With today’s health issues and concerns over getting enough of the daily requirements of certain foods, organic foods have come to the forefront. Pesticides are a large concern and most of us are finding that natural foods are a better way to eat. Another growing concern is genetically modified foods. Organic foods have taken a lead in the types of foods we are willing to feed our families. Yet all of these have their issues. Some make more sense than others.

Which foods to buy organic can make one wonder. There are a few simple tips to help us determine if organic is the way to go. Let’s look at a few guidelines that can help us make the right choice when we purchase food.

Organic Vegetables

Vegetables work in much the same way as fruits. Tomatoes, while technically a fruit, are usually found in the vegetable isles and are important to buy organic because of their thin outer covering. The same applies for bell peppers, mushrooms, corn, green beans, cucumbers, and leafy greens. Vegetables like asparagus, avocado, broccoli and onions are fine to buy au-natural.

According to the theory above, asparagus and broccoli should not be on this list, as they do not have thick skin. There is a reason for this we will get to in just a second. Grains are also slightly different. While most grains do not have thick outer shells, they are not as important to buy organic because there are fewer pesticides used on that type of crop due to their delicate growing conditions, which is the same reason for the asparagus and broccoli. Not many pests bother these crops, therefore no pesticide needed.

Organic Fruit

The first thing you see when you walk into a grocery store is usually a plethora of fruits and vegetables all grouped into one giant space. This is the fist situation to avoid. Look for organic produce that is separated from the traditional. The reason this is so important is because the sprayers that keep the fruits and veggies cool and moist can actually wash pesticides off of the traditional produce onto the outside of the organic produce. If there is not a separation, ask your store manager if they would mind separating it in the future.

Oranges, bananas, cantaloupe and watermelon all have one thing in common – thick outer layers. Ok, so maybe they have more than that in common, but the thick rind is what I was talking about. With thin outer layers, the actual edible fruit is exposed to pesticides, so it is more important to buy fruits like grapes, apples, berries and kiwi organic. Take a look at the outer layers and make a decision, just remember, the thicker the skin, the less important it is to buy organic.

Organic Meat and Dairy

In the meat and dairy section, beware the term ‘Natural’ as it means absolutely nothing. ‘Natural’ is not an officially monitored term by the FDA and anyone is allowed to put it on their packaging without any repercussions. The only label to look for is ‘Certified Organic’ which has been approved by the FDA to mean the packaged food is, well, certified as organic.

Just remember that produce with thick outer shells or rinds are less important to buy as organic because the outer layer will be removed before eating. As with meat, just remember that there is no guideline to go with the ‘Natural’ designation – so look for the ‘Certified Organic’ label to be sure you are getting the best protein.

For some, leftovers can be a doom sentence. While some of us look at leftovers as the best thing in the world. All will agree that the leftovers with all that green furry topping are pretty ugly. Leftovers eaten three nights in a row can be pretty bad. Leftovers made into great tasting meals can be a good thing and believe it or not can save money. Let’s take a look at ways to use those leftovers to our benefit.

Re-purposing Those Leftovers

Holidays – Leftovers during holidays usually surmount into outrageous quantities. If you are getting tired of the same old turkey or ham sandwiches for the following week, try changing it up for breakfast. Combine the mashed potatoes, stuffing and diced meat in a pan creating a little creator for an egg. Pop it all in the oven for ten minutes on 350 degrees and you have a hearty egg in a nest for breakfast. This is a complete meal with your meat, grains and dairy. It’s also not a bad way to start a day off from the turkey hang-over from the night before.

Meat – A staple of many households is ground meat. It is a perfect start to practice re-purposing leftovers on. A couple pounds of ground beef can be used for hamburgers, then the next day for tacos and finally as an addition to spaghetti sauce or a warm crock pot of chili. Steaks are also great leftovers to utilize for a couple of days. Eaten first as a main dish with mashed potatoes and green beans, cut into strips to top a hearty salad and finally cut into chunks for stews or soups.

Remember to have fun with you leftovers. Try a different spice or mix and match them to create a new treat for everyone to try. Just remember that the taste is what is most important. Let’s take the hamburger meat as an example. What ingredients did you put into it for the actual hamburger? Salt, pepper and maybe some Italian seasoning were used. Keep these ingredients in mind when re-purposing the hamburger because it may not need more salt in the dish you are trying to create. If there was plenty of salt for the hamburger, cut out the salt in the new recipe and see if that works well. Bread crumbs, ketchup and possibly even some A-1. If you went heavy on the A-1 sauce, this might not work well re-purposed as a breakfast casserole. A meatloaf on the other hand might be the way to go. Just remember what you put in will determine what kind of dish you want to reuse the meat for.

