provence is, essentially, the Swiss Army Knife of the spice rack. This one combo-punch packs all of the common spices, such as basil, marjoram, thyme, sage, savory and rosemary. This mixture gives a full and robust flavor to any meat, including Venison, Bison and other strong meats. It is also quite tasty on anything grilled. A little HDP on your skewers ties everything together and makes the meal memorable.

Pumpkin spice comes in fifth place, just besting its partner in crime, cinnamon. Pumpkin spice is mostly used during the holiday season, which makes it a dual spice, used for both baking and cooking. Pumpkin spice is phenomenal in pancakes and waffles to add that “wow, this is amazing” factor that hits you in the back of the throat. It can also be used in slow cooker recipes such as pot roast or chili.

Cucumber Chicken Salad with Fresh Mint

2 C cooked chicken, shredded
2 C seedless red grapes, halved
1 C cucumber, chopped
1/3 C of orange juice
3 T of salad oil
1 T fresh mint, snipped
4 C lettuce, shredded

How to Make It:

Toss the chicken, grapes and cucumbers together in a large mixing bowl.
Pour the orange juice into a jar with a screw on lid.
Add the oil and mint and screw the lid on the jar.
Shake until all the ingredients are blended together well.
Pour over the chicken mixture and stir until blended in well.
Place the lettuce on 4 serving plates.
Spoon the chicken salad onto the lettuce before serving.

Makes 4 servings

Add chopped tomatoes if you like to give your salad some color. Switch up your salad each time you make it by substituting chopped cantaloupe or honeydew melon for the grapes.

Pasta Salad with Minted Melon

1 1/2 C bow tie pasta
2 C cantaloupe, cut in chunks
1 C Swiss cheese, cubed
2 T fresh mint, finely snipped
2 C of watercress
1/3 C poppy seed dressing

How to Make It:

Prepare the pasta as the package directs, drain well, rinse with cold water and drain again.
Put the pasta into a large salad bowl and add the cantaloupe.
Toss in the cheese, mint and watercress until blended in well.
Pour the dressing over the salad and stir until well coated.

Makes 4 servings

Looking for a quick salad on a hot summer night? This one fits the bill. Honeydew melon may be substituted for the cantaloupe if you wish. You may also substitute crumbled blue cheese for the Swiss.

Caramel Candy Bar Chocolate Cupcakes

1 (19-21 oz.) box of fudge brownie mix
24 miniature chocolate covered caramel candy bars with nuts

How to Make It:

Place the oven temperature at 350 degrees and allow the oven to preheat.
Line 12 muffin cups with paper liners.
Prepare the brownie mix as directed on the package but do not bake.
Place one tablespoon of batter into the bottom of each prepared muffin cup.
Place a candy bar into the batter in each cup.
Fill the cups with remaining batter.
Coarsely chop the remaining candy bars and sprinkle over the top of each cupcake.
Bake 22 minutes.
The cupcakes may dip slightly in the middle due to the candy bars.
Cool the cupcakes on a wire rack.

Makes 12 cupcakes

To make mint brownie cupcakes use chocolate covered mint candy bars. Place two candy bars into the batter. Do not crush any candy bars and place them on top. Instead use vanilla frosting with a little mint flavoring. Place 1 drop of peppermint extract into the frosting and stir to blend in. You can also finely crush peppermint candies and stir into the frosting. Ice the cupcakes with the frosting once they have cooled If you only have a 6 cup muffin tin and have to bake these cupcakes in 2 batches refrigerate the batter until ready to prepare the second batch.

Cabbage with Minted Pork

2 C of jasmine rice
2 C of vegetable broth
1 T of grated lime zest
1 T of grated lemon zest
1/2 C lime juice
2 T of lemon juice
2 T of soy sauce
2 T of rice vinegar
3 t of light brown sugar
2 t of jalapeno pepper, minced
4 scallions, chopped
1 bell pepper, cored, seeded and diced
1 C of fresh mint, chopped
1 1/2 lb. ground pork
1/2 head of cabbage, chopped
1 C of snow peas

How to Make It:

Spray the bottom and sides of a cast iron Dutch oven well with cooking spray.
Preset the oven temperature to 450 degrees.
Place the rice into the pan.
Pour the broth over the rice and smooth the rice into an even layer.
Place both types of zest into a mixing bowl.
Add both the lime and lemon juice, the soy sauce, vinegar and the brown sugar to the bowl.
Stir until all the ingredients are mixed together well.
Stir in the jalapeno peppers, scallions, bell peppers and the mint.
Break up the ground pork into the bowl and stir until completely blended in.
Drop the mixture by spoonfuls into the pot.
Stuff the cabbage into the pan and spread the snow peas over the cabbage.
Cover and bake 45 minutes or until the cabbage is tender.

Makes 4 servings

This dish is a little spicy with the infusion of the jalapeno peppers. If you like a little less spice, use a milder pepper such as Serrano or Anaheim instead.

Mint and Veggie Salad

1 (16 oz.) pkg. frozen black eyed peas, cook as pkg. directs and drain well
1 (10 oz.) pkg. regular sweet peas, thawed
2 red onions, sliced
2 celery ribs, chopped
1 sweet yellow pepper, chopped
2 carrots, chopped
1/2 C of olive oil
1/3 C white wine vinegar
2 garlic cloves, minced
1 t salt
1/4 t pepper
1 C cherry tomatoes, halved
1/4 lb. bacon, cooked crisp and crumbled
1/3 C of fresh mint, chopped

How to Make It:

Mix together the black eyed peas and sweet peas.
Add the onion, celery, yellow pepper and carrots mixing well.
In a small bowl whisk together the oil and vinegar until blended well.
Blend in the garlic, salt and pepper.
Pour the dressing evenly over the vegetables and toss to coat.
Tightly cover the bowl and refrigerate for at least 4 hours.
Remove the cover and toss again.
Spread the tomatoes over the top of the salad.
Before serving sprinkle the salad with the bacon and mint.

This brightly colored bit of the south will bring a touch of warmth to your Christmas buffet. Mix and match any vegetables in this salad until you get the right combination to suit your family tastes.

Minted Bean and Chick Pea Soup

1 lb. very lean ground beef
1 onion, chopped fine
6 C of beef broth
1 C canned small white beans, drained
1 C of lentils
1 can chick peas, drained
1/4 C of tomato puree
1 t cloves
1 t hot red pepper flakes
1 t dried mint, crumbled
1 t salt
1 t pepper

How to Make It:

Generously spray the cooker with cooking spray.
Break the ground beef into the cooker and stir in the onion.
Cook the mixture until the beef is cooked through and no longer pink.
Pour the broth over the beef then add the beans, lentils and chick peas.
Stir in the tomato puree, cloves, red pepper, mint, salt and pepper.
Place the cooker on medium heat and bring to high pressure.
Cook 20 minutes then allow the pressure to drop naturally.

You don’t need to soak the lentils as they will soften and cook during the pressure cooking time. To keep the fat down use the leanest ground beef you can find.
