Grilled Orange Salsa Steak

What You Need:

1/2 C of soy sauce
1/2 C green onions, chopped and divided
3 tbsp lime juice
2 tbsp brown sugar
1/8 tsp hot sauce
1 garlic clove, minced
2 lbs. boneless sirloin steak, 1 inch thick
2 oranges, peeled, sectioned and chopped
2 tbsp orange juice
2 tbsp red wine vinegar
2 tbsp lemon, chopped
1 tbsp lime, chopped
1 tbsp sugar
1 tsp cilantro
1 tsp jalapeno pepper, minced
1/2 tsp lemon peel, grated
1/2 tsp lime peel, grated
1/8 tsp salt

How to Make It:

Put the soy sauce and 1/4 C of the green onions into a large sealable bag.
Add the lime juice, brown sugar, hot sauce and garlic, seal the bag and shake to blend.
Place the steak into the marinade, seal the bag and turn to coat.
Refrigerate at least 2 hours, turning the bag occasionally to keep the meat well covered.
Preheat the grill to medium heat.
Remove the steak from the marinade, place it on the grill and discard the marinade.
Grill the steak for 5 minutes.
Turn the steak and grill for 5 minutes longer or until the internal temperature reaches 160 degrees for a medium done steak.
Cool the steak and slice across the grain.
Place the remaining ingredients into a mixing bowl and stir until blended together well.
Sever the salsa over the slices of steak.

Makes 4 servings

The citrus salsa adds a little zing to this delicious grilled steak leaving you with no need for that heavy steak sauce. The marinade gives you a steak that is moist and full of flavor. To grill the steak to medium rare the meat thermometer should read 145 degrees and for well done it should read 170 degrees.

Grilled Portobello and Bell Pepper Submarines

1 lb. Portobello mushrooms, sliced
1 onion, sliced thin
1 green bell pepper, julienne
1 red bell pepper, julienne
1/4 C extra virgin olive oil
4 cloves of garlic, minced
1 tsp dried rosemary
1/2 tsp salt
1/4 tsp pepper
2 C tomato sauce, heated
4 submarine rolls
1 (4 oz.) pkg. provolone cheese slices

How to Make It:

The grill rack is lightly oiled and the grill is heated to medium.
In a large mixing bowl put the mushrooms, onions, pepper and olive oil.
Add the garlic, rosemary, salt and pepper and blend until the vegetables are well coated.
Divide the vegetables in half.
One half of the vegetables are put on the grilled and cooked 10 minutes, or until tender tossing frequently.
Grill the remaining half of the vegetables in the same manner.
Reset the grill to low heat.
Brush the inside of the submarine rolls with the tomato sauce.
Place 1/4 of the grilled vegetables onto each roll.
Top each sandwich with a slice of cheese.
Close each and sandwich and wrap them tightly in aluminum foil.
Place the wrapped sandwiches on the grill for 10 minutes or until crispy and the cheese has melted.

The Many Sides of a Potato

potatoesBaked, broiled, fried, boiled or raw, a potato is one of the greatest vegetables around. This vegetable is one of the most frequently used vegetables as a side dish to every meal.

It’s your anniversary or birthday and you pick a fancier restaurant to eat at and you order a steak. Have you ever thought about your side choices? They are usually baked potato, French fries or potato salad, which of course all use the potato.

Baked potatoes are one of the healthier choices you can make. Unless, of course, you add sour cream, bacon and cheese sauce and then the choice isn’t the healthiest one to make. Sounds good though doesn’t it.

Broiled potatoes are wonderful but full of calories. To keep them a little healthier just add butter and leave off the sour cream and chives toppings.

There are many ways to fry potato the most famous being the French fry. With certain foods, you want to add some onions slices, a little oil and your potatoes and you have a wonderful side dish that all of the family will like. Try shredding the potato and adding onion bits and some cheese and you have a delicious side dish for breakfast with your eggs and bacon.

Boiled potatoes can be used either hot or cold. Boiled potatoes with the jackets (skins) on are very similar to a baked potato but don’t take quite as long to cook. You can also use boiled potatoes and peel them, dice them and add some eggs, pickle relish and a mayonnaise based dressing and you have a wonderful potato salad fit for your family and friends!

Take your raw potatoes and quarter them and place in the crock pot with some carrots and your favorite roast and you have a great Sunday lunch for after church or while watching football. It is one of the quickest meals that can be prepared and will make your taste buds burst with the great flavor. Peal and slice a potato and add some salt. These are a favorite around the house.

Grilling a potato is also a great choice. Add sliced onions, mushrooms and carrots and you have a great vegetable medley that everyone will love!

Stuffed Sweet Plum Tomatoes

1 C fresh basil leaves, tightly packed
2 cloves of garlic
3 tbsp pine nuts
1/2 C extra virgin olive oil, divided
3 tbsp + 1/2 C of Parmesan cheese, grated and divided
1 tsp salt, divided
1/2 tsp pepper, divided
4 large plum tomatoes

How to Make It:

In a food processor or blender chop the basil, garlic and pine nuts until finely chopped.
Add in 1/4 C of the oil and process until the mixture forms a past.
Add in 3 tbsp of the Parmesan cheese, 1/2 tsp of the salt and 1/4 tsp of the pepper and pulse just until combined.
Put the mixture into a mixing bowl and let set for 15 minutes to incorporate all the flavors.
The grill is heated to medium hot temperature.
Slice the tomatoes in half lengthwise and remove the seeds.
Brush the cut side of the tomatoes with the remaining oil and sprinkle with the remaining salt and pepper.
Grill the tomatoes cut side down 8 minutes or until soft and slightly grill marked.
Carefully remove the tomatoes from the grill and stuff each tomato half with the pesto mixture.
Sprinkle each stuffed tomato with the remaining Parmesan cheese.

Stuffed Cheesy Chilies

8 large chili peppers
1 (16 oz.) pkg. Monterey Jack cheese, shredded

How to Make It:

Preheat the gill to medium hot.
Place the chili peppers on the hot grill and cook 10 minutes or until charred, turning occasionally.
Remove the grilled peppers and place in a plastic bag and sealed allowing them to steam for 10 minutes.
Remove the peppers from the bag and peel.
Cut each pepper from top to bottom and remove the seeds.
Stuff the prepared peppers with the cheese.
Close the stuffed peppers and secure each one with a toothpick.
Wrap the peppers in foil and secure tightly.
Grill the wrapped peppers for 10 minutes.
Remove the wrapped peppers from the grill and carefully open the packet.
Let the peppers cool 5 minutes to firm up the cheese before serving.