Taste

Let’s use a holiday breakfast make over as an example. One can only assume that since mashed potatoes, stuffing and turkey all go together in a meal, that they can all be used together in a single dish. Pretending with your mouth can get you a long way when cooking. If you think it will taste good together, go for it. If your instincts tell you otherwise then don’t try it. Think about how the food will taste together to get a good idea of the expected outcome.

Techniques for Freezing Foods

Understanding how to properly prepare foods to place in freezer is the trick. Often times we freeze our foods only to throw it away later due to the wrong freezing techniques.

The second most often mishap with freezing foods is the amount of time they are in the freezer. Different foods have different freezing times. Cured meats such as bacon or ham will only last a couple of months in the freezer. Yet foods such as vegetables can be frozen for the long haul, from three to six months.

The third biggest problem with is freezing is the air left in the container or package. Air can cause food to become dull and flavor to be lost. Air reduces the oxygen that can get into our foods. It also allows water to remain in the package causing freezer burn.

These are some techniques that can help in getting the most from freezer foods. These common foods are often foods we need to freezer for later use.

• Meats

Meat is probably the most expensive thing that people freeze. It is extremely important to pay close attention when freezing meat, so that it does not go bad in the process. It is best to cut the meat into individual portions before freezing because the meat could spoil if it has to be thawed and reheated numerous times. Once the meat is cut, it should be chilled, covered, to about 40 degrees, and over-wrapped with a thick plastic wrap before being put into an airtight container.

• .Vegetables

Vegetables freeze extremely well, under one condition – they are first blanched for anywhere between two and seven minutes depending on the vegetable. After the blanching, the enzyme action ceases and the vegetables will retain their color and most of their nutrients. Blanching also protects the texture and gives the vegetables a good cleaning on the outside, before they are put into the freezer. It is important to let all the vegetables cool before attempting to package them, otherwise the inside of the packaging material will condensate and you will end up with freezer burn.

• Fruits

Most fruits start to oxidize, or turn brown, when they are cut open and left to the air. In order to keep this from happening when preparing to freeze, usually fruits are stored in simple syrup with a little ascorbic acid. The ascorbic acid helps to stop the oxygen from adhering to the flesh of the fruit and helps to keep the colors pure. If you cannot find ascorbic acid, a little lemon juice will usually do the same thing.

If you’re still a little leery about freezing foods check out the regulations imposed by the US Department of Agriculture. There may be other national agency that can help where you are located. It’s important to freezer foods properly to ensure a safe healthy meal.

Unless you have a large family, most people don’t use every pot, pan and spatula in their kitchen unless it is Christmas.

Pressure Cooker Fundamentals

What’s so Special about a Pressure Cooker

Pressure cooking is a technique of cooking that seals steam in an airtight pot. The vapor from the liquid used in the recipe rises and is captured inside the sealed pressure cooker. This method raises the pressure in the cooker along with the temperature of the liquid to its highest level. The higher temperature and pressure drastically speed up the cooking time by infusing hot steam into the food. Pressure cooking can speed up cooking times over 1/3 or more and is often 10 times faster than conventional cooking. Compare pressure cooking to crock pot cooking and you will find the time is much shorter. When compared to microwave cooking the foods taste better.

The High Pressure = A Short Cooking Time

Pressure cookers come in a variety of pressures, so the right cooking times are extremely important. 15 psi is the highest pressure available. If your cooker’s pressure is lower than that, adjust the cooking time by 12 to 15 percent, depending on the recipe. 15 psi is what most recipes will indicate.

When a pressure selector dial on a modern pressure cooker is set to 15 psi or high, it is under a pressure of 15 pounds per square inch which is quite safe. This amount of psi is less than half of the pressure found in a normal car tire. It’s not very much yet it is just the right amount to reduce the cooking time for foods. The actual temperature inside the pressure cooker is increased above what is possible in a normal stove top cooking pot.

The steam pressure inside a pressure cooker cooks food much faster than just boiling or baking. While microwaves do cook fast, the cooked foods can turn out dry, rubbery or soggy. Even though the pressure cooking time is significantly reduced, the quality of the food is conserved. Meats turn out juicy and tender, the flavor of vegetables are sealed in and desserts come out tasting better than ever. Pressure cooked foods also retain their vitamins and nutrients where boiled or baked foods lose these precious nutrients during cooking.
