Options for eating healthy are numerous and believe it or not they are less expensive than most people know. Eating at home is defiantly less expensive than eating out. Knowing what kinds of foods are high quality but not high priced will help in creating those delicious healthy meals at home.

Beans

No matter if you buy bean from the bulk isle or get them in a can, they are cheap and packed with protein. Out of the hundreds of varieties, there are countless numbers of ways to utilize beans in your cooking.

Frozen Fruits and Veggies

Many people have the misconception that fresh fruits and vegetables are the best way to go. It turns out that many of the fresh produce you see in the store, is actually around a week old by the time you pick it up and give it a squeeze. Once picked, produce begins to lose its nutrients, so by the time it gets to the store, there aren’t much of the original nutrients left.

Frozen produce is typically flash-frozen 24-48 hours after picking, locking in the highest concentration of nutrients available. Since they come in packages, they tend to be cheaper by the pound than their plump partners and can store for longer periods of time. The next time you go to the store, take a look at the price of frozen spinach versus fresh spinach. Even if they are priced around the same mark, think about how long the fresh spinach has been sitting there

Oats

Oats are one of the most, if not THE most, versatile foods around. They taste like whatever you cook them with, they can be creamy or crunchy, baked, fried, sautéed; you name it, oats can probably do it. The bigger the container, the cheaper it will be. Oats are loaded with fiber and contain a decent amount of calories for the serving size.

Quinoa

For the group of people who must have pasta at least three times a day, quinoa is a great alternative without all of the carbs and for a fraction of the price. Finding quinoa in the bulk isle is a steal; it is easy to prepare, completely healthy and cheap as all get-out. Quinoa is more like a grain than pasta, but can double in some of the same ways that pasta does, plus it is a great addition to salads.


Brown Rice

Not only is brown rice healthy, with around 4 grams of protein, 2 grams of fiber and only 170 calories per serving, it is dirt-cheap. The great thing about rice is the servings are measured by dry volume, which means, when the rice is cooked, your serving size nearly doubles. Brown rice can be used in burritos, casseroles, fried rice and is even hearty enough to stand up in many stews.

Feeding our families healthy meals doesn’t mean breaking the bank. Remember to keep the meal simple. Not only is a simple meal less expensive but it is the best way to ensure all the nutrients stay in the food while also giving you that great taste your family loves. Wake Up Breakfast Burrito

burritoWhat You Need:

2 T of butter
12 large eggs
1/4 C of milk
1/2 t of salt
1/2 t of pepper
1 C of Cheddar cheese, shredded
1 C cooked ham, chopped
6 (6 inch) flour tortillas

How to Make It:

Preset the oven temperature to 400 degrees.
Place the butter into a 15X10 inch jelly roll pan and place in the oven until the butter has completely melted.
Place the eggs, milk, salt and pepper into a bowl and whisk until well combined.
Pour the egg mixture into the pan with the melted butter.
Sprinkle the cheese over the top of the egg mixture.
Layer the ham over the top of the cheese.
Wrap the tortilla shells in foil.
Place the eggs and tortilla into the preheated oven.
Bake 8 minutes or until the eggs are set and the tortillas are warm.
Cut the egg mixture into six squares and place one square onto each tortilla.
Roll the tortillas closed over the egg mixture.

These make a great grab and run breakfast. Filled with ham and cheese they are a quick but healthy on the go breakfast. Sprinkle chopped onion, green pepper or mushrooms over the top of the meat if you like.

Breakfast Burritos-Think Outside the Box

Breakfast burritos are becoming a big hit and they can be quick and easy too. Think outside the box by adding ingredients that you might not think of for breakfast. You probable already have some of these items in the kitchen or better yet just use leftovers from the night before.

Warm up a tortilla and add honey and peanut butter. Roll them into an easy and quick breakfast on the run. They are delicious and healthy and who doesn’t want that for their family?

How about a hot tortilla with a couple of hot dogs wrapped in them? Add your favorite hot dog toppings like chili or cheese and yes, you have breakfast to go. It may not seem like a normal breakfast but still it is energy for the day. Who can argue with that?

Try some leftover spaghetti in a tortilla. You could be surprised at how good it tastes. No spaghetti noodles? Try the sauce wrapped with a hot dog in a tortilla and you still have a fairly healthy breakfast.

Try heating up that leftover chili and spreading it on a tortilla. Just roll it up and go. Who would think that this is a great taste sensation and so easy to do? Cook a couple of scrambled eggs and add the chili and you have another great choice for breakfast.

Do you ever have leftover baked potatoes? Slice and dice them, warm them in the microwave. Add some seasonings, onions or chives and sour cream. Wrap in a warm flour tortilla and you can eat on the run.

Take a can of refried beans and spread them on a tortilla, place in the microwave with some cheese and a little sour cream and you have a great Mexican tortilla. Beans have a lot of protein and can make a great morning eye opener.

Have leftover salad mix from the night before? Take the salad mix, place in a tortilla and add your favorite salad dressing, roll and eat. Not necessarily something you would choose for breakfast but it’s healthy and makes a great day starter.

Do you have leftover steak from last night? Slice, dice or cube it and add it to a tortilla for a great source of protein and a very easy breakfast meal.

Cabbage and Grilled Bean Burritos

1/3 C wheat berries
3 C of water
4 C green cabbage, grated fine
1/4 C onion, minced
2 carrots, grated fine
1 C mayonnaise
3 tbsp yellow mustard
1 tbsp extra virgin olive oil
1 onion, diced
1 (15 oz.) can of kidney beans, drained
2 tbsp barbecue sauce
1 tsp dried thyme
1 egg
1/2 C bread crumbs
1 tsp salt, divided
1/2 tsp pepper, divided
6 soft tortilla shells

How to Make It:

The wheat berries are rinsed and drained well.
Cover the wheat berries with water in a saucepan and bring to a rolling boil over high heat.
Reduce the heat to low, cover the pan and simmer 1 1/2 hours or until the berries are tender then drain the berries and set aside.
In a mixing bowl put the cabbage, carrots and minced onion and mix well.
Whisk together the mayonnaise, mustard, 1/2 tsp salt and 1/4 tsp of pepper in a small bowl.
Pour the mixture over the cabbage and toss to coat.
Cover and refrigerate until ready to serve.
In a skillet over medium heat put the oil and heat until it becomes hot.
In the hot oil stir in the diced onion and cook 5 minutes or until a golden brown.
Put the onion, beans, barbecue sauce, thyme and egg in a food processor and process until smooth.
Mix the smooth mixture into the wheat berries.
Add the bread crumbs and remaining salt and pepper to the wheat berries and blend well.
Form the mixture into 6 oblong burgers.
The grill is preheated to medium temperature.
Mist the burgers with a non stick cooking spray and grill for 10 minutes or until crisp, turning often.
Place the burgers on the tortilla shells.
Top each one burger with the cabbage mixture.
Roll the tortillas around each burger for form a burrito.
