Popcorn Shrimp Fryers

What You Need:

2 large eggs
2 tbsp milk
1 C seasoned dry bread crumbs
1 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika
1/2 tsp salt
1/4 tsp pepper
1 1/4 lbs. frozen shrimp, thawed
3 tbsp of canola oil

How to Make It:

Place the eggs and milk into a shallow bowl and whisk until well blended.
In another bowl place the bread crumbs, garlic and onion powder.
Add the paprika, salt and pepper and gently stir to combine.
Place the shrimp into the egg mixture allowing any excess to drip off.
Roll the shrimp in the bread crumbs shaking off any excess.
Pour the oil into a deep frying pan or fryer.
When the oil reaches 375 degrees add the shrimp in batches.
Fry the shrimp 2 minutes per side until batter is a golden brown.
Drain well on paper towel.

With the healthy side of eating coming to the forefront we don’t do much deep frying anymore. Yet every once n awhile we just crave something with that tasty deep fried crunch. These shrimp will definitely feed that craving. Serve with cocktail sauce, tarter sauce or make a Cajun sauce using 1/3 C of mayonnaise and 1 tsp of Cajun seasoning.

Preparation Time: approximately 15 minutes
Cooking Time: approximately 4 minutes per batch
Total Time: approximately 19 minutes per batch

Fried Apple Rings with Maple Glaze

What You Need:

3/4 C of flour
1 egg, beaten
1/4 C of maple syrup
1/4 C of buttermilk
3 large apples, peeled, cored and cut into rings
Oil for frying

How to Make It:

Whisk together the flour, egg, syrup and buttermilk.
Dip the apples into the mixture, coating both sides.
Pour 2 inches of oil into the deep fryer.
Heat the oil to 375 degrees.
Fry the apples a few at a time for 2 minutes or until they are golden brown.
Drain on paper towel and continue until all the apple rings are fried.

Makes 4 servings

When deep frying in batches always be sure the oil reaches the desired temperature before adding more food to fry. These apple rings are a mighty tasty side dish addition to any meal. Turn them into a great dessert by dusting them with a little confectioner’s sugar.

Zesty Parmesan Green Tomatoes

4 green tomatoes, sliced 1/4 inch thick
2 tsp salt
1/2 C cornmeal
1/2 C Parmesan cheese, grated
1/2 tsp garlic salt
1/2 tsp dried oregano
1/2 tsp ground ginger
1/8 tsp red pepper flakes, crushed
2 eggs
1/2 C of olive oil

How to Make It:

Sprinkle the salt over both sides of all the tomato slices and let the slices stand 10 minutes.
Mix together the cornmeal, Parmesan cheese, garlic salt, oregano, ginger and red pepper.
Place the eggs into a small mixing bowl and beat slightly with a fork.
Place a skillet over medium heat and pour the olive oil into the skillet.
Pat the tomatoes dry with a piece of paper towel.
Dip the tomato slices into the beaten egg.
Lay the tomato slices into the cornmeal mixture and coat evenly.
Fry the coated tomato slices in the oil for 3 minutes turn and continue frying an additional 3 minutes or until golden brown.
Drain well on paper towel before serving.

Makes 8 servings

These tomato slices can also be deep fried. Allow the oil to reach 375 degrees. Drop a couple of slices at a time into the deep fryer and fry for 5 minutes, turning once, or until a golden brown. Allow the oil temperature to return to 375 before adding more slices.
