Fried Apple Rings with Maple Glaze

What You Need:

3/4 C of flour
1 egg, beaten
1/4 C of maple syrup
1/4 C of buttermilk
3 large apples, peeled, cored and cut into rings
Oil for frying

How to Make It:

Whisk together the flour, egg, syrup and buttermilk.
Dip the apples into the mixture, coating both sides.
Pour 2 inches of oil into the deep fryer.
Heat the oil to 375 degrees.
Fry the apples a few at a time for 2 minutes or until they are golden brown.
Drain on paper towel and continue until all the apple rings are fried.

Makes 4 servings

When deep frying in batches always be sure the oil reaches the desired temperature before adding more food to fry. These apple rings are a mighty tasty side dish addition to any meal. Turn them into a great dessert by dusting them with a little confectioner’s sugar.

Apple Stuffed Breakfast Casserole

What You Need:

8 slices white bread, crust removed and cubed
1/2 lb. cream cheese, cubed
1 large Granny Smith apple, peeled, cored and chopped
6 large eggs
1 C of whole milk
1 1/2 tsp ground cinnamon

How to Make It:

Preset the oven temperature to 375 and lightly grease an 8X8 deep dish casserole.
Scatter half of the bread cubes over the bottom of the casserole dish.
Place the cream cheese cubes evenly over the bread.
Spread the apples evenly over the cheese.
Add the remaining bread cubes spreading them out to the edges of the dish.
Whisk the egg, milk and cinnamon together in a bowl.
Pour the mixture over the top of the entire casserole.
Bake the casserole for 35 minutes, uncovered, or until the eggs are set.

Makes 6 servings

The deep casserole dish will ensure that all the egg mixture is soaked into the bread cubes. You can also allow the casserole to stand for about 5 minutes to ensure the bread is well soaked if you wish. This yummy breakfast casserole can be left in the oven after baking on warm until everyone is up and ready to enjoy it. This casserole isn’t extremely sweet so adding a little syrup or confectioners’ sugar won’t leave you feeling overly indulged at the end of the meal.

Bittersweet Chocolate and Cappuccino Cream Tart

1 fully baked prepared shortbread crust
1/2 C of heavy whipping cream
3 T of whole milk
3 oz. bittersweet chocolate, chopped
1 large egg
1 T of sugar
1/8 t of salt
2 T of confectioners’ sugar
1 t of unsweetened cocoa powder
1/4 t of instant espresso powder
1/2 C cold whipping cream

How to Make It:

Place the oven rack in the middle rung of the oven and preheat the oven to 350 degrees.
Pour the heavy cream and milk into a saucepan and place the pan over medium heat.
Bring the liquid to a rapid boil then remove from the heat.
Add the chopped chocolate, swirling the pan slightly so all the chocolate is covered.
Let the chocolate stand in the hot liquid for 1 minute then stir to melt completely.
In a small bowl whisk the egg, sugar and salt until well blended.
Slow pour 1/4 C of the chocolate mixture into the egg mixture.
Stir as you add so the egg doesn’t cook with the hot liquid.
When the chocolate mixture is blended, add the remaining chocolate and whisk well.
Spread the filling into the pie crust.
Bake the tart for 16 minutes or until the center is set.
Remove from the oven and transfer to a wire rack to cool for 15 minutes.
In a bowl whisk together the confectioners’ sugar, cocoa and espresso powder.
Slowly whisk in the cold whipping cream.
Beat with an electric mixer on high speed 1 minute or until stiff peaks from.
Remove the tart from the pan and place on a platter, pouring the cream over the top.

Makes 8 servings

If you have a tart pan it will make the removal of this cake easier. If a tart pan is not available a non metal spatula and kitchen knife will also work. Run the knife carefully along the sides and under the tart. Lift the tart with the spatula and carefully place on the platter.
