Frozen Chocolate Malt Cake

What You Need:

1 qt. sugar free vanilla ice cream, softened
1/4 C malted milk powder
1 qt. sugar free chocolate ice cream
1/3 C fat free fudge topping
1 C malted milk balls, chopped

How to Make It:

Mix together the vanilla ice cream and malted milk powder until well blended.
Evenly spread the chocolate ice cream over the bottom of a spring form pan.
Drop the fudge topping by spoonfuls over the top of the chocolate ice cream.
Evenly sprinkle half of the malted milk balls over the top.
Carefully spread the vanilla ice cream mixture over the malted milk balls.
Place in the freezer for at least 4 hours or until firm.
Remove the sides of the pan and sprinkle the top with the remaining malted milk balls.

Makes 16 servings

With this recipe you can have your cake and eat it too. Don’t deprive yourself of the finer things in life just because you want to eat healthy. This dessert is low fat and sugar free and it’s a great way to incorporate some of the good stuff into a nutritious diet.

The Always Forgotten Grocery List

There’s nothing harder on a budget than forgetting the ever-important grocery list at home. This usually results in a bout of yelling and blaming. Thereafter it is followed by an attempted list-recreation while moving through the store. Generally, this causes an abundance of items ending up in the shopping basket. Not to mention blowing the budget out of the window. When you get home you find only partial ingredients to make any resemblance of a meal.

Shopping lists are only as effective as the person who makes them. The rule for shopping lists is to make sure you look through all of your items, including the shelves where you stock the goodies, to make sure you have written every last thing down. The best thing to do for keeping a good list is to hang a piece of paper on the refrigerator to keep a running tally as you use up items. This will help ensure minimal items are missed. It is still helpful to go back through the fridge, freezer and all pantries before heading to the store.

Making a shopping list doesn’t have to be an all out war. There are a few simple tips to remember when making that list that will help you endeavor to preserve.

Organize – Try and keep your list organized by where items are placed in your kitchen. For instance, have a column for frozen goods, another for refrigerated and a final one for pantry items. This will help three fold.

When we shop we find that many items are grouped together in this same way. This is great because it will increase shopping speed and leave little room for impulse buys while wandering up and down the isles. Also all of the like items will be packaged together since they are in your cart together. This helps in keeping the cold items cold and the meats away from the bread and eggs. Since the items are packed together, putting them away at home will be a breeze. They will already be grouped according to where they go.

Game Plans – Try to map out the stores you frequent. Unless they constantly move items around, you will be able to quickly find the cereal and the mustard without having to search around, wasting time and money. Being able to grab exactly what you need aids in cost savings because, again, you won’t be left to your own devices when walking aimlessly up and down the isles.

Budget Checks – Leave room on your list to write down prices. Many stores will honor prices if marked incorrectly on the shelf or even give you that particular item for free if it rings up incorrectly. Being able to keep track of the dollars you are going to spend as you walk through the store also helps to keep the budget in place. When you see the dollars adding up, it is much more difficult to justify the impulse buy at the checkout lane.

The most important thing to remember is to make sure you have the list with you before you leave the house. Make sure that list is as complete as possible by keeping a running tab of needed items on the fridge. Sort the list by common items to make life easier and know where those items are located. Finally, keep track of your spending on the same list to help with frugal shopping.

Scary Spider Punch

cauldronWhat You Need:

12 gummy spiders
1 vinyl glove
1 gallon green fruit punch, chilled
2 (1 liter bottles) ginger ale
1 qt raspberry sherbet

How to Make It:

Fill an ice cube tray 2/3 full of water.
Gently place a gummy spider into each of the ice cube tray compartments.
Put in freezer until completely frozen.
Fill the vinyl glove 2/3 full of water and tie the opening closed tightly.
Freeze the glove until solid.
Place the fruit punch and ginger ale into a punch bowl.
Fold in the raspberry sherbet.
Add the frozen spider cubes and lay the frozen hand in the middle of the punch bowl.

Kids love the taste and the scary aspect of this punch. You can use any type of fruit punch you like and lemon lime soda can be used instead of the ginger ale.

Spider Ice Cream Cups

8 individual graham cracker tart shells
8 scoops of vanilla ice cream
16 chocolate cream filled cookies, crumbled
16 red M&M candy pieces
16 pieces of black shoestring licorice

How to Make It:

Lay the tart shells onto a baking sheet.
In each of the shells place 1 scoop of ice cream.
Cover the ice cream well with the crumbled cookies.
Put the shells in the freezer for at least 30 minutes or until the ice cream has hardened.
Take shells from freezer and press 2 M&M’s in the front of the ice cream to resemble eyes.
Slice each of the licorice pieces into 4 strips.
Press 8 strips of the licorice into each scoop of ice cream to form the spider’s legs.
Put back in the freezer until you are ready to serve.

Kids love these easy and simple spiders. You may use any flavor of ice cream and any colors of M&M’s that you prefer.

