Spiced Baked Potato Skins

What You Need:

8 baking potatoes, scrubbed well
4 tbsp butter, melted
2 tbsp hot sauce
1/2 tsp salt
1/2 tsp onion powder

How to Make It:

Set the oven to 350 degrees and preheat.
Use a fork to pierce the potatoes in a few places and place them directly on the oven rack.
Bake the potatoes for 55 minutes or until soft.
Set the potatoes aside to cool and set the oven temperature up to 450 degrees.
When the potatoes have cooled enough to handle cut them into quarters.
Scoop out the pulp leaving a 1/4 inch shell.
Place the potato skins on a baking sheet skin side down.
Place the melted butter in a bowl and stir in the hot sauce, salt and onion powder.
Brush the butter mixture over the potato skins.
Bake for 15 minutes or until crispy and golden brown.

Makes 8 servings

These make a great appetizer when you have company over. Believe it or not the potato skins are where most of your nutrients are found in potatoes. Serve these with a light blue cheese dressing as a dip. Use the reserved potato pulp to make a chunky potato soup or for hash browns with breakfast.

Grilled Orange Salsa Steak

What You Need:

1/2 C of soy sauce
1/2 C green onions, chopped and divided
3 tbsp lime juice
2 tbsp brown sugar
1/8 tsp hot sauce
1 garlic clove, minced
2 lbs. boneless sirloin steak, 1 inch thick
2 oranges, peeled, sectioned and chopped
2 tbsp orange juice
2 tbsp red wine vinegar
2 tbsp lemon, chopped
1 tbsp lime, chopped
1 tbsp sugar
1 tsp cilantro
1 tsp jalapeno pepper, minced
1/2 tsp lemon peel, grated
1/2 tsp lime peel, grated
1/8 tsp salt

How to Make It:

Put the soy sauce and 1/4 C of the green onions into a large sealable bag.
Add the lime juice, brown sugar, hot sauce and garlic, seal the bag and shake to blend.
Place the steak into the marinade, seal the bag and turn to coat.
Refrigerate at least 2 hours, turning the bag occasionally to keep the meat well covered.
Preheat the grill to medium heat.
Remove the steak from the marinade, place it on the grill and discard the marinade.
Grill the steak for 5 minutes.
Turn the steak and grill for 5 minutes longer or until the internal temperature reaches 160 degrees for a medium done steak.
Cool the steak and slice across the grain.
Place the remaining ingredients into a mixing bowl and stir until blended together well.
Sever the salsa over the slices of steak.

Makes 4 servings

The citrus salsa adds a little zing to this delicious grilled steak leaving you with no need for that heavy steak sauce. The marinade gives you a steak that is moist and full of flavor. To grill the steak to medium rare the meat thermometer should read 145 degrees and for well done it should read 170 degrees.

The Egg is Truly a Breakfast Wonder

eggs2brownWhich came first the chicken or the egg? Well, since we don’t normally eat chicken for breakfast it has to be the egg. Eggs are a wonderful breakfast food. They are easy to fix and very versatile. Fried, scrambled, poached and even boiled, eggs are a great source of protein and a great way to start your day.

Boiled eggs are easy to make ahead and store. For a quick and easy breakfast on the run, slice a couple of boiled eggs and place on a slice of toast. Top it with some mayonnaise and another slice of toast and you have a great breakfast sandwich. It was easy to fix and healthy for you.

Try scrambling an egg and adding various ingredients you have around the kitchen. Cheese, breakfast meat, onions and green peppers can be added to scrambled eggs. Place the mixture between bread slices to make a breakfast omelet sandwich.

Add some chilies, salsa or even hot sauce to your scrambled eggs and you have added a whole new dimension to your breakfast. Use a tortilla instead of bread and you now have a great burrito for breakfast.

Poached eggs are easy to make with an egg poacher, but even without one you can improvise and adapt a skillet or saucepan for that use. In a pan, place about an inch of water, heat the water, and then crack the egg into the water. Cook in a covered pan. The yolk will become solid. Place poached eggs between 2 slices of bread and add a slice of cheese. This breakfast sandwich is a hit with young and old.

Potatoes are a great favorite for breakfast. Hash browns and American fries are well known in most restaurants that feature a breakfast menu. Leftover baked potatoes are easy to use in breakfast recipes. Slice the potato and lightly fry in just a little oil. Add a couple of whipped eggs, some mushrooms, onions and cheese and cook until done. What a treat for kids and adults.

Eggs have long since been a main stream for our breakfast table. Fried, scrambled, hard boiled or poached they are sure to make a hit with any family.

Shimp Cocktail Sauce Country Bob Style

  • 1/2 C Country Bob’s All Purpose Sauce
  • 1/2 C Chili Sauce
  • 2 T Lemon Juice
  • 3 T Prepared Horseradish

Mix all ingredients in a small bowl.  Chill for 1 hour.  Use as a dip for seafood pieces, breaded vegtables, breaded chicken pieces or even french fries!

Makes 1 cup.

Slow Cooker Buffalo Chicken Wings

  • 5 1/2 lb chicken wings, split and tips discarded
  • 1 (12 oz) can or bottle chili sauce
  • 1/4 cup molasses
  • 1/2 cup Country Bob’s All Purpose Sauce (or may substitute Spicy Hot)
  • 3 drops hot pepper sauce
  • 1 Tbsp salsa
  • 2 1/2 tsp chili powder
  • 1 tsp garlic powder
  • 2 tsp salt

Directions:       Place chicken in slow cooker. In a medium bowl, combine the chili sauce, lemon juice, molasses, Country Bob’s All Purpose Sauce, hot pepper sauce, salsa, chili powder, garlic powder and salt. Mix together and pour mixture over chicken. Cook in slow cooker on medium low setting for 5 hours.
