Grilled Orange Salsa Steak

What You Need:

1/2 C of soy sauce
1/2 C green onions, chopped and divided
3 tbsp lime juice
2 tbsp brown sugar
1/8 tsp hot sauce
1 garlic clove, minced
2 lbs. boneless sirloin steak, 1 inch thick
2 oranges, peeled, sectioned and chopped
2 tbsp orange juice
2 tbsp red wine vinegar
2 tbsp lemon, chopped
1 tbsp lime, chopped
1 tbsp sugar
1 tsp cilantro
1 tsp jalapeno pepper, minced
1/2 tsp lemon peel, grated
1/2 tsp lime peel, grated
1/8 tsp salt

How to Make It:

Put the soy sauce and 1/4 C of the green onions into a large sealable bag.
Add the lime juice, brown sugar, hot sauce and garlic, seal the bag and shake to blend.
Place the steak into the marinade, seal the bag and turn to coat.
Refrigerate at least 2 hours, turning the bag occasionally to keep the meat well covered.
Preheat the grill to medium heat.
Remove the steak from the marinade, place it on the grill and discard the marinade.
Grill the steak for 5 minutes.
Turn the steak and grill for 5 minutes longer or until the internal temperature reaches 160 degrees for a medium done steak.
Cool the steak and slice across the grain.
Place the remaining ingredients into a mixing bowl and stir until blended together well.
Sever the salsa over the slices of steak.

Makes 4 servings

The citrus salsa adds a little zing to this delicious grilled steak leaving you with no need for that heavy steak sauce. The marinade gives you a steak that is moist and full of flavor. To grill the steak to medium rare the meat thermometer should read 145 degrees and for well done it should read 170 degrees.

Italian Bean and Veggie Salad

1 (15 oz.) can garbanzo beans, rinsed and drained well
1 (15 oz.) can butter beans, rinsed and drained well
1 cucumber, quartered lengthwise and sliced
2 tomatoes cut into wedges
1/4 C green onions, sliced thin
1/2 C oil and vinegar salad dressing
1 (8 oz.) pkg. mozzarella cheese, shredded

How to Make It:

Toss the beans together in a large salad bowl.
Gently toss in the cucumber, tomatoes and onions.
Drizzle the oil and vinegar dressing over the salad and toss to coat.
Top with the mozzarella cheese before serving.

Makes 4 servings

Having pasta for supper? Add this salad to complete the meal. Great Northern beans or lima beans may be used if you prefer. To make this main course meals just add crumbled cooked sausage or chopped pepperoni.

Pasta Pea Soup with Chicken

2 (14 oz.) cans chicken broth
1 t dried Italian seasoning
1/3 t bottled minced garlic
12 oz. boneless skinless chicken breasts, cubed
3/4 C small shell macaroni
3/4 C frozen peas
1/4 C green onions, chopped fine

How to Make It:

Place the broth into a saucepan and stir in the Italian seasoning and garlic.
Bring the broth to a rapid boil.
When boiling stir in the chicken and the macaroni.
Bring back to a rapid boil.
Reduce the heat to medium low and cook for 8 minutes until the pasta is tender.
Add the peas and green onions.
Cook the soup for 2 minutes longer or until the peas are tender.

Makes 4 servings

The green onions are optional in this soup. This soup makes a great main course meal when served with a salad and garlic bread.

Brown Rice with Green Beans and Corn

1 C long grain brown rice
1 C of chicken broth
2 C of water, divided
1/4 C green onions, chopped
1/4 C red bell pepper, diced
1/4 C French style green beans
1/2 C frozen corn

How to Make It:

Place the rice into an ovenproof casserole dish.
Pour the chicken broth and 1/2 C of the water over the rice
Place a trivet into the pressure cooker then pour in the remaining water.
Place the casserole dish on top of the trivet.
Bring the cooker pressure to high and cook 30 minutes then allow the pressure to fall on its own.
Add the green onions, bell pepper, green beans and corn to the casserole.
Place the lid on the cooker and leave it unlocked.
Allow the casserole to steam for an additional 20 minutes or until the rice is tender and fluffy.

If you use short grain rice it will take a little longer to cook. Allow an additional 7 minutes of cooking time. Always allow the pressure to fall on its own when cooking rice. This way the rice will be soft but not overcooked.