Frozen Halloween Banana Bites

4 bananas, peeled and cut into bite size chunks
2 t Halloween sprinkles
2/3 C semisweet chocolate chips
2/3 C milk chocolate frosting
10 toothpicks

How to Make It:

Using wax paper cover a serving plate completely.
Put the banana chunks, cut side down onto the prepared plate.
Stick a toothpick into the center of each banana chunk.
Freeze the banana chunks for 20 minutes or until hard.
In a small cup put the Halloween sprinkles and set aside.
Put the chocolate chips in a microwave safe bowl and microwave on high 1 minute.
Take from the microwave and stir until smooth.
Stir the frosting into the melted chocolate until blended in well.
Put in microwave on high for 15 seconds.
Take from microwave and stir until the mixture becomes a dip consistency.
Dip each frozen banana in the melted chocolate until completely covered.
Roll the dipped banana chunks through the sprinkles until covered completely.
Place the bananas chunks back on the wax paper lined plate.
Put the dipped bananas in the freezer for at least 1 hour or until the chocolate has hardened.

If the chocolate mixture starts to harden before all the bananas are coated it can be heated in microwave on high for 10 to 15 seconds or until soft. Stir well before resuming the dipping.

Fresh Green Beans One of Summers Delights

more-green-beansGreen beans sometimes called pole beans grow on a vine and are actually pods with little beans inside them. Beans were grown by Native Americans in fields along with the corn. Green beans have been grown in this country ever since. Green beans are a delicious side dish for any meal. They can be found in many variations such as Italian style, French style and simply cut.

Fresh green beans can be found at the Farmers market or in you local grocery store. It’s easy to grab a handful of fresh green beans and place them in a bag. They may also be found canned or frozen. Fresh green beans do have a much sweeter taste than canned green beans. The salt added to canned green beans may be the reasoning behind the taste. Most everyone would agree that green beans from the garden are the best.

When picking fresh green beans be sure to look at them closely. Don’t choose ones with spots or that are torn at the ends. The beans should be green and not brown. Some fresh beans can be found in purple or yellow varieties. Before cooking them, snap the ends off and snap any long beans in half. Rinse the beans under cool water to remove any dirt from them before cooking.

It doesn’t take long to cook green beans. They can be steamed in a small amount of water with potatoes, bacon pieces or chunks of ham. Green beans are tasty sautéed in some olive oil with onion. Snap beans can be used in stir fry mixtures as well. Fresh green beans have a bright green color when cooked and their shape should be maintained during cooking. Over cooking green beans will dull the bright green color and cause them to wilt leaving you with a bad tasting bean. Beans are usually served with some starch and meat for a complete meal. At Christmas time they take center stage in green bean casseroles. It is a popular dish at the holidays.

Fresh vegetables don’t last longer than a couple of weeks at their best. It is a good idea not to buy more than you can use at any one time. If you want to store your green beans to be used later blanch them for a few minutes. After the beans have cooled off, store them in freezer bags to be eaten at a later date. Allow the beans to thaw before cooking or adding them to your favorite recipes.

Green beans are a healthy addition to any diet. They are a fat free food and contain many nutrients such as vitamins A and C, calcium, iron and protein. They also contain very little carbohydrates. Fresh green beans are a healthy addition to any meal so enjoy all the green beans you like.

Cherries and Nuts Ice Cream

1 (10 oz.) jar red maraschino cherries,
2 C half and half
2 C whipping cream
1 C brown sugar, packed
1 T vanilla extract
3/4 C pecans, chopped

How to Make It:

Drain the cherries reserving 1/3 C of the juice.
Chop the cherries into bite size pieces and set aside.
Place the reserved juice into a mixing bowl.
Pour the half and half in with the juice and stir to combine.
Add the whipping cream to the mixture.
Stir in the brown sugar until dissolved.
Add the vanilla extract and stir until well combined.
Transfer the mixture to an ice cream maker and freeze as directed by the manufacturer.
Fold in the cherries and nuts being sure they are blended in well.
Ripen the ice cream for 4 hours.

Makes 16 servings

This very creamy ice cream is great barefoot. If using it as a dessert, add a little chocolate syrup over the top just before serving. It also makes a great milk shake on a hot summer day.

Chocolate Mocha Soft Serve Ice Cream

1 1/2 C of sugar
2 1/2 T of instant coffee crystals
4 C of milk
1 T vanilla
2 C of whipping cream
1/2 C miniature semisweet chocolate pieces

How to Make It:

Place the sugar and coffee crystals together in a mixing bowl and toss to combine.
Pour the milk and vanilla into the bowl and stir until the sugar and coffee have dissolved.
Add the whipping cream and stir until completely blended in.
Gently fold the chocolate pieces into the mixture.
Transfer the mixture to the ice cream maker and freeze according to the directions for your maker.
Ripen the ice cream for 4 hours if desired.

Makes 16 servings

Be sure to ripen this ice cream to get the perfect soft serve consistency

Vanilla Pudding Banana Ice Cream

3 eggs
1 T vanilla
1 (13 oz.) can Milnot
2 C of sugar
1 (4 oz.) box of vanilla instant pudding and pie filling
2 very ripe bananas

How to Make It:

Break the eggs into a large mixing bowl.
Add the vanilla and Milnot and whisk to combine.
Dump in the sugar and the pudding mix.
Beat the mixture on medium speed with an electric mixer until well blended.
Mash the bananas with a fork in a separate bowl.
Add the mashed bananas to the egg mixture stirring until well blended.
Place the mixture in the freezer canister of the ice cream maker.
Freeze as directed by the manufacturer.
Ripen the ice cream for at least 4 hours before serving.

Makes 2 quarts

The bananas are optional in this recipe but they add flavor to this simple ice cream. It’s the perfect way to cool off on those hot summer evenings.
