Lemon Topped Berries

What You Need:

4 egg yolks
1 Tbsp lemon extract
1/4 C caster sugar
4 C of mixed fresh berries

How to Make It:

Whisk together the egg yolks, lemon extract and sugar in a small mixing bowl.
Place the bowl into a pan and fill with hot water just to top of the bowl.
Whisk the lemon sauce until pale and thickened.
Divide the berries between four oven proof custard cups.
Spoon the sauce over the berries.
Broil the berries for 1 minute in a preheated broiler or until the tops just begin to brown.

Makes 4 servings

This is a great budget side dish to make with the last of those summer berries. Use whatever types of berries you have just a handful of. Those ones you need to use up before they go bad. The whole family will enjoy it. Top each bowl of berries with a dollop of whipped cream and a mint leaf and serve as a great summertime dessert.

Nutmeg Spiced Applesauce Cake

What You Need:

2 1/2 C of flour
1 1/2 tsp baking powder
1/4 tsp baking soda
3/4 tsp nutmeg
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp salt
1/2 C of butter, room temperature
2 C of sugar
2 eggs
1 1/2 C applesauce

How to Make It:

Preset the oven to 350 degrees and grease a 13X9 baking pan well.
Whisk together the flour, baking powder and soda, nutmeg, cinnamon, cloves and salt.
In a separate bowl beat the butter on medium speed for 30 seconds.
Add the sugar and beat until well combined.
Beat in the eggs one at time until well blended.
Add the flour and applesauce to the butter mixture, alternating between the two and beating well after each addition.
Pour the batter into the prepared baking dish.
Bake 40 minutes or until the top springs back when lightly touched.

Makes 15 servings

This cake is so moist that frosting isn’t necessary. To enhance the flavor add dried fruits or nuts. Just fold them into the batter after adding the applesauce. Freeze any leftover cake in an airtight container for up to 1 month.

Crunchy Yuletide Dessert

1 (21 oz.) can cherry pie filling
1 (18 1/4 oz.) pkg. yellow cake mix
1/2 C butter, melted
1/3 C of walnuts, chopped

How to Make It:

In a 1 1/2 qt crock pot put the pie filling.
Combine the cake mix and butter in a small bow and mix until crumbly.
Crumble the mixture over the pie filling.
Spread the walnuts evenly over the top of the crumb mixture.
Cover the crock pot and cook on low for 3 hours.

Makes 12 servings

Total Time: approximately 3 hours 5 minutes

This is a quick and simple dessert to serve with your Christmas dinner. You may use any type of pie filling. Use pecans instead of the walnuts for a little different taste.

Sweet Chocolate Nutmeg Custard

2 C of low fat milk
3 eggs, lightly beaten
1/2 C premium sweet cocoa
1/8 t of salt
1 t of vanilla
1 t of nutmeg

How to Make It:

Lightly spray 4 custard cups with a non stick cooking spray.
In a mixing bowl blend together the milk and eggs.
Add in the cocoa and salt.
Add the vanilla and mix well with an electric mixer on medium speed.
With an electric mixer mix until combined well.
Fill the custard cups 2/3 full with the mixture.
Lay the trivet into the bottom of the cooker.
Tightly cover each cup with aluminum foil and place on the trivet.
Quickly bring the pressure up and cook for 4 minutes.
Quickly release the pressure under cold water.
Sprinkle the top of each cup with nutmeg before serving.

A basic egg custard is made from this recipe by leaving out the cocoa and adding 2 T of sugar. You can use the basic egg custard to make caramel custard by placing 1 1/2 T of brown sugar in the bottom of each custard cup before adding the custard. When the custard is cooked turn the cup upside down and let the brown sugar sauce ooze down the side of it.

Brown Sugar Bananas for Kids

4 large ripe bananas, peeled
2 T of brown sugar
1/8 t of nutmeg
1 C of water

How to Make It:

Lay the bananas in a single layer into a casserole dish.
Sprinkle the brown sugar evenly over the bananas then add the nutmeg.
Tightly seal the dish with heavy duty aluminum foil.
Place the trivet into the bottom of the cooker.
Pour the water over the trivet.
Set the casserole dish onto the trivet.
Bring the pressure up to high and cook the bananas for 6 minutes.
Slowly release the pressure.

This casserole is best served warm. This may be served as a side dish or as a dessert with any meal. This is a great way to get kids to eat fruit as they love this dish. Fresh fruit cooks very quickly in a pressure cooker so be sure to keep a timer handy.

Angel Cake and Bananas Kabobs

1/4 C apple jelly
1/4 C apple juice
1 (11 oz.) angel food cake, cut into 2 inch cubes
3 bananas cut into 1/2 inch thick cubes

How to Make It:

Set the grill to heat to medium heat.
In a small saucepan over low heat put the jelly and juice and stir constantly until the jelly is completely melted.
Alternating between the two, add cake cubes and banana cubes onto 4 skewers until the skewers are full.
Brush the cake and banana cubes evenly with the jelly mixture.
Place the skewers on the grill for 3 minutes, turn and grill another 3 minutes or until lightly browned.

Homemade Chocolate Desserts for Valentine’s Day

Chocolate is one of our favorite treats. On Valentine’s Day, we are surrounded by chocolate. Instead of buying that box of chocolates, create some chocolate treats at home.

Chocolate is actually good for us. Let me rephrase that before you make a run on the store. Dark chocolate is actually full of good things like antioxidants that help to keep our bodies healthy. Consuming a little dark chocolate each day has a beneficial effect.

