Crispy Chocolate Snack Balls

8 T of unsalted butter
1/3 C of unsweetened cocoa powder
2 (10 oz.) bags of mini marshmallows
10 C of rice crispy cereal
3/4 C of semisweet chocolate chips

How to Make It:

Heat the butter in a saucepan over medium high heat until melted.
Stir in the cocoa powder.
Place the marshmallows into the pan.
Heat for 5 minutes or until melted, stirring often.
Remove the pan from the heat.
Fold in the cereal until completely coated.
Place half of the chocolate chips into the mixture.
Stir until melted.
Add the remaining chocolate chips and stir until blended in well.
Cover a baking sheet with wax paper then lightly oil your hands.
Form the mixture into golf ball size balls.
Place the formed balls on the prepared sheet.
Cool to room temperature before eating and storing.

Makes 80 balls

The more chocolate the better don’t you agree. Use chocolate flavored cereal instead of just plain rice cereal. Keep these little treasurers fresh for up to 4 days by placing them in an airtight container. Leave them stored at room temperature. Chilling will cause them to harden and they will not be eatable.

Let a Warm Beverage Brighten Your Winter

cupofteaWhat can be more warming than curling up with a cup of mulled cider or hot chocolate on a cold winter day? A warm beverage can take the blustery blues out of winter and give us a warm cozy feeling from our heads to our toes. The possibilities for something warm to curl up with are endless and here are just a few ideas.

Kids and adults savor the taste of hot chocolate. Warm milk, chocolate and marshmallows have a way of soothing us. Today packaged hot chocolate mix is in abundance. There are numerous types and various flavors. Yet there’s nothing quite like homemade hot chocolate to warm and sooth a cold and tired body.

Apple cider is a great way to warm up on a blustery day. Mulled cider gets its comforting effect from spices infused in the flavor during heating. Cinnamon, nutmeg and cloves are the spices most often used. Mace, ginger, allspice, orange slices and lemon zest can also bring out the flavor of a mulled cider. Ground spices may be used, but the taste will differ slightly. It’s best to use whole spices to achieve a full flavor.

Steep cider over low heat to achieve the best results when making mulled cider. Simmering the cider for a couple of hours will bring out the best flavor. Do not boil the cider or the taste may become bitter. To keep your cider warm, place it in the crock pot after simmering.

We are fast finding in today’s world that tea is one drink that offers a healthy alternative to caffeinated beverages. There is an abundance of flavored teas, comforting teas and healthy teas available today. Herbal teas have also become a big hit.

Most herbal teas contain no caffeine. Mint teas have large amounts of vitamin C. This may also be a problem for those whose bodies are sensitive to this vitamin. Mint teas, for those who can enjoy them come in many flavors. Peppermint tea is quite soothing but can be hard on the bladder and digestive system if consumed on a regular basis. Spearmint tea is soothing and is easy on the digestive system.

To achieve the perfect mint tea that your body can tolerate try making your own. Add mint leaves to tea while steeping. It may take a few tries to find the right adjustment of mint, but it is well worth it when you do.

Chamomile tea is another comforting herbal tea. Be careful if you are allergic to ragweed as chamomile is related to the ragweed family. Chamomile is great for naturally relieving muscle spasms that can be brought on by the cold weather.

Flavored hot water might sound a little strange but with some imagination flavored hot waters can be quite delicious. Add flavored extracts with a tiny bit of brown sugar or honey. Stir in orange, lemon or lime zest to add flavor. Spices can be added to give hot water a delicious taste.

Enjoying a cup of warmth can be one way to fend off that winter chill. Head off to the grocery store and see what might be available or better yet experiment on your own. Cuddle up and enjoy.

