Dreamy Double Chocolate Malts

What You Need:

1 pint chocolate swirl ice cream, softened
1/2 C of milk, divided
1 pint of chocolate ice cream, softened
1/2 C of malted milk balls, chopped
2 tbsp malted milk powder
Canned whipped topping

How to Make It:

Place the chocolate swirl ice cream into the blender.
Pour 1/4 C of milk over the ice cream.
Blend the mixture until smooth.
Pour into 4 glasses and top each glass with 1 tbsp of the chopped milk balls.
Place the glasses in the freezer.
Place the chocolate ice cream into the blender and pour in 1/4 C of milk.
Add the malted milk powder and blend until smooth.
Spoon the chocolate malt mixture into each of the glasses.
Add a squirt of whipped topping and garnish with the remaining malted milk balls.

Makes 4 servings

The Benefits of Dairy Everyday

dairyThe importance of dairy products in our diet is not a new concept. For year’s mothers having begging their children to drink their milk. Diets that is rich in milk, cheese and other good dairy bacteria means providing their growing bodies and adults changing bodies with minerals and vitamins. As parents we know this but as adults we may not know other beneficial information about the benefits of dairy.

Nutrients

Dairy products are known to provide the highest levels of calcium, protein, vitamins A and D, as well as potassium. These vitamin and mineral-rich hosts help to keep the body in balance and reduce the risk of hypertension, retaining water, as well as help maintain a weight management program. Studies have also show that high-quality dairy products may also reduce the risk of certain types of cancers.

Osteoporosis

A few years ago, there was a big push from the science-food industry to alert consumers to the fact that having dairy in your diet will help to prevent osteoporosis. Osteoporosis occurs when the body starts to reabsorb calcium and the bones become weakened. Bones need calcium in order to stay healthy and dairy, as already mentioned, provides one of the best sources of calcium other than dark leafy greens and some legumes.

Probiotics

If you have ever been sick, chances are you have received antibiotics. These medicines attack bacteria and destroy possible infections that might occur. Our bodies need bacteria to survive and dairy products help to provide that. Acidophilus is an example of good bacteria, also called probiotics, and can be found in large quantities in all yogurts or cultured dairy products. These bacteria also attack infection, but do so by “cleaning” rather than a full frontal assault.

Daily Requirements

How much dairy do we need in our diets each day? According to the United States Department of Agriculture, each person should have between two and three cups of dairy each day. A cup of dairy equates to one 8 oz glass of milk, two slices of hard cheese, and everyone’s favorite, three full scoops of ice cream. These requirements, as set by the USDA, help to ensure that each person is getting the proper amount of calcium and other vitamins to accommodate a healthy and well-balanced lifestyle.

Making Good Dairy Decisions

Not all dairy is created equal. Protein found in dairy is roughly equivalent, no matter what form you choose, but in order to maintain a healthy weight, it is recommended to stay away from high fat content. That being said, choose dairy that is low in fat content to get the benefits of the vitamins and minerals while still watching your waist line. Make deserts, such as pudding and smoothies using dairy products that are low in fat, as well as casseroles and baked goods using low fat milk.

Cranberry Topped Chocolate Shortbread Tart

4 T of heavy whipping cream, divided
3 oz. semisweet chocolate, chopped
1 fully baked packaged shortbread crust
1/2 C of frozen cranberries
2 T of sugar

How to Make It:

Place 3 T of the cream into a saucepan.
Place the pan over medium high heat.
Bring the cream just to a simmer.
Remove the pan from the heat and add the chocolate.
Stir to cover the all the chocolate with the hot cream.
Let stand 1 minute.
Whisk until the mixture is smooth and creamy.
Add the remaining cream and whisk to blend.
Spread the filling into the shortbread crust.
Cover the pie and refrigerate for 2 hours or until firm.
Preset the oven temperature to 425 degrees preheating the oven.
Spray a cake pan well with a non stick cooking spray.
Place the frozen cranberries into a bowl.
Sprinkle the cranberries with the sugar and quickly toss to coat.
Place the cranberries in an even layer into the prepared cake pan.
Bake 5 minutes or just until the cranberries begin to thaw.
Stir the cranberries around in the sugar.
Bake an additional 5 minutes or until all the sugar has dissolved.
Remove the cranberries from the oven and stir.
Cool completely then spread the cranberries evenly over the top of the tart.

