Hot Sauerkraut Clubs

What You Need:

4 (1 in.) thick slices of French bread
1 tbsp butter
4 slices of bologna
4 slices of salami
1 (16 oz.) can of sauerkraut
1 C of Mozzarella cheese, shredded

How to Make It:

Spread the butter over one side of each slice of bread and place them on a microwave safe plate.
Slice the bologna and salami in half.
Lay a half slice of bologna then a half slice of salami onto the bread.
Add another slice of bologna and salami.
Place a large spoonful of sauerkraut onto the meat.
Sprinkle the cheese evenly over the sauerkraut.
Microwave the clubs on high for 3 minutes.
Rotate the plate 1/2 turn and microwave on high an additional 4 minutes or until hot,

Makes 4 servings

Using French bread, sauerkraut and salami makes this club a favorite. Cooking it in the microwave makes it a lunchtime snap. The sauerkraut is optional and you can substitute any type of shredded cheese you like.

Cheesy Almond Appetizers

What You Need:

2 tbsp butter, softened
1 C of sharp cheddar cheese, shredded
1/2 C of flour
1 dash cayenne pepper
1/2 tsp celery seed
1 (3-oz.) pkg. hickory smoked almonds

How to Make It:

Place the butter and cheese into a bowl and stir until smooth.
Place the flour, cayenne pepper and celery seed into the mixture.
Knead the mixture with your hands until it forms a firm ball.
Form a spoonful of the cheese around each almond to complete cover the almond.
Place the appetizers on a microwave save plate in a circle of 9 appetizers.
Heat the appetizers on high for 2 minutes turning the plate 1/4 turn after 1 minute.
When done these appetizers should be puffy and dry.
Repeat the cooking process until all the appetizers have been used.
Cool slightly before serving.

Makes 3 dozen

Use any type of almonds you prefer such as regular, barbecued or even cheese flavored. It’s a sure bet these appetizers won’t be around long as they are quite tasty. Who could ask for a simpler fare to feed those hungry guests?

Mushroom Burgers from the Microwave

What You Need:

1/4 C of cornstarch
2 (10 1/2 oz.) cans of condensed beef consommé
1 (6 oz.) jar of sliced mushrooms
4 tsp Worcestershire sauce
1 tsp dried basil
1 egg, lightly beaten
1/2 C of bread crumbs
1 onion, chopped fine
1/2 tsp season salt
1/4 tsp pepper
1 1/2 lbs. ground beef

How to Make It:

Place the cornstarch and consommé together in a bowl and whisk until smooth.
Add the mushrooms, Worcestershire sauce and basil and stir until blended in well.
Place the egg, bread crumbs, onion, salt and pepper into a bowl and stir to combine.
Add the meat to the bread crumb mixture and mix well.
Form the meat mixture into 6 patties.
Arrange the patties in a 1 1/2 qt microwave safe dish and cover.
Place the dish in the microwave and cook on high for 6 minutes.
Drain off any liquid and rearrange the patties moving the ones inside to the outside and the ones outside to the inside.
Pour the mushroom gravy over the patties.
Recover the dish and return to the microwave.
Cook the burgers on high 10 minutes or until the meat is completely cooked through.

Makes 6 servings

Could a delicious meal be any simpler? These mushroom burgers taste great with mashed potatoes and a side of fresh corn or a side of noodles or rice topped with the delicious gravy.

Grilled Fanned Potatoes

What You Need:

4 baking potatoes
2 onions, halved and sliced thin
4 tbsp of butter, cubed
1/4 C of celery, chopped fine
1 tsp salt
1 tsp dried oregano
1/4 tsp garlic powder
1/4 tsp pepper

How to Make It:

Preheat the grill to medium high heat.
Slice the potatoes three quarters of the way through with slices that are 1/2 inch apart.
Fan out the potatoes carefully.
Lay each potato onto a piece of foil that will fold completely around the potato.
Place an onion slice between each slice in the potato.
Add a cube of butter into each potato slice.
Sprinkle the potatoes with the celery, salt, oregano, garlic powder and pepper.
Fold the foil tightly around each of the potatoes.
Lay the wrapped potatoes on the grill and cover the grill.
Grill for 40 minutes or until the potatoes are as tender as you like.

