Close your eyes and imagine walking into the kitchen once a month to cook dinner. Oh the thought huh? It can be more than a thought it can be a reality. On top of that those meals can be nutritious. Impossible to do you might say. No it’s a real possibility and it can save you time, money and energy too. There are numerous people doing it all around the world. Meal preparation is an important factor when trying to plan for a family or a stressful month. The more prepared you are, the easier it will be to have great-tasting and healthy food on hand even when you don’t feel like cooking.

This little feat can be accomplished two ways. The first is to prepare, cook and freeze. This gives you a meal that can be reheated in a flash. The second is to prepare, freeze and then cook. There are benefits to each. Let’s take a look.

Cook First and then Reheat

For those with time constraints, such as a second job, kid’s soccer practice or even a late night out with friends, cooking first is the way to go. Just as the title conveys, this involves cooking all of the food first, letting it cool down and then storing it in the freezer to be used at a later date. The best part about this preparation method is the almost-instant door to table effect.

Since this food is already cooked, it only needs to be warmed up to your liking which can be accomplished within a few moments of walking in the door. Unlike the freeze first method there is no fresh cooking. If you are not a fan of eating leftovers, this may not be the ideal preparation method for you.

Freeze First and then Cook

Combining all of the ingredients into a big pan and then freezing is a great way to have a home cooked meal on limited time. These meals can be prepared well in advance, taken out to thaw that morning. At dinnertime they can be easily slipped into the oven to cook through. This completely cuts out the prep time for that meal on that given day. Imagine getting home from work and pulling the bake set out of the refrigerator and popping it in the oven while you take off the day with a warm shower. By the time you are done, so is dinner.

This is a great way to get the home cooked taste without all of the work. By freezing first, the freshly cooked taste remains intact and nothing beats a good hearty meal to end the day. The only negative to this solution comes into play when the amount of cook time is greatly reduced. These meals still need to be cooked. The reheat in the microwave factor doesn’t apply.

With techniques such as these your food can be ready in a flash. It saves you time after a busy day, energy that most of us don’t have to spare and money. It’s much cheaper to cook at home. With these techniques you buy once instead making a trip to the store every other day. Try a day of cooking and freezing and see if how good it feels and how great those fast and easy meals can taste.

Create a New Years Eve Dinner with the Kids

Deciding on the Menu

Some people choose to have a special dinner on New Year’s Eve. The menu for this special meal should be decided with a little input from everyone. One idea is allowing everyone to come up with their most favorite dish and include it in the menu. You could end up with pizza and teriyaki chicken. It might be a menu of nothing but sweets.

The important thing here is that you do it together. Your kids have a lot of good ideas that you may have been missing out on. This could be the start of a great new family tradition.

All the Prep Work

Going to the grocery store will probably be a must. Make a list of what everyone needs for their dish. Check your cabinets to be sure you don’t already have something. That will save you money.

Just one or two family members need to shop. The others can be preparing the kitchen for the upcoming cooking fest. It’s divide and conquer here so that everything gets done.

Decide what equipment and utensils you have available. There may be a lot of dish washing going on if everyone needs to use a giant mixing bowl. You can purchase another or stagger your meal prep so that you can share.

Do as much ahead of time prep work as you can. For instance, pork chops can be marinated early and placed in the refrigerator. Pizza dough can be created and rolled out well in advance of making the pizza.

Creating the Chef

Everyone will need an apron and you can go for the full effect by supplying the family with hats. Give each family member their own apron before they get cooking. Personalize them with their names. Aprons will keep your clothes from getting messed up and you get to look stylish at the same time.

Rules of the Kitchen

Don’t forget to explain the rules of the kitchen especially if this is the first time your cherished family is in the kitchen.

1. Wash your hands well with soap and water after handling meat
2. Use soap and water on the counter to clean when you are done at a work station
3. Kids, ask parents for help when it comes to using the stove
4. Any other rules that make the work flow along easily and will keep you all safe.

Cooking with the family can be fun and create memories. On New Year’s Eve it is a spectacular way to ring out the old and ring in the new.

Children and the Christmas Cooking Craze

santaIt’s a know fact that most of our holiday time is spent in the kitchen. Often it’s at the expense of spending time with our families. This year why not invite Dad and yes the children into the kitchen to help with all the fun and joy of making those holiday treats.

Believe it or not kids love to cook. It gives them a chance to be a part of a family tradition. Start them out small and let them work up to the turkey and ham. Everyone will have a blast and the kids will feel as if they have helped to put on the feast of a lifetime.

The first step to allowing children in the kitchen is to teach them cleanliness. Teach them how to properly wash their hands and keep plenty of paper towels available. Aprons will also help in protecting clothing. They will love the idea of wearing that Christmas apron while creating their own masterpiece.

The best place to start is with the baking. Biscuits are always a favorite. They can make a mess and not get into trouble. Walk them through it step by step with easy to understand directions.

