There’s nothing harder on a budget than forgetting the ever-important grocery list at home. This usually results in a bout of yelling and blaming. Thereafter it is followed by an attempted list-recreation while moving through the store. Generally, this causes an abundance of items ending up in the shopping basket. Not to mention blowing the budget out of the window. When you get home you find only partial ingredients to make any resemblance of a meal.

Shopping lists are only as effective as the person who makes them. The rule for shopping lists is to make sure you look through all of your items, including the shelves where you stock the goodies, to make sure you have written every last thing down. The best thing to do for keeping a good list is to hang a piece of paper on the refrigerator to keep a running tally as you use up items. This will help ensure minimal items are missed. It is still helpful to go back through the fridge, freezer and all pantries before heading to the store.

Making a shopping list doesn’t have to be an all out war. There are a few simple tips to remember when making that list that will help you endeavor to preserve.

Organize – Try and keep your list organized by where items are placed in your kitchen. For instance, have a column for frozen goods, another for refrigerated and a final one for pantry items. This will help three fold.

When we shop we find that many items are grouped together in this same way. This is great because it will increase shopping speed and leave little room for impulse buys while wandering up and down the isles. Also all of the like items will be packaged together since they are in your cart together. This helps in keeping the cold items cold and the meats away from the bread and eggs. Since the items are packed together, putting them away at home will be a breeze. They will already be grouped according to where they go.

Game Plans – Try to map out the stores you frequent. Unless they constantly move items around, you will be able to quickly find the cereal and the mustard without having to search around, wasting time and money. Being able to grab exactly what you need aids in cost savings because, again, you won’t be left to your own devices when walking aimlessly up and down the isles.

Budget Checks – Leave room on your list to write down prices. Many stores will honor prices if marked incorrectly on the shelf or even give you that particular item for free if it rings up incorrectly. Being able to keep track of the dollars you are going to spend as you walk through the store also helps to keep the budget in place. When you see the dollars adding up, it is much more difficult to justify the impulse buy at the checkout lane.

The most important thing to remember is to make sure you have the list with you before you leave the house. Make sure that list is as complete as possible by keeping a running tab of needed items on the fridge. Sort the list by common items to make life easier and know where those items are located. Finally, keep track of your spending on the same list to help with frugal shopping.

It may take a little time and some effort but it’s well worth a day in the kitchen. It’s a sense of accomplishment and the compliments from friends and family along with saving a few bucks that makes it all worth while.

Once you have toiled to create the best sauce or jam and enjoyed the first batch over a warm plate of pasta or spread out on a steaming hot biscuit, you are left with one dilemma; how should you preserve your precious prize? One way would be to toss it in a zip-lock bag and hope that it tastes as good as when it was made. Why play Russian roulette with your raspberry marmalade and the snap-seal of some plastic bag when canning is obviously the way to go.

Canning is a great way to store your savory sauces and other tasty treats for later use. Canning works because it heats food to kill bacteria while sealing them in a glass or metal container, which prevents them from spoiling. Have canning supplies handy when you make your sauces or jams. This means that you can keep more of your food fresh for use during the off-season. Here are some of the things necessary for you to create your own delicious delicacy.

1. Boiling-water canner – Basically just a big pot, mainly used for canning jams, preserves, jellies and marmalades.
2. Pressure canner – Similar to a pressure cooker, the lid locks down to keep steam in. This canner is great for thick sauces that are full of fresh vegetables.
3. Canning jars – Commonly called Mason Jars; these are the glass jars that usually come with metal screw on lids. They create very tight seals and are perfect for canning just about anything.
4. Lids and bands – Lids, sometimes known as “flats,” should be new and never reused because they may not seal properly the second time. Bands are the screw on portions that go around the lids to help them stay locked in place.

Once you have all of those supplies, it is time to start making use of the vacuum effect that is so commonly used by large canned food distributors. When the jars are heated up in the canner, they become airtight and lock in the same flavor that was present before the canning took place. This is the best way to preserve your preserves and to store your sauces.

If there is usually not enough left to worry about going through the canning process, but you still want to save some for a use later in the week, just make sure that the container you are using can achieve an airtight lock. The best thing to do is to invest in a vacuum sealer. These gadgets will act the same way as a canner does, by extracting out all of the air, but can be used more efficiently on smaller amounts.