Makes 8 servings

Work quickly when coating the frozen cranberries with the sugar. You don’t want the sugar to dissolve before placing the cranberries into the oven. These candied cranberries will remain fresh for up to 4 hours at room temperature. They make a great topping for ice cream, angel food cake or even pound cake.

Malted Milk Ball Parfaits

2 pints vanilla ice cream, softened
1 C of milk, divided
1 C of malted milk balls, broken into small pieces and divided
2 pints chocolate ice cream, softened
4 T of malted milk powder

How to Make It:

In a blender put the vanilla ice cream and 1/2 of the milk.
Blend the ice cream and milk until smooth.
The mixture is poured into 8 glasses.
Over the ice cream sprinkle half of the malted milk ball pieces.
The glasses are put into the freezer 15 minutes.
In the blender put the chocolate ice cream and the remaining milk.
The malted milk powder is blended in until very smooth.
Take the glasses from the freezer and the chocolate mixture is poured over the top.
The remaining malted milk ball pieces are sprinkled on.
These drinks are served immediately.

Makes 8 malts

For something a little more special serve these with refrigerated whipped cream topping and a maraschino cherry. You may use your favorite flavors of ice cream instead of the vanilla and chocolate.

Mini Ice Cream Tacos

8 mini corn taco shells
1/3 C of milk chocolate chips, divided
1 pint vanilla ice cream
2 T peanuts, chopped

How to Make It:

Set the oven to preheat to 350 degrees F.
In a loaf pan put the taco shells open side up.
Place foil balls at each end to keep the shells upright.
Put in oven for 5 minutes or until the shell are crispy.
Cool shells for 10 minutes.
With 1 t of the chocolate chips fill the bottom of the shells.
Put 1/4 C of ice cream in each taco shell.
The filled shells are put into the freezer for at least 15 minutes.
In a microwave safe bowl put the remaining chocolate chips.
The chips are microwave on high for 1 minute then stirred.
Melt until smooth using 30 second intervals stirring after each interval.
Remove the shells from the freezer and drizzle with the chocolate.
The chopped peanuts are quickly sprinkled over the tacos.
Put back in freezer at least 10 minutes before serving.

Makes 8 ice cream tacos

You may use any flavor of ice cream in the tacos to make a big hit at your New Years Eve party. Any flavor of ice cream topping can be drizzled over the top. Choose the ice cream and topping to suit your child’s taste.

Easy Ice Cream Strudels

8 frozen brown sugar cinnamon toaster strudels
2 C of apple pie filling
4 C of vanilla ice cream

How to Make It:

Prepare the toaster strudels as directed on the package.
Empty the pie filling into a microwave safe bowl.
Microwave on high 1 minute or until hot, stirring once.
Spoon the apple pie filling over the top of the toasted strudels.
Top each strudel with a scoop of ice cream.

Makes 8 servings

Decorate these strudels with the icing included with the strudels. They can also be topped with a little ice cream topping, candy sprinkles or crushed cookie pieces.

Orange and Black Ice Cream Cones

1 (4 oz.) pkg. German sweet chocolate
1/4 C of butter, cubed
3/4 C of sugar
2 eggs
1/2 C of flour
1 t vanilla extract
24 (3 inch) ice cream cones
24 scoops orange sherbet
Black sprinkles

How to Make It:

Set the oven to 350 degrees and preheat.
In a microwave safe bowl put the chocolate and butter and microwave for 1 minute on high.
Stir the mixture until very smooth.
Cool the chocolate for 5 minutes.
Pour the chocolate into a large mixing bowl and add the sugar.
Mix in the eggs until completely blended together.
Fold the flour in until well blended.
Stir in the vanilla extract.
Stand the ice cream cones into the cups of a metal muffin tin.
Fill each cone with batter no more than 2/3 full.
Bake in the preheated oven 20 minutes or until a toothpick inserted in the center comes out with moist crumbs, be careful not to over bake.
Cool the cones to room temperature.
Place one scoop of sherbet onto each ice cream cone.
Sprinkle with the black sprinkles and serve immediately.

