Creamy Berry Baked Toast

1 (8 oz.) loaf of French bread, cut into slices
1 (8 oz.) carton of spreadable cream cheese
1 T of honey
1 (10 oz.) frozen sliced strawberries, thawed
1/4 C of strawberry jelly, warmed

How to Cook It:

Heat the oven to 375 degrees F.
On an ungreased baking sheet lay the slices of bread in a single layer.
Bake the bread 3 minutes, then turn and bake another 3 minutes or until crisp.
Mix the cream cheese and honey together until well blended and smooth.
Carefully spread the mixture over each slice of toast.
Each slice of toast is topped with the sliced strawberries.
Place a dollop of the strawberry jam on top before serving.

Try this instead of just plain toast. Any type of fruit and jelly that you like will work including orange marmalade. You can also use a fruit flavored cream cheese and omit the jelly.

Sweet and Sour Creamy Cucumbers

cucumbersWhat You Need:

1/2 C of sour cream
3 tbsp white vinegar
1/4 tsp pepper
1 tbsp sugar
4 cucumbers, sliced thin
1 sweet onion, sliced thin and separated into rings

How to Make It:

Place the sour cream, vinegar and pepper into a mixing bowl.
Add the sugar and whisk the mixture until the sugar has dissolved completely.
Put the cucumbers into a large serving bowl.
Add the onions and toss gently to combine.
Pour the dressing over the cucumbers and onions and stir until covered well.
Cover the bowl and refrigerate 4 hours or until to 24 hours.
Stir to incorporate the flavors just before serving.

Cucumbers just say cool when it comes to summer. These creamy cucumbers will keep everyone cool and full on that hot summer July 4th day. Pimentos may be chopped and added to give this salad a little color.