The most important thing, and this cannot be stressed enough, is to make sure that there is an airtight seal on whatever container you are using. This will keep the flavors of you goods locked in while keeping the flavors of all the other food in the fridge, locked out. Besides, the last thing you want is your grandmothers grape jam tasting like the fried catfish she made the day before or getting that freeze-dried taste from the frigid freezer temperatures. Salt and pepper are there I bet along with basil, oregano, sage, rosemary and thyme. All of these are great spices but slowing loosing their spot at the front of the rack.

Salt and pepper have reigned long enough and are slowly being picked off by other, more tasteful spices. Basil and oregano moved in for a stay at the top while rosemary and sage followed suite. The only problem with these spices, they become commonplace and are growing familiar to the tongue. Few people know that the tongue has over 10,000 taste buds, so it is safe to say that the tongue can grow tired of the same spices day after day. Here are 5 new spices that every kitchen should keep on hand.

Mint is a very romantic spice. It is the Romeo of spices and is sensuous on savory dishes, such as lamb and vegetables, while also a welcome deviation on deserts and fruits. The versatility of mint goes beyond food and adds a touch of class to almost any drink, including teas and other adult beverages. Studies show that mint also helps to produce stomach acid, thus aiding in digestion, which is a great thing if you like to eat. Another known fact about mint is that it repels rodents.

Bay leaves are delightful leaves commonly found in kitchens worldwide, they are hardly ever used except for beans, gumbo and the occasional turkey on Thanksgiving Day. This spice is rich in vitamin A and C and was once used to crown Roman Gladiators – reason enough. This mixture gives a full and robust flavor to any meat, including Venison, Bison and other strong meats. It is also quite tasty on anything grilled. A little HDP on your skewers ties everything together and makes the meal memorable.

Pumpkin spice comes in fifth place, just besting its partner in crime, cinnamon. Pumpkin spice is mostly used during the holiday season, which makes it a dual spice, used for both baking and cooking. Pumpkin spice is phenomenal in pancakes and waffles to add that “wow, this is amazing” factor that hits you in the back of the throat. When Grandma baked it was usually from scratch. No box mixes or canned pie filling could be found in her pantry. In today’s hustle and bustle world a prepackaged mix brings a quick reality to most kitchens. There’s nothing wrong with that, but a day of scratch baking can also bring a little relief from a stressful life.

The hardest part of baking is making sure you have all the needed essentials. Here is a good place to start when checking for items necessary to turn any kitchen into a baker’s delight.

Flour – All purpose flour is a must but depending on what you are baking you may also need self rising flour, wheat flour or millet flour. Just be careful not to substitute in a recipe. Flours consist of different properties and can make or break the easiest of recipes.

Spices – These can make or break a recipe. Spices add flavor to those baked goods. Be sure to add only spices that will give the flavor you need. Apple pie spice, pumpkin pie spice and other specialized spices include many different spices combined saving you both time and money.

Eggs & Dairy Products – Eggs are the “glue” that hold your baked goods together. They are also a large part of the rising process. Most recipes will call for large eggs and these are your best bet for consistent results. Dairy products like milk and creams are a staple in many baking recipes as well.

Bake Ware & Cooking Utensils – Cookie sheets, cake pans, muffin tins, pie pans and brownie pans are all necessary when baking. Cake pans come in round or rectangular shape and in all different sizes. Brownie pans are usually square and come in 8 inch or 9 inch sizes. Depending on just how in depth you want to take your baking you may also need tube pans, spring form pans or Bundt pans.

Measuring cups and measuring spoons are very important to ensure you add just the right amount of ingredients to batters. A whisk, pastry blender and rubber spatulas are also necessary in preparing smooth, creamy batters. An electric mixer, blender or food processor can help in cutting down preparation times.

Salads always top the list of great summer foods. Toss salads are great if you don’t have a really hungry crowd. When that salad needs to be more than just a dinner starter you can add some of the following to help beef it up. Cubed cheddar cheese with slices of deli chicken, turkey or ham can make a great salad. Leftover meats, sliced into strips are also a real salad pleaser. Add zucchini or summer squash slices for something a little different. Try a taco salad by adding left over ground beef, tortilla chips and salsa.

Chef salads have been on menus everywhere for years. These salads are a toss salad with all the great extras. Hard boiled eggs, cheese, sliced turkey, ham or roast beef can all be added to make a Chef’s salad. Top it with your favorite dressing, bacon bits and croutons and you have a meal that will satisfy any family.

Spinach salads are also a great meal when it’s too hot to cook. Make you salad with baby spinach leaves. Add cheese, cucumbers, pickles, olives and even a jalapeno pepper if you feel like adding a little more sweat to the brow. Strawberries or mandarin oranges are a great addition to a spinach salad.

