Monster Eye Deviled Eggs

devilledeggsWhat You Need:

3 C of hot water
2 T red food coloring
1 T of white vinegar
6 hard boiled eggs, cracked but not peeled
1/3 C of mayonnaise
2 t Dijon style mustard
1/4 C of green onions, chopped fine
2 T cilantro, minced
12 ripe olives, sliced
1 t ketchup

How to Make It:

In a large mixing bowl put the water, food coloring and vinegar and whisk until blended well.
Add the unpeeled eggs to the mixture and if the water does not cover the eggs completely add more hot water.
Allow the eggs to stand in the colored water for 30 minutes.
With a slotted spoon remove the eggs, dry and peel.
Slice the eggs in half lengthwise.
Carefully remove the yolks from the eggs and place in a small bowl.
Place the egg whites on a platter.
Coarsely mash the egg yolks with a fork.
Add the mayonnaise and mustard and stir until well combined.
Stir in the onion and cilantro.
Spoon the yolk mixture into each of the egg whites.
Press a slice of olive into the egg yolk mixture then add a dab of ketchup to finish off the eye.
Cover and place in refrigerator until you are ready to serve.

These are gruesome looking deviled eggs but they taste really great and will be the hit of any party. They have the best bloodshot effect if served within 2 hours of preparation.

Using Those Eggs after the Hunt

paintedeggsWhen it comes to Easter we find ourselves with dozens of hard boiled eggs and have no idea what to do with them. There are a few easy ways of using those eggs. Not just simple but pretty tasty too.

Why not just have a plain old hard boiled egg. Just a few simple things will make that a tasty treat. When you boil your eggs remember not to put them in the water until after the water has come to a brisk boil. Remove the pan from the heat, submerge the eggs and let them stand in the hot water for about 18 minutes. This will keep the egg from becoming to rubbery.

You can also run them under cold water or place a small pin prick in one end to make them easier to peel. Sprinkle on a little salt and pepper and you have a tasty afternoon snack.

How about some deviled eggs? Is your mouth watering at the thought? You can make those deviled eggs as tangy or as sweet as you like. For a spicy deviled egg try adding some horseradish or cayenne pepper to the egg yolk.

For a sweeter taste add some chopped sweet pickle or just a dash of sweet pickle juice. Either way a deviled egg ranks up there when it comes to using those hard boiled eggs.

Egg salad is another way of using those eggs. Egg salad makes a great lunch idea especially when served on toasted bread. Place it on a bed of lettuce and sprinkle the top with some paprika, parsley or chives. Yum! There are numerous ingredients that you can put into egg salad to give it your own special taste.

Pickled eggs are another treat that can be made from those Easter eggs. The ideas are endless when it comes to pickled eggs. You can make them spicy, hot, and sweet or find a taste of your very own. Some different ideas are beet juice eggs, pineapple eggs, garlic eggs or cider eggs. If you’re not into the taste of pickled eggs just have an experimental day with the kids to see just how those eggs are pickled.

One last idea is a scotch egg. These eggs aren’t really Scottish. The idea was born by a London food shop. Check the Internet for different recipes. One way to fix them is by rolling your peeled egg into flour. Wrap the egg in sausage then dip the egg into a slightly beaten egg. Roll it in bread crumbs then deep fryer until it is a golden brown. Sounds good huh?

Also remember that hard boiled eggs taste great on salads, in casseroles and a variety of other dishes. Keep them refrigerated and don’t let them go to waste.