When it comes to baking most of the work is away from the hot stove or oven. Set them up at the table or at the counter if they can reach. You can be preheating the oven or working at the stove while they prepare batters or dough.

Let the children help you in gathering up the bowls, utensils and ingredients necessary for the recipe. Walk through each step of the process and then let them have it. They will love the freedom it allows them. Just stay close in case they have questions or need assistance.

Children can help with just about anything that goes in the oven. Cookies, cakes, rolls, casseroles and other baked foods are a great place to start your children in their culinary experience.

Let the children help with preparing the meat for your holiday dinner. More than likely they won’t be ready to carry it to oven or check on it as it bakes but they can help to make glaze, add seasonings and sprinkle in nuts and marshmallows on those sweet potatoes.

Your kids will get the hang of baking and stove top cooking with a little assistance. The holidays are a relaxing and jovial time to let your kids begin cooking with you. Teach them the basics of hygiene, preparation and creating so they will want to cook all of the time.

Butterscotch Potato Candy Drops

potato-sticksWhat You Need:

1 (11 oz.) pkg. butterscotch chips
2 T of creamy peanut butter
1 (12 oz.) jar dry roasted peanuts
1 (4 oz.) can potato sticks

How to Make It:

Place the chips and peanut butter into a saucepan over low heat.
Heat the mixture 5 minutes stirring constantly or until very smooth.
Take the pan from the stove and stir in the peanuts until well coated.
Carefully stir in the potato sticks and coat them well.
On a pan lined with wax paper drop the mixture by teaspoonfuls.
Chill the candy drops until firm.

These make great goodies to give to trick or treaters. They will come back again and again for these sweet salty drops. You may use semisweet chocolate chips if you prefer instead of the butterscotch and the peanuts are optional.

Makes 5 dozen drops

Consider some facts. The average person works 40 or more hours week, especially us Work At Home Moms (WAHM’s). If they are parents they are also involved in school activities adding another 10-20 hours a week minimum. If you count in house hold responsibilities, you are now looking at just enough time to eat and sleep, but just barely! This makes for a hectic and busy schedule and most people do not want to add to it by having to spend time in the kitchen.

The result of this is a large number of prepackaged processed foods that are high in a number of things like salt, sugar and fat. All of these things lead to an unhealthy lifestyle. This makes for tired bodies and minds that are less able to process information and deal with stress. There are a few things however that people can do that can help provide low fat meals for their families as well as for themselves.

The first step is to avoid fast foods. While they are convenient and driving by on the way home from work and picking up dinner is a great way to eliminate cook time it is also adding a great deal of unnecessary fat to your diet. Frozen dinners may provide a low in fat alternative but you end up adding salt and other preservatives which can be equally as bad. Maintaining a low fat lifestyle is not just about cutting out fat it is about eating healthy.

How often have you been busy at work and just grabbed something from a fast food place or a donut or snack from a vending machine for a meal while rushing to complete this project or on your way to that meeting. You are doing yourself and your work a disservice. Taking the time to eat properly produces better results than the quick pick me up options.

Here are some alternatives, when making meals make double or triple the recipes. Then using freezer storage containers, they make some now that are the size of plates and can freeze an entire meal like a tv dinner, freeze individual meals in the freezer. Then all you have to do is pull it out and reheat. It saves time and produces low fat meals easily.

Buy low fat snacks to keep with you at the office or in your car. If you have a full busy schedule and meal times seem to be from vending machines, fast food restaurants or you drink your meals consider:

  • Low fat breakfast bars
  • Snack bars
  • Things that store well
  • Can be eaten either warm or cold

These will give you quick, on the go, healthy alternatives eliminating the fast food joints and vending machines from your diet without causing you to be inconvenienced.

Be Your Own Half Time Star This Sunday

If you are like many of my friends, you look forward to fall because it signals the start of football season. While you may not watch football yourself, the food that comes along with tailgating and Sunday afternoon football can be mouthwatering and beyond compare.  Nothing says fall to me more than the smell of brats on the grill and the sound of men yelling at a TV in another room!

My husband is not a sports fan (Lucky for me!), but he does love Buffalo Chicken and I think may even consider it a food group.  So I am always on the lookout for great recipes that are easy to make and taste great.  I had the opportunity to try two  recipes that included Swanson Chicken and Frank’s Red Hot Sauce that were passed on to me from the Campbell’s Kitchen, and they were a big hit. Even my little one thought it tasted pretty good (mind you she’s 4, but enjoys food that is on the spicy side of life).

So, if you find yourself in the kitchen on a Sunday afternoon, with your football hero in the living room rooting for their favorite team and you are searching for something to make, I highly recommend whipping up some Buffalo Chicken dip and Buffalo Chicken pizza and you’ll be more popular than the half-time cheerleaders (Not to mention you will save yourself from spending the whole afternoon in the kitchen catering to a bunch of men yelling at a TV).

Here is the recipe for the Buffalo Chicken Pizza (download the recipe).  I highly recommend it, even for non-game night!

