Almond Cranberry Croissants

What You Need:

1 1/3 C of flour
3 1/2 oz. almond paste, cut small
2/3 C + 2 tbsp light brown sugar, packed and divided
1/4 tsp salt
6 tbsp unsalted butter, cut into pieces
1 (3 oz.) pkg. cream cheese
1 C almonds, toasted and chopped very fine
1 C of fresh cranberries, chopped very fine
3/4 tsp cinnamon, divided
1 large egg, lightly beaten
2 tbsp sugar

How to Make It:

Put the flour, almond paste, 2 tbsp of brown sugar and the salt into the blender.
Blend until the almond paste is blended into the flour well.
Place the butter and cream cheese into the mixture and pulse until a moist crumb forms.
Place the mixture onto a flat surface and knead until a soft dough forms.
Divide the dough into thirds and place on a lightly floured surface.
Shape the pieces into a 1/2 inch thick disk.
Cover with plastic wrap and chill 1 hour.
Line a baking sheet with foil and preheat the oven to 350 degrees.
Place the almonds, cranberries, remaining brown sugar and 1/2 tsp of cinnamon into a bowl and toss to combine.
Place the chilled dough on a lightly floured surface.
Roll each disk out to form a 9 inch circle.
Place 1/3 of the cranberry filling onto each circle, pressing into the dough with your fingers.
Cut each dough circle into 12 wedges.
Roll the wedges into croissants beginning at the wide end and rolling to the point.
Place the croissants point down on the foil line baking sheet.
Toss together the sugar and remaining cinnamon.
Brush each croissant with egg and sprinkle with the cinnamon sugar mixture.
Bake the croissants for 22 minutes or until a golden brown.
Cool on wire racks before serving.

Makes 36 croissant

These cookies make a great snack in the middle of the afternoon or as a dessert at the end of a delicious healthy meal. Mix up your filling by using cherries and pecans or peaches and walnuts or any type of fruit nut mixture that you like.

Cranberry Topped Chocolate Shortbread Tart

4 T of heavy whipping cream, divided
3 oz. semisweet chocolate, chopped
1 fully baked packaged shortbread crust
1/2 C of frozen cranberries
2 T of sugar

How to Make It:

Place 3 T of the cream into a saucepan.
Place the pan over medium high heat.
Bring the cream just to a simmer.
Remove the pan from the heat and add the chocolate.
Stir to cover the all the chocolate with the hot cream.
Let stand 1 minute.
Whisk until the mixture is smooth and creamy.
Add the remaining cream and whisk to blend.
Spread the filling into the shortbread crust.
Cover the pie and refrigerate for 2 hours or until firm.
Preset the oven temperature to 425 degrees preheating the oven.
Spray a cake pan well with a non stick cooking spray.
Place the frozen cranberries into a bowl.
Sprinkle the cranberries with the sugar and quickly toss to coat.
Place the cranberries in an even layer into the prepared cake pan.
Bake 5 minutes or just until the cranberries begin to thaw.
Stir the cranberries around in the sugar.
Bake an additional 5 minutes or until all the sugar has dissolved.
Remove the cranberries from the oven and stir.
Cool completely then spread the cranberries evenly over the top of the tart.

Makes 8 servings

Work quickly when coating the frozen cranberries with the sugar. You don’t want the sugar to dissolve before placing the cranberries into the oven. These candied cranberries will remain fresh for up to 4 hours at room temperature. They make a great topping for ice cream, angel food cake or even pound cake.

All in One Turkey Supper

1 lb. boneless turkey breast
1/4 t of salt
2/3 C of frozen cranberries
2/3 C of orange marmalade
1 t of lemon juice
1/8 t of pepper
1/2 C of walnuts
1/2 C of turkey broth
2 C of pearl onions
1 large sweet potato cut in 1/4 inch slices
3 C of frozen cut green beans
1 t of dried sage

How to Make It:

Spray the inside and the lid of a cast iron Dutch oven with a non stick cooking spray.
Allow the oven to preheat to 450 degrees.
Lay the turkey into the bottom of the prepared pan.
Sprinkle the salt evenly over the top of the turkey.
Put the cranberries into the blender or food processor.
Blend until the cranberries are broken into small chunks.
Place the marmalade, lemon juice and the pepper in with the cranberries.
Pulse a couple of times to mix the ingredients together well.
Put the walnuts and broth in and blend until the walnuts are chopped into bite size pieces.
Pour half of the cranberry mixture over the top of the turkey.
Spread the onions over the top of the turkey.
Place the sweet potato slices evenly over the onions.
Add the remaining cranberry mixture.
Scatter the green beans over the potato slices and sprinkle the sage evenly over the top.
Place the lid on the pan and bake for 35 minutes or until the turkey is cooked through.
Remove the turkey to a platter and cool slightly before slicing.
Serve the sauce over the top of the turkey slices.

Makes 4 servings

This is a great way of including a special meal into our everyday life without spending hours in the kitchen. The cranberries may be dried, fresh or frozen. The turkey and green beans may also be frozen. There is no need to thaw frozen ingredients as it will not change the amount of cooking time but will save you valuable kitchen time. If you’re in a pinch use orange juice with pulp instead of the marmalade.

Sour Cream Cranberry Oatmeal Bars

1 C of butter, room temperature
1 C of brown sugar, packed well
2 C quick cooking oats
1 1/2 C + 2 T of flour, divided
2 C dried cranberries
1 (8 oz.) container of sour cream
3/4 C of white sugar
1 egg, beaten slightly
1 T lemon peel, grated
1 t vanilla extract

How to Make It:

Set the oven to preheat to 350 degrees F.
In a mixing bowl put the butter and brown sugar.
Cream the mixture with an electric mixer on low until light and fluffy.
Stir in the oats until well combined.
Mix in 1 1/2 C of flour until completely moistened.
Set aside 1 1/2 C of the mixture.
In the bottom of an ungreased 9×13 pan press the remaining mixture.
Bake the crust 10 minutes or until a light golden brown.
In a large mixing bowl put the cranberries.
Add in the sour cream, sugar, egg, lemon peel and vanilla to the cranberries.
Mix in the remaining flour until all the ingredients are combined.
Smooth the mixture evenly over the baked crust.
Sprinkle the reserved crumb mixture evenly over the top.
Put in oven and bake 20 minutes or until a golden brown on top.
Cool on a wire rack before cutting.

This makes a perfect dessert for your Christmas buffet. If you don’t like cranberries you may substitute any type of dried fruit.

Easy Cinnamon Cranberry Oatmeal

3 C of milk
1/4 t of salt
1 ½ C quick cooking oats
1/3 C dried cranberries
1/3 C of golden raisins
3 T of maple syrup
1 1/2 t of cinnamon

How to Cook It:

Pour the milk into a large saucepan and sprinkle the salt into the milk.
Over medium heat bring the mixture to a steady boil.
Stir the oats in while boiling and cook 2 minutes or until thick, stirring often.
Take from the heat and fold in the cranberries and raisins.
Stir in the maple syrup and cinnamon and blend well.

Oatmeal is a fast breakfast but can be quite boring. Adding cranberries, raisins and maple syrup can make this a real treat. Try any of your favorite dried fruits in this recipe. For a healthier breakfast add honey instead of the syrup.