Remind your sweetie of that on Valentine’s Day. As long as you purchase dark chocolate, they don’t have to feel guilty about eating sweets. Use some dark chocolate to create homemade chocolate desserts to enjoy on Valentine’s Day.

A favorite chocolate dessert is lava cakes. Just like the name implies, once you cut into the cake, the gooey chocolate runs out of the center. Use a stencil to create a powdered sugar heart on top of each one.

When making chocolate desserts that call for melted chocolate it is important to do it right. We have all had those boo-boo’s in the kitchen with chocolate that we’d rather not mention. For instance, turning the burner on high will not melt the chocolate any faster—neither will adding water to the pan and swirling the chocolate around. All you’ll end up with is a very expensive mess.

Chocolate bricks are not cheap so use them sparingly and wisely. If you need to melt chocolate, do so in a non-stick saucepan. Chocolate melts best over low heat.

You don’t need to stir the chocolate for it to melt. Once the chocolate takes on a glassy appearance, it has melted. The chocolate can be removed from the heat and stirred into the recipe.

Even a hint of chocolate in the dessert can be tasted by us chocolate connoisseurs. If you are making a cake, add a bit of melted chocolate to turn it into a chocolate pound cake or a chocolate cheesecake.

For a sinful dessert create icing to top your chocolate creations. A chocolate cake, cupcake, or pie covered in chocolate icing or chocolate sauce makes it heavenly. Only those with a really sweet tooth can handle such a chocolate dessert. It is not for newbies.

There are tons of chocolate desserts you can create for Valentine’s Day to surprise your gal or guy. Try out some chocolate truffles or a chocolate trifle bowl dessert. Chocolate is also an aphrodisiac so watch out if you eat too much!

Romantic Valentine’s Desserts

What will you give your sweetheart this year for Valentine’s Day? If the gift includes a quiet dinner at home or out, consider a few romantic ideas for dessert. Turn on the charm as you provide a sweet ending to the meal.

Maybe you want to get out for dinner this Valentine’s Day. If you have kids, a little rest and relaxation as a couple instead of a couple of parents is probably in order. Skip dessert at the restaurant and share some cozy moments at home with a dessert made for two.

Even if you are not the baking type, you can still have tasty desserts. Order one from a gourmet bakery or the bakery section of your grocery store. There will be no shortage of interesting desserts available for the tasting on this day.

How about fruit? Fruit always has a way of sneaking into Valentine’s Day somehow. Try chocolate covered strawberries. If you want a twist on the traditional milk chocolate, try plump red strawberries dipped in white or dark chocolate. Let them come to room temperature before eating them with a glass of champagne.

Try some puddings. We often think of chocolate on Valentine’s Day but that is not the only flavor of pudding. Try banana or vanilla. Top it off with whipped cream and some cherries for a light yet sweet dessert.

Whatever you choose for a romantic dessert, eat it in moderation. On the one day set aside for romance, you don’t want to gorge yourself on rich dessert and fall asleep before the romance can begin. Choose a dessert that you can feed to each other (for a little extra fun), or one that is not too filling.

Instead of a large cake, use ramekin dishes to bake individual cakes that are perfect for a romantic dessert treat. Chocolate lava cakes, strawberry shortcake, and others will bake nicely in smaller dishes. Top with rich sauce, icing, or powdered sugar. There will be just enough dessert to satisfy.

Another idea would involve preparing an assortment of desserts like with fondue. You can create a sweet sauce in the fondue pot like chocolate (white or dark) and then dip cubed pieces of dessert into it. Small inch squares of cake and fruit slices go well with chocolate. Even marshmallows can be included. Take turns feeding each other the tasty tidbits.

Romantic desserts set the stage for an amorous evening. Choose something simple that will satisfy the sweet tooth without making you too tired for couple’s time afterwards.

Cherish You Strawberry Delight

What You Need:

1/2 C semisweet chocolate chips
1/2 C heavy whipping cream
2 T orange juice
2 C fresh strawberries, sliced
4 slices pound cake, cubed

How to Make It:

Place the chocolate chips into a small saucepan.
Pour the whipping cream over the chips.
Place the pan on low heat and stirring constantly melt the chips until they are smooth.
Remove the pan from heat and blend in the orange juice.
Cool the mixture about 30 or until room temperature.
Place the sliced strawberries in the bottom of dessert cups.
Layer the pound cake on top of the strawberries.
Spoon the chocolate mixture over the top.

Serving Size: 4

What better way to tell your loved ones how much you cherish them. Serve this dessert and they will have no doubts. Not fond of strawberries then use raspberries, orange slices or your favorite fruit instead.

My Funny Valentine Chocolate Cups

What You Need:

2 squares white baking chocolate
3 T milk, divided
2 T cream cheese, softened
2 squares semi sweet baking chocolate
2 Maraschino cherries

How to Make It:

Place the white chocolate squares into a microwave safe bowl.
Add 1 T of the milk.
Microwave on high for 1 1/2 minutes then stir until the chocolate has completely melted and the mixture is smooth.
Beat the 2 T of the cream cheese into the mixture with an electric mixer on low speed until smooth.
Place the 2 squares of semi sweet chocolate into a separate microwave bowl.
Add the remaining milk and microwave on high 1 1/2 minutes.
Remove and stir until the chocolate is smooth.
Spoon the mixture side by side into dessert bowls.
Place the bowls in the refrigerator for 15 minutes to chill through.
Garnish each bowl with a cherry.

Serving Size: 2
