1 cup smoked ham, cut into strips
1 shallot, chopped
1 garlic clove, minced or grated
3 Tbsp butter
1 cup chicken stock
4 cups cooked fettuccini
1 jar artichoke hearts, drained and cut in half
1/4 cup fresh grated Parmesan cheese
2 Tbsp chopped ripe olives
1 Tbsp chopped green olives
In large skillet over medium heat, cook ham, shallot, and garlic in butter until shallot becomes translucent.
Stir in the chicken stock and bring the mixture to a boil.
Immediately toss in the fettuccini and let cook for 1 minute.
Add the artichoke hearts, mixing gently until combined and heat for 1 more minute.
Remove from heat and add the Parmesan and the olives.
Serve immediately with more grated Parmesan on each plate.
