Cherry Cranberry Fruit Delight

What You Need:

2 (.6 oz.) pkg.  sugar free cherry gelatin
2 C boiling water
1 (12 oz.) pkg. fresh cranberries
1 apple, peeled, cored and chopped
1 orange, peeled, seeded and chopped
1 (1 in.) piece of orange peel
1 (20 oz.) can crushed unsweetened pineapple with juice

How to Make It:

Stir the gelatin into the boiling water until it is dissolved.
Fold in the cranberries, apples, orange and orange peel.
Add the pineapple with its juice and stir to blend in well.
Allow the mixture to cool slightly.
Once cool place the mixture into the blender in batches and blend until slightly chopped.
Once all the gelatin mixture has been chopped pour it into a 13X9 pan and cover.
Chill for at least 3 hours or until the gelatin if firm.

You can substitute frozen cranberries in place of the fresh ones. This fruity side dish can also be turned into a healthy dessert by adding a little fat free whipped topping to each bowl full.

Orange Cranberry Yuletide Tea

4 quarts of water
1 1/2 C of sugar
6 cinnamon sticks
8 C of cranberry juice
4 C of orange juice
1/3 C of lemon juice

How to Make It:

Pour the water into a Dutch oven pan and place over low heat.
Add the sugar and stir until the sugar is dissolved.
Add in the cinnamon sticks and adjust the heat to high.
Bring the water mixture to a quick boil then reduce the heat to low.
Cover the pan and simmer 25 minutes, stirring occasionally.
Remove the cinnamon sticks and discard.
Stir in the cranberry, orange, and lemon juices until well blended.
Serve warm with a cinnamon stick and a slice of orange or lemon in each cup.

Makes 32 servings

A warm cup of tea will liven up your Christmas celebration. The bit of citrus in this cinnamon laced cranberry tea gives it a little spark. Pour it into a crock pot on low temperature to keep the tea warm and tasty all day long.

Cranberry Orange Arugula

What You Need:

2 C frozen cranberries, thawed
4 oranges
2 stalks celery, sliced thin
1 small red onion, chopped
1/4 C sugar
2 T lemon juice
1 t fresh ginger, grated
1 (5 oz.) pkg. baby arugula
1/4 C fresh mint leaves, chopped
2 T walnut oil

How to Make It:

Coarsely chop the cranberries either by hand or in a blender.
Place them in a mixing bowl.
Peel the oranges and cut into section over the bowl so the juice flows in with cranberries.
Place the orange sections in the mixing bowl.
Add the celery and onion and toss the ingredients to combine.
Sprinkle the sugar into the mixing bowl.
Pour the lemon juice over the sugar and gently mix both into the mixture.
Add the ginger and mix to incorporate.
Cover the bowl and refrigerate for 1 hour until chilled through.
Place the arugula into a salad bowl.
Add the mint and walnut oil.
Toss to coat the arugula well.
Top the arugula with the cranberry orange mixture just before serving.

Arugula is a leaf vegetable that closely resembles lettuce. It has a rich peppery taste and is mostly used in salad. Arugula can be cooked and used with pasta or meats in many dishes. It can be found in the salad green section of many grocery stores.

Passionate Pomegranate Punch

What You Need:

2 tubs Cherry Pomegranate flavor drink mix
8 C water
2 C club soda
2 C cranberry juice
1/2 C lime juice
1/2 C orange juice
Crushed ice

How to Make It:

Put the drink powder into a punch bowl.
Pour the water into the punch bowl and stir until the powder has completely dissolved.
Add the club soda and mix well.
Pour in the cranberry juice, lime juice and orange juice and stir until all the ingredients are incorporated together.
Add the crushed ice just before serving.

Serving Size: 24

This is a great punch to serve if you are having a Valentine’s party. Pretty it up with heart shaped ice cubes colored red and pink with food coloring. If you prefer to serve an alcoholic punch you can substitute vodka for the club soda.