This is a fun twist to ice cream cones. They make a special Halloween treat for kids. You can use chocolate sprinkles instead of black sprinkles if you prefer.

Spider Ice Cream Cups

8 individual graham cracker tart shells
8 scoops of vanilla ice cream
16 chocolate cream filled cookies, crumbled
16 red M&M candy pieces
16 pieces of black shoestring licorice

How to Make It:

Lay the tart shells onto a baking sheet.
In each of the shells place 1 scoop of ice cream.
Cover the ice cream well with the crumbled cookies.
Put the shells in the freezer for at least 30 minutes or until the ice cream has hardened.
Take shells from freezer and press 2 M&M’s in the front of the ice cream to resemble eyes.
Slice each of the licorice pieces into 4 strips.
Press 8 strips of the licorice into each scoop of ice cream to form the spider’s legs.
Put back in the freezer until you are ready to serve.

Kids love these easy and simple spiders. You may use any flavor of ice cream and any colors of M&M’s that you prefer.

Drink a Quick and Easy Breakfast

fruitsmoothies3Fruit and breakfast smoothies are a great way to start your morning while getting the nutrition you need. Some are really difficult and may take a while to prepare, but there are several that are really easy and don’t require a lot of prep time to make them. In fact, you usually have a lot of these ingredients on hand at home.

Take one cup of water, a 6 ounce can of orange juice concentrate, one cup of milk, 10 cubes of ice, 1 teaspoon of vanilla and a pinch or two of sugar, depending on your tastes. Place all the ingredients into the blender and blend until very smooth. Freeze to use later or drink when blended. Because there is no slicing or dicing you can prepare this drink quick and easy the morning you want to serve it.

Coffee is definitely a breakfast staple, but here is a new twist. Take 6 ice cubes, 2 bananas, about a cup of milk and 2/3 cup of coffee and blend until smooth. This drink will kick start your day and give you a flavor to savor.

How about one for the kids? Adults love this too, so prepare to enjoy! You will need to chunk 1 frozen banana, a cup of milk, 1/2 C of vanilla ice cream and 2 tablespoons of peanut butter. Blend until smooth, if it is too thick to drink, add milk until you reach the consistency you desire and drink up!

For the next one you will need some frozen fruit. You can use any frozen fruit available such as strawberries, blueberries, peaches or which every fruit may be your favorite. Use a cup of frozen fruit, a cup of milk, a 1/4 up of sugar or sugar substitute and 1 teaspoon of vanilla. Blend together until smooth. This makes a great fruit smoothie and a great taste treat for breakfast.

Breakfast doesn’t have to be eaten anymore. Drinking breakfast can be just as fun and just as nutritional as the contemporary breakfast of bacon and eggs. Since people today are very health conscience, bacon and eggs to a lot of people are a no-no but smoothies can be a yes-yes. They are low in fat and low in cholesterol and taste really great. The next time instead of reaching for the frying pan, reach for the blender instead and eat or should we say drink to your heart’s content.

Cherries and Nuts Ice Cream

1 (10 oz.) jar red maraschino cherries,
2 C half and half
2 C whipping cream
1 C brown sugar, packed
1 T vanilla extract
3/4 C pecans, chopped

How to Make It:

Drain the cherries reserving 1/3 C of the juice.
Chop the cherries into bite size pieces and set aside.
Place the reserved juice into a mixing bowl.
Pour the half and half in with the juice and stir to combine.
Add the whipping cream to the mixture.
Stir in the brown sugar until dissolved.
Add the vanilla extract and stir until well combined.
Transfer the mixture to an ice cream maker and freeze as directed by the manufacturer.
Fold in the cherries and nuts being sure they are blended in well.
Ripen the ice cream for 4 hours.

Makes 16 servings

This very creamy ice cream is great barefoot. If using it as a dessert, add a little chocolate syrup over the top just before serving. It also makes a great milk shake on a hot summer day.