These aren’t your everyday baked potatoes but they taste just as good. It’s the seasonings that makes them so delicious. To speed up the grilling time place the potatoes in the microwave for about 6 minutes to soften them slightly before slicing and adding all the extras.

Microwave Taco Snack Mix

3 C baked cheese crackers
2 C butter flavored pretzel sticks
1 C of peanuts
1 T of vegetable oil
2 T of dry taco seasoning mix

How to Make It:

In a large microwave safe mixing bowl put the crackers.
Gently toss in the pretzels and peanuts.
The oil is drizzled over the top and stirred with a spoon to coat evenly.
The taco seasoning mix is sprinkled over the top and stirred again.
On high temperature microwave the mixture 2 minutes.
Take from microwave and stir with a wooden spoon.
Put back in microwave and heat 2 minutes longer on high.
Let the mixture cool 5 minutes before serving.

Makes 12 servings

The kids will enjoy this snack all evening long. Use the left over taco seasoning to sprinkle over popcorn or put next to the Taco Mexican mix for another delicious snack.

Marvelous Chocolate Waffles

1 1/2 C of baking mix
1 C of sugar
1/3 C of baking cocoa
3/4 C of water
2 T of canola oil
2 eggs

How to Cook It:

Spray a waffle iron with a non stick cooking spray and allow the iron to heat.
Toss together the baking mix, sugar and cocoa in a large mixing bowl.
Add the water, canola oil and eggs and blend until all the ingredients are mixed together well.
Pour the batter by spoonfuls onto the heat waffle iron.
Bake 5 minutes or until the steaming stops.

Top these waffles with sliced bananas, strawberries or raspberries for a special treat. If you made more waffles than you can eat in one setting go ahead and freeze them. They are easy to reheat in the toaster or microwave.

Nutmeg Rice Fritters

2 C buttermilk pancake mix
1/2 t nutmeg
1/3 C + 1/2 C sugar, divided
1/4 t+ 1 t cinnamon, divided
1 C cooked white rice
1/3 C of water
1 egg, lightly beaten
1 t vanilla extract

How to Cook It:

The oil in a deep fryer is heated to 375 degrees.
In a mixing bowl put the pancake batter.
Stir in the nutmeg, sugar, and cinnamon and blend together well.
Fold in the rice until blended in well.
Add the water, egg and vanilla and mix just until moistened and thick.
Drop the batter by spoonfuls into the hot oil and fry 3 minutes or until golden brown, turning for even browning.
Place the fritters on paper towel to drain before serving.

Sprinkle warm fritters with powdered sugar or cinnamon sugar. Cinnamon sugar topping is made with 3 parts sugar and 1 part cinnamon and blended together. These fritters can be frozen and then reheated in the microwave. They will stay fresh for 1 month in the freezer.

Quick and Easy Breakfast in a Flash

Most people work outside the home and sleep to the last minute so they don’t figure that they have enough time to eat a good breakfast. Here are a few ideas to change that way of thinking.

There are some wonderful ideas for freeze ahead breakfasts that take 30 seconds or less to make them a wonderful meal on the go. Try preparing different things for breakfast that you can take from the freezer and stick in the microwave while you are brushing your teeth or doing your hair? Then you can kill two birds with one stone.

Egg muffins are one freezer to microwave idea. Whisk several eggs together and add any of these ingredients, peppers, crumbled sausage, diced ham shredded cheese, onions or even bacon that has been crumbled up. Simply add your favorites and bake in a 350F oven for about 20 minutes in a muffin pan with cupcake liners. Allow them to cool on a wire rack to room temperature. Then place a couple of your egg muffins in a bag made for freezing. When you are ready, remove a bag and place your egg muffins in the microwave for about 30 seconds. When the microwave dings, breakfast is ready!

Next time pancakes are on the menu, make extra and put them in the freezer. Stack them with wax paper between each pancake in a freezer bag. Next time for breakfast on the go, take a couple of the pancakes out of the freezer and microwave them for about 1 minute. Add some powdered sugar, honey or even and roll the pancake up. Breakfast on the go is ready.

Meat biscuits are another fast way to make a breakfast on the go. When you are frying bacon, ham or sausage patties, cook a little extra for a quick breakfast on the run. You can use either croissants or prepare some biscuits, cut them in half, and add the meat patty. Store a couple in a freezer bag for a breakfast that is quick and easy. Remove a couple from the bag, place in the microwave wrapped with a microwave safe towel or napkin and reheat in the microwave for about 1 minute and they are done.