Graveyard Rice Squares

4 C miniature marshmallows
1/4 C of butter, cubed
6 C crispy rice cereal
12 oval shaped chocolate cream filled cookies
1 tube white decorating gel
1 (16 oz.) can ready to spread chocolate frosting
Halloween sprinkles

How to Make It:

In a large saucepan over medium low heat put the marshmallows and butter.
Cook and stir the mixture for 5 minutes or until completely melted.
Take the pan from the heat and fold in the cereal until well coated.
Generously spray a 9X13 pan with a butter flavored non stick cooking spray.
Press the cereal mixture evenly into the pan.
Cool to room temperature and then cut into 12 squares.
From the bottom of each cookie cut about 1/2 inch off and put in a bowl.
Write the letters RIP on each cookie with white decorating gel.
In the middle of each cookie square put 2 T of the frosting forming a circle.
Into each frosting circle put 1 decorated cookie.
The reserved cookie are crushed and sprinkled over the top of each square.
Sprinkle each square with the Halloween sprinkles.

Trick or treaters won’t be able to stay out of this graveyard. The fact is they may ask for seconds.
You can make more by doubling the ingredients.

Cashew Ghost Pops

1 (12 oz.) pkg. semisweet chocolate chips
4 1/2 t canola oil
40 large marshmallows
20 Popsicle sticks
1/2 C of orange sprinkles
1/2 C of black sprinkles
1 C of cashews, ground fine

How to Make It:

Line a baking sheet with wax paper.
In a small microwave safe bowl put the chips and microwave on high 30 seconds and stir until smooth.
Continue to microwave at 15 seconds intervals if all the chips are not melted, stirring after each time.
Thread 2 marshmallows onto each Popsicle stick.
In a shallow bowl mix together the orange and black sprinkles.
Dip the threaded marshmallows into the melted chocolate allowing excess to drip back into the bowl.
Roll the dipped marshmallows through the sprinkle mixture coating them well.
Place the cashews into a shallow bowl and roll each of the ghost pops through the cashews.
Standing them up, place the coated marshmallows onto the prepared baking sheet.
Chill in the refrigerator for at least 1 hour or until firm

Kids love these ghost pops. You can use any type of ground nut or they can be omitted if you prefer. Chocolate sprinkles may be substituted for the black sprinkles if you prefer.

Makes 20 pops

Wiggle Eye Hot Cocoa

8 C of milk, divided
1 C mint chocolate chips
1 C instant hot cocoa mix
16 large marshmallows
16 Crows candies
16 lollipop sticks

How to Make It:

In a large saucepan over low heat pour 1 C of the milk.
Add the mint chocolate chips.
Stir in the hot cocoa mix until blended in well.
Cook 5 minutes or until chips are completely melted, stirring frequently.
Stir in the remaining milk and blend well.
Cook until the milk is hot about 5 minutes.
In the top of each marshmallow cut a small slit.
Place a Crow candy into each of the marshmallow slits.
In the bottom of each marshmallow insert a lollipop stick.
Divide the hot cocoa between 8 mugs and place 2 wiggle eyes into each cup before serving.

A cup of hot cocoa can really hit the spot on a cold gloomy night. Everybody will get a kick out of these wiggly eyed cups of warmth.

Air Head Pumpkin Pops

1 (10 1/2 oz.) pkg. miniature marshmallows
3 T of butter
1/8 t of salt
Red and yellow gel food coloring
6 C of crisp rice cereal
6 Popsicle sticks
3 miniature Tootsie rolls, cut in half

3 miniature green apple Air Head candies, cut into thin strips
Black decorating gel

How to Make It:

In a large saucepan over medium low heat put the marshmallows, butter and salt.
Cook 5 minutes stirring constantly until completed melted and smooth.
Take from the heat and stir in the red and yellow food coloring until you have a pumpkin orange color.
Add the cereal and stir until completely coated.
With you hand form the mixture into 6 equal size balls.
Stick a Popsicle stick 1/2 way into each ball.
On top of the ball place 1/2 of a Tootsie roll to represent the pumpkin stem.
Form vines with the Air Head candy by rolling the pieces in your palms.
Press the vines into the pumpkin ball close to the stem leaving some of the vine over the edge.
Use the black decorating gel to make a face on each of the pumpkins.
Cool the pops completely on a wire rack.

Give these fun treats out at Halloween. You can double or triple the recipes depending on how many you want to make. These make a great treat for a Halloween school party or an after school snack.