Sandwiches of any type can be the perfect meal in the summer. There’s not cooking, very little fussing and they fill you up. They are easy to eat on the run, while lounging in your favorite outside chair or in the comfort of that air conditioning.

Deli sandwiches are great on a hot summer evening. Use deli turkey, ham, roast beef, chicken, corned beef or salami are all great meats for these types of sandwiches. Add your favorite vegetables and cheese and these sandwiches will be a mealtime hit.

Chicken or tuna salad make great summer time sandwiches. Serve them on bread, croissants or in wraps. Place a spoonful on a bed of lettuce and add a fresh fruit salad on the side. What a way to cool down.

On the other hand there are a few certain gifts that will blow Mom away. The gift is especially great if it is exactly what she wants. Many of us have a difficult time finding the perfect gift. Maybe you would like to just spend time with family at home. Why not let them know this. It will eliminate the chances of them having an all out party to celebrate your day, when it is not what you really want.

How can you make sure that you get the one gift you prefer? Talk with your family. If there is a particular gift you would like to have let them know. Maybe there is a particular book you would like to read or a kitchen gadget you have had your eye on. If you prefer a few hours of alone time go ahead and tell them. Maybe a hot soak in the tub sounds good to you or a romance movie you’ve wanted to see, just discuss this with them.

Share your ideas about dinner on that special day also. Let them know if you are interested in eating at a particular restaurant. Perhaps you prefer a day of quiet at home with a good home cooked meal, cooked by someone else of course. If dining out is your option drop your hints early. For restaurants Mother’s Day is a busy time. Reservations will have to be made early to ensure that you will get a table.

Don’t be afraid to let them know that you would like a hair cut and style. If a manicure and facial sound good mention it to them. Drop the hint that you have found the perfect blouse or sweater set. Your family won’t mind a few hints about that special place you would like to visit. The more ideas you come up with will surely please your family.

The perfect Mother’s Day is all your family wants for you. Your family loves and respects you and would like nothing more than to give you that one special gift that you will really enjoy. There’s More than One Way to Skin a Turkey

The saying goes… “there’s more than one way to skin a cat.”, in our case we are talking turkey! This includes preparing the Thanksgiving turkey. We all know the familiar taste of a slow roasted turkey from the oven. Looking to change it up this year and deviate from the norm?  Then read on for some alternatives that while are not the norm for turkey day, will still delight your taste buds.

What about BBQ Turkey?  We put everything else on the grill, why not a turkey too? Grilling a turkey gives it a unique flavor and texture much like chicken that has been grilled to perfection for a family outing. The difference is that here we are grilling an entire turkey at once. Instead of putting the turkey on the grill slats, it is placed in a baking pan over the flames. This way, the turkey can be basted and seasoned prior to and during the cooking process. As the turkey nears doneness, add your favorite sauce to it for an extra kick.

Deep Fried Turkey – In recent years this has become a popular way to prepare the Thanksgiving turkey.   I don’t know who thought of it, but let me tell you I’m glad they did. A deep fried turkey is delicious.  Just remember to follow the fryer directions to avoid any serious injuries that will spoil your festivities.

Many people think there is not a pan big enough to fry an entire turkey and up until several years ago, they were right. Not that long ago we started to see turkey fryers everywhere. Using peanut oil in a large frying pot, once the oil reaches a certain temperature, a clean and dry turkey is slowly lowered into it. The turkey can be seasoned beforehand or injected with a marinade to seal in flavor. It takes at least an hour to cook a turkey thoroughly. Depending on your marinade on the outside, the skin will be crispy and dark, but don’t worry. That crunchy and tasty skin hides the most tender, perfectly cooked meat beneath.

Turducken – A tur-what-in?? It sounds like something that rises out of the graveyard on Halloween night. Actually it is a combination of various boneless fowl: turkey, duck, and chicken. They are all put together and layered with stuffing to create this newest addition to the Thanksgiving table. The turducken looks like a turkey on the outside, but all you have to do is cut into it to see that it is anything but. Those who have tried them, say that turduckens taste great.  Me…. I’m going to stick with my turkey.

Smoked Turkey – If you want a turkey fresh off the coals, try a smoker to cook your turkey this year. The bird is cleaned and seasoned. It can then be injected with a marinade if the cook so chooses. Once the coals have burned hot and come to a temperature that is not so hot it will burn the outside skin, place the turkey on the smoker. It will take several hours for this turkey to cook, but placing a pan of water on the smoker will help hold in moisture and create a juicy yet well smoked turkey for everyone to enjoy.