Buffalo Chicken Pizza
From Campbell’s Kitchen
Prep: 15 min.
Bake: 10 min. Makes: 6 servings


Ingredients:
1 can (9.75 ounces) Swanson® Premium Chunk Chicken Breast in Water,
drained
1/4 cup Frank’s® RedHot® Sauce
2 tablespoons butter, melted
1 package (10 ounces) prepared thin pizza crust (12-inch)
1/2 of a green pepper, thinly sliced
1/4 cup crumbled blue cheese

Directions:
1. Heat the oven to 425°F. Stir the chicken, hot sauce and butter in a medium
bowl.
2. Spread the chicken mixture on the pizza crust to within 1/2-inch of the edge.
Top with the pepper and cheese.
3. Bake for 10 minutes or until the chicken mixture is hot and bubbling.

Skip the Cooking On Mother’s Day

restuarnttableDoes Mom like to eat? One thing about that is she is usually the one doing the cooking. Wouldn’t you like to give Mom a break for a change? You could always cook for her but then again who wants to spend Mother’s Day in the kitchen. Why not treat her to dinner on Mother’s Day this year?

The first thing that you will want to do is to find out Mom’s favorite restaurant. Make sure that her favorite place is going to be open on Mother’s Day as some restaurants may not be open. Make sure to have a reservation, Mother’s Day is a busy time for restaurants. You might be amazed to find that everyone has the same idea for this holiday. By planning in advance and making a reservation early this will ensure that you have the perfect spot to dine.

There are a few restaurants that have a first come first serve policy. This means that they won’t take reservations. If this is the case, try taking Mom out for brunch. Many people think of dinner as an ideal time to get Mom out and away from the kitchen. Often time’s brunch is a better choice because it is less likely to be crowded. By going for brunch from the hours of 2 to 4, this will avoid the larger crowds and will ensure you that a table is open and available for you.

What if Mom doesn’t have a favorite restaurant? This will take some thought on your part to figure out the type of restaurant she would enjoy. Maybe Mom likes buffet style. Perhaps she would enjoy being wined and dined somewhere a little fancier. Is Mexican or French food right up her alley? Could seafood or a great steak fancy her taste buds? Keep all of this in mind before deciding on the perfect restaurant to take Mom. She will know just how much you appreciate her by pleasing her with her favorites.

Could home be your Mom’s favorite place to eat? If this is the answer then prepare yourself to make a meal fit for a queen. Hire a caterer or even cook the meal yourself it totally up to you. You can always find a great restaurant that has delivery or pick-up and order the meal. However you choose to go Mom won’t care as long as she is with the ones she loves.

No matter what ways you choose make this day a special day for Mom to remember. This will make memories that will last a lifetime. After all isn’t that what it is all about? Spending quality time with Mom and showing her how much you love and appreciate her.

Mother’s Day Meal Plans

fruitandflowersAccording to tradition we have turkey at Thanksgiving, ham at Christmas or both at Easter. What we do not have is a specific food that says “Mother’s Day”. Not having a specific food for Mother’s Day can either be a curse or a blessing, depending upon your outlook.

Your job will be simple if you already know what your Moms favorite food or meal is. First, make a menu of those items, create your grocery list, shop for the items and find the recipes, the last step is to cook the meal. Here are a few ideas for a Mother’s Day meal if you don’t have a clue what to prepare.

Breakfast Ideas

Does breakfast in bed sound like a good idea? Maybe to you, Mom may just be laying in bed worrying about the mess you are making. Why not just get the kids ready and this will allow Mom to shower and dress in peace. Then you can treat everyone to breakfast at her favorite diner or restaurant. If you are preparing breakfast for Mom make her favorite dishes and by all means don’t forget to clear the table, wash the dishes and put them away.

Brunch/Lunch Ideas

Why not let Mom sleep in a little on Mother’s Day? This will mean that you will have to tend to any little ones that might be around. Then serve her brunch or lunch. You can be preparing the meal while Mom is waking up and getting ready to start the day. This will be a surprise when she walks into the kitchen and finds a delicious meal waiting for her. Let’s not forget to take the responsibility of cleaning up. Make plans for Mom to do a relaxing activity while she is waiting for you to finish with the clean-up. A happy Mother is well rested and has food in her belly.

Dinner Ideas

Remember that Mother’s Day is on Sunday, a full day. This may mean that you have to wait until evening to shower your Mom with her edible treats. Are you not able to prepare the meal yourself? With a little advanced preparation it is still possible. You can still surprise Mom by ordering a meal from your local grocery store, restaurant or other food delivery service. Make sure that you don’t forget to include the paper goods with this. This will ensure that you have a “home cooked meal” without the dirty dishes that come along with preparing dinner.

A way to your Mom’s heart is through food. Food is one way to express love and appreciation to Mom this Mother’s Day. Any effort that you put forth to making this day special for Mom will be truly appreciated by her.
