Monster Eye Deviled Eggs

devilledeggsWhat You Need:

3 C of hot water
2 T red food coloring
1 T of white vinegar
6 hard boiled eggs, cracked but not peeled
1/3 C of mayonnaise
2 t Dijon style mustard
1/4 C of green onions, chopped fine
2 T cilantro, minced
12 ripe olives, sliced
1 t ketchup

How to Make It:

In a large mixing bowl put the water, food coloring and vinegar and whisk until blended well.
Add the unpeeled eggs to the mixture and if the water does not cover the eggs completely add more hot water.
Allow the eggs to stand in the colored water for 30 minutes.
With a slotted spoon remove the eggs, dry and peel.
Slice the eggs in half lengthwise.
Carefully remove the yolks from the eggs and place in a small bowl.
Place the egg whites on a platter.
Coarsely mash the egg yolks with a fork.
Add the mayonnaise and mustard and stir until well combined.
Stir in the onion and cilantro.
Spoon the yolk mixture into each of the egg whites.
Press a slice of olive into the egg yolk mixture then add a dab of ketchup to finish off the eye.
Cover and place in refrigerator until you are ready to serve.

These are gruesome looking deviled eggs but they taste really great and will be the hit of any party. They have the best bloodshot effect if served within 2 hours of preparation.

In recent years pasta salads have taken center stage on salad bars everywhere. People are bringing them to potluck dinners, creating them for family reunions and ordering them in their favorite restaurants. Why not create your own pasta salad for the dinner table at home? When it comes to salads most of us think of that little dish that comes with lettuce, some veggies, cheese and dressing we have before our main meal. Others see that big salad bar with all the fixings. These are not the only ways to enjoy a salad anymore. Why not make your next salad the main course of your meal.

Salads have come a long way now that more of us are trying to eat healthy. Main course salads have become a hit and people are finding ways to make these salads a delightful treat. They’re simple to throw together and can fill up any stomach – no matter how big it might be.

These main course salads can be served in many different ways. Use a salad plate or a pretty, decorative salad bowl. Taco salad bowls are also a great base for your salads. You can find them in almost any grocery store and they don’t have to be filled with just taco fillings. Pita bread or taco shells can also be used to make a great main course salad base.

Main course salads can be made with Mexican or Asian fixings as well. Add some chow mien noodles and more to give the salad an Oriental flare. Don’t forget your dressing. There are a vast amount of flavorful dressings available these days to top any great salad.

Create Great Salads Using Leftovers

How many times have you heard someone in your family say this? “I don’t want that for dinner. We just had the same thing last night.” More often than not when it comes to making use of leftovers this is a common occurrence in most households. What happens next? The food stays in the refrigerator for 3 or 4 days then it hits the trash. What a waste of good food and money.

There’s a way to use those leftovers that’s quick, saves money and will keep the whining and complaining to a minimum. Create a salad. That’s right a salad. How? It’s pretty simple when you think about it. Here are a few salad ideas made with leftovers you can try the next time you’ve got food in the fridge that no one wants to finish off.

Take a look at the meat you have from previous meals. That roast beef can be sliced and added to a salad for a hearty lunch. What about pork? Add it to a salad with some sesame seeds and coleslaw for an Asian side dish.

Left over hamburger can be added to a bit of lettuce to make a taco salad. Add tomatoes, cheese, black olives and onion with a little dab of sour cream. Toss in some tortilla chips or use the ingredients to fill a taco salad bowl and you have the perfect taco salad to delight the whole family.

What about chicken or turkey leftovers? Don’t throw that carcass in the trash just yet. Remove the meat from the bones. Add some mayonnaise, celery, hard boiled eggs and pickles and you have the perfect lunchtime salad or after school snack.

Leftover vegetables always seem to be pushed to the back of the fridge. Nobody wants to eat broccoli, cauliflower, carrots or peas again. Place these items in a salad and watch your family dive right in. Add their favorite dressing and you’ll have a hit on your hands.

Leftover fruit can also be made into a yummy fruit salad. Add a few marshmallows, some nuts and a dab of whipped topping and you have the makings of a perfect dessert.

By using leftovers to make delicious salads you save time, money and can get one over on even the pickiest leftover eater.
