Lime Seasoned Chicken Wraps

What You Need:

2/3 C of lime juice
1 tbsp salt free seasoning blend
1 tbsp ground cumin
1 tsp pepper
1 tsp chili powder
1/2 tsp garlic powder
1 lb. boneless skinless chicken breasts cut into strips
1 green bell pepper, julienne
1 sweet red bell pepper, julienne
1 onion, halved and sliced thin
6 (8 in.) flour tortillas

How to Make It:

Whisk together the lime juice, seasoning blend, cumin, pepper, chili and garlic powders.
Set 2 tbsp of the marinade aside and pour the remaining marinade into a plastic bag.
Add the chicken strips, seal and turn to coat them well.
Chill the marinade for at least 30 minutes, turning occasionally.
Place a skillet sprayed with a non stick cooking spray over medium heat.
Add the peppers and onions to the skillet and sauté for 45 minutes or until crisp tender.
Remove the vegetables to a bowl and set aside.
Place the chicken into the skillet and discard the marinade.
Add the reserved 2 tbsp of the marinade to the skillet.
Cook the chicken in the marinade for 5 minutes, stirring intermittently until the chicken is cooked through.
Return the cooked vegetables to the skillet.
Cook for 3 minutes or until hot, stirring often.
Spoon the chicken mixture down the center of each tortilla.
Fold the tortilla around the filling.

Makes 6 wraps

This healthy wrap is enhanced by the lime juice marinade. Low on fat but high on taste this sandwich will ensure a healthy lunch for the entire family. Use any type of bell peppers you like including yellow, orange or even purple. The colorful vegetables help when it comes to getting our children and even some adults to eat healthy foods.

Zesty Christmas Side Dish

3/4 lb. of bacon
1 onion, chopped
1 green pepper, chopped
4 (15 1/2 oz.) cans of hominy, drained
1 (14 1/2 oz.) can of diced tomatoes with juice
1 (10 oz.) can diced tomatoes with green chilies
1 (8 oz.) can tomato sauce

How to Make It:

In a skillet over medium heat cook the bacon 10 minutes or until crisp.
Drain the bacon well on paper towels then crumble.
Add the onion and green pepper to the skillet with the bacon drippings.
Sauté the vegetables for 5 minutes or until tender then drain well.
Put the hominy, both cans of tomatoes with their juice and the tomato sauce into the bottom of the crock pot
Add the cooked bacon, onions and green pepper and stir to combine.
Cook covered on low for 6 hours or until heated through.

This dish goes great with pork, chicken or turkey. It will add a touch of zest and color to your Christmas buffet.

Breaded Turkey Bites

1/2 C of dry bread crumbs
1/2 C of green pepper, chopped
2 egg whites
4 garlic cloves, minced
8 drops of hot sauce
1 lb. lean ground turkey
1 T of canola oil
1 C of ketchup
1/2 C of water
1/4 C of lemon juice
1/4 C red wine vinegar
2 T molasses
2 T of brown sugar
2 t of dry mustard powder
1 t chili powder
1/2 t cayenne pepper
1/2 t pepper

How to Make It:

In a large mixing bowl whisk together the bread crumbs, green pepper, egg whites, garlic and hot sauce.
Break up the turkey into the mixture and mixed well.
Shape the mixture into small meatballs.
Pour the canola oil into a skillet over medium heat.
Lay the meatballs in a single layer into the oil.
Cook 8 minutes, turning frequently until browned on all sides.
Drain the meatballs and put them back in the skillet.
Whisk together in a mixing bowl the ketchup, water, lemon juice, vinegar and molasses.
Add the brown sugar, mustard, chili powder and both peppers and whisk in until combined well.
Cover the meatballs with the sauce.
Allow the mixture to come to a boil then turn the heat to low.
Simmer covered for 10 minutes or until heated through.

Makes 10 servings

If you want turkey on your buffet but don’t want to cook a whole turkey this is the way to go. The hot sauce, chili powder and cayenne pepper may be omitted.

Freezer Picnic Slaw

1 (2 lb.) head of purple cabbage, shredded
1 tsp salt
1 C of white vinegar
1/4 C of water
2 C of sugar
1 tsp celery seed
1 tsp mustard seed
1 carrot, shredded
1/2 C green pepper, chopped fine

How to Make It:

Sprinkle the shredded cabbage with the salt and allow it to stand 1 hour.
Pour the vinegar and water into a saucepan and whisk to combine.
Whisk the sugar into the mixture.
Add the celery and the mustard seed and whisk again to blend in.
Place the pan over medium heat and bring the mixture to a steady boil.
Boil the mixture for 1 minute.
Remove the mixture from the heat and let stand until room temperature.
Drain the cabbage in a colander then place in a serving bowl.
Add the carrot and green pepper and toss to combine.
When the sauce has completely cooled, pour it over the cabbage mixture and stir to coat.
Cover the bowl and freezer for at least 4 hours.
Allow the slaw to stand in the refrigerator 2 hours before serving.

Makes 10 servings

This cool refreshing slaw makes the perfect picnic slaw because it contains no mayonnaise. When ready to serve stir the slaw well to incorporate the flavors together. Green cabbage can also be used if you prefer.