Southwest breakfast roll-ups are another great way to start the day. Scramble some eggs and add your favorite ingredients plus either some hot sauce or salsa. Roll them up and place in a freezer bag. To prepare, just pull out of the freezer and microwave for about 1 minute. Presto, breakfast in a jiffy.

Skipping breakfast doesn’t have to be the norm with a little preparation. Give it a try and see just how quick, easy and tasty your new breakfast routine can be.

Applesauce Walnut Breakfast Cake

1/3 C of brown sugar, packed
1/2 C walnuts, chopped and divided
2 C baking mix
1/2 t ground cinnamon
1/3 C of milk
1 C chunky applesauce

How to Cook It:

In a bowl toss together the brown sugar and half of the walnuts then set aside.
In a separate bowl put the baking mix, the remaining walnuts, cinnamon, milk and applesauce.
Mix for 30 seconds or until the dry mix is moistened through.
With a non stick cooking spray lightly grease a round microwave safe dish.
Spread out the batter in the prepared pan and sprinkle the brown sugar mixture evenly over the top.
Place in the microwave on high 6 minutes or until the top springs back when touched.
Cool slightly and cut into wedges before serving.

This is a quick satisfying microwave coffee cake that makes a great quick breakfast. It will keep in an airtight container for up to 2 days.

Alternatives to Using that Hot Stove This Summer

grilledcornWhen it’s hot no one relishes the idea of using the oven or the stove. Yet how do we make a delicious home cooked meal without it. It’s easy to do and these meals top the tasty list.

One of the better ways to cook a good meal in the hot summer months is on the grill. Steak, chicken, burgers, hot dogs are just a few ideas for those yummy summer grilled meats. Grilled meats are also healthier. The grease is able to run off the meat when it’s grilled rather than pooling around the meat in the bottom of a skillet. Meats are easy to grill but coming up with side dishes that can be grilled might be a little harder.

One great grilled side dish is grilled potatoes and onions. Use 1 potato per person and cut the potatoes into bite size pieces. You can peel the potatoes first if you prefer. Sprinkle the potatoes with garlic powder and a little pepper. Tear off 6 inch rectangles of foil to grill the potatoes in. Place a little butter or olive oil onto each piece of foil. Add the potatoes to the foil. Chop one onion and place in with the potatoes.

Place 1 C of the potato onion mixture into each of piece of foil. Fold the foil over the make an envelope over the potatoes and onions. Seal the aluminum foil. Place the potatoes on the grill about 15 minutes before adding the meat. This will ensure the potatoes and meat are ready at the same time.

This potato and onion recipe will work with just about any type of summer vegetable. Try zucchini, summer squash, bell peppers or any of your summertime favorites.

Who can get through the summer without that beloved corn on the cob? Corn on the cob can be grilled and there are numerous recipes available on different ways to prepare it. One great recipe is to pull the husks back on the corn and remove the silks. Brush melted butter over the corn and replace the husks. Grill the corn about 7 minutes, turning often. Remove the husks and sprinkle with bacon bits and chives.

Vegetable Kabobs are another great idea for that grilled side dish. Carrots, broccoli, cauliflower, tomatoes, cucumbers, zucchini and squash are just a few vegetables that work well in a kabob. Alternate your vegetables on a wooden skewer. Brush the vegetables well with olive oil and sprinkle with salt and pepper to taste. Grill the vegetables until tender.

Don’t forget about the microwave. Many a meal has been prepared in a microwave and they taste such as good as one cooked on the stove. One meal that will stand out especially with your children is microwave nachos. Use leftover taco or barbecue meat. Spread tortilla chips onto a large microwave safe plate. Top the chips with the meat. Sprinkle with shredded cheese. Microwave 30 to 45 seconds or until the cheese has melted. Add olives, tomatoes, peppers, sour cream and salsa for a fun meal. They are just as good without the meat if you prefer.

Remember salads make a great main course. Add strips of grilled chicken, pork or beef. Top with your favorite topping including that dressing and enjoy. These ideas will help keep you out of the hot kitchen but still enjoying a healthy and tasty meal.
