Italian Bean and Veggie Salad

beansWhat You Need:

1 (15 oz.) can garbanzo beans, rinsed and drained well
1 (15 oz.) can butter beans, rinsed and drained well
1 cucumber, quartered lengthwise and sliced
2 tomatoes cut into wedges
1/4 C green onions, sliced thin
1/2 C oil and vinegar salad dressing
1 (8 oz.) pkg. mozzarella cheese, shredded

How to Make It:

Toss the beans together in a large salad bowl.
Gently toss in the cucumber, tomatoes and onions.
Drizzle the oil and vinegar dressing over the salad and toss to coat.
Top with the mozzarella cheese before serving.

Makes 4 servings

Having pasta for supper? Add this salad to complete the meal. Great Northern beans or lima beans may be used if you prefer. To make this main course meals just add crumbled cooked sausage or chopped pepperoni.
