Top of the Morning Breakfast Scones

What You Need:

4 C of flour
2 tsp baking powder
1/4 C of cold butter, diced
1 Tbsp lemon juice
1 2/3 C of milk

How to Make It:

Flour a baking sheet well and shake off any excess.
Heat the oven to 450 degrees.
Sift the flour and baking powder together in a mixing bowl.
Add the butter and using your fingers rub it into the flour until it forms fine crumbs.
Whisk together the lemon juice and milk and allow it to stand 1 minute or until thick.
Work the flour into the lemon mixture until it forms soft dough.
Knead the dough until it forms into a ball.
Roll the dough out on a floured surface to a 1 inch thickness.
Flour a cookie cutter and cut rounds out of the prepared dough.
Place the rounds onto the prepared baking sheet.
Brush the tops of each biscuit with milk.
Bake the scones for 20 minutes or until the tops are nice golden brown.

Makes 4 servings

These scones or biscuits as we know them are a great addition to any breakfast, lunch or dinner. Serve them with a little extra butter and jam on the side for budget friendly quick anytime bread.

Ranch Dressing Chicken Wraps

1 C of sour cream
1 C of mayonnaise
2 (1 oz.) envelopes of dry ranch dressing mix
4 T of vegetable oil
2 (16.2 oz.) cans refrigerated flaky biscuits
2 (6 oz.) pkg. cooked chicken strips
4 T of butter, melted

How to Cook It:

Set the oven to preheat to 350 degrees F.
Generously spray a cookie sheet with a non stick cooking spray.
In a medium size mixing bowl mix together the sour cream and mayonnaise.
Blend in the ranch dressing mix and blend well.
On the prepared cookie sheet put the biscuits.
Press each biscuit into an oval using the tip of your fingers.
Over each biscuit spread 1 t of the dressing mixture.
Crosswise in the center of each biscuit put 3 chicken strips.
Bring the sides of the biscuit over the chicken and press to seal.
The melted butter is brushed over the top of each chicken wrap.
Put in the preheated oven and bake 20 minutes or until a golden brown.

Makes 16 wraps

These will be the hit of any party. Ranch dressing may be served on the side for dipping. If you would like a little more spicy taste use taco seasoning mix instead of the ranch dressing mix and serve salsa for dipping.

There are some wonderful ideas for freeze ahead breakfasts that take 30 seconds or less to make them a wonderful meal on the go. Try preparing different things for breakfast that you can take from the freezer and stick in the microwave while you are brushing your teeth or doing your hair? Then you can kill two birds with one stone.

Egg muffins are one freezer to microwave idea. Whisk several eggs together and add any of these ingredients, peppers, crumbled sausage, diced ham shredded cheese, onions or even bacon that has been crumbled up. Simply add your favorites and bake in a 350F oven for about 20 minutes in a muffin pan with cupcake liners. Allow them to cool on a wire rack to room temperature. Then place a couple of your egg muffins in a bag made for freezing. When you are ready, remove a bag and place your egg muffins in the microwave for about 30 seconds. When the microwave dings, breakfast is ready!

Next time pancakes are on the menu, make extra and put them in the freezer. Stack them with wax paper between each pancake in a freezer bag. Next time for breakfast on the go, take a couple of the pancakes out of the freezer and microwave them for about 1 minute. Add some powdered sugar, honey or even and roll the pancake up. Breakfast on the go is ready.

Meat biscuits are another fast way to make a breakfast on the go. When you are frying bacon, ham or sausage patties, cook a little extra for a quick breakfast on the run. You can use either croissants or prepare some biscuits, cut them in half, and add the meat patty. Store a couple in a freezer bag for a breakfast that is quick and easy. Remove a couple from the bag, place in the microwave wrapped with a microwave safe towel or napkin and reheat in the microwave for about 1 minute and they are done.

Southwest breakfast roll-ups are another great way to start the day. Scramble some eggs and add your favorite ingredients plus either some hot sauce or salsa. Roll them up and place in a freezer bag. To prepare, just pull out of the freezer and microwave for about 1 minute. Presto, breakfast in a jiffy.

Cinnamon Sugar Pecan Biscuits

1/4 C of sugar
1/4 C of pecans, chopped
1/2 t of cinnamon
2 C biscuit mix
1/2 C of cold water
3 T of butter, melted

How to Cook It:

The oven should be preheated to 400 degrees.
Blend together the sugar, pecans and cinnamon and then set aside.
Using the direction on the package prepare the biscuit mix using the cold water for the recommended liquid.
Shape the dough into a ball and put on a lightly floured piece of wax paper.
Flatten the dough ball into a 1 inch thick circle and then divided into 12 pieces.
Roll the 12 pieces into equal size balls.
Coat the dough balls with the melted butter.
Roll the balls in the pecan sugar mixture coating them well.
Place the balls into a circular baking pan with the sides touching.
Bake in the preheated oven 15 minutes or until a light golden brown.

Top with a powdered sugar and milk glaze while still warm for a special treat.

On the Go Cheese and Sausage Biscuits

2 C baking mix
1 lb. sausage
2/3 C of milk
1 1/2 C of cheddar cheese, shredded

How to Make It:

Set the oven temperature to 400 degrees and allow it to preheat.
Mix the baking mix, sausage and milk together well in a large mixing bowl.
Add the cheese and mix until blended in well.
Place the batter by spoonfuls onto an ungreased rimmed baking sheet.
Bake the biscuits for 18 minutes or until they are a nice golden brown.

Makes 24 biscuits

Use crumbled bacon or bits o ham in place of sausage if you prefer. Brush with melted butter before serving for a special touch.

Sausage Is a Versatile Breakfast Meat

You can use sausage links, patties or even just ground sausage to make a lot of different breakfast meals for families that are on the go. Below are some ways to use sausage in a quick breakfast setting.

Take a scrambled egg and add ground sausage or sausage patty and roll them in a tortilla. You have a great burrito for breakfast. Add a little hot sauce or some salsa to it and you have created a new flavor to savor with a southwestern burrito.

Put a cooked sausage patty inside a couple of pancakes for a great griddle recipe. Add a fried egg and you have 2 great breakfast ideas for an on the go morning.

Try a meat cup. Take a couple of eggs and some ground sausage and pour them into muffin tins and cook for about 20 minutes at a 350F oven. Remove and eat. If you make more than you can eat, simply freeze and reheat at a later time when you are running late.

Slice a croissant or breakfast bagel in half, insert a cooked sausage patty and you have an easy and quick breakfast idea. You can add an egg or sliced cheese if you so desire and create your own special treat for your family.

2 C of flour
1 1/2 t baking powder
1 t salt
1/2 t ground sage
1/4 t pepper
3/4 C chilled unsalted butter, cut into pieces

How to Make It:

Allow the oven to preheat to 375 degrees.
Place the milk and egg into a small mixing bowl and whisk until well blended.
Dump the flour and baking powder into a large mixing bowl.
Sprinkle in the salt, sage and pepper.
Add in the butter pieces and using your fingertips blend the mixture until it resembles small peas.
Pour the milk mixture into the flour mixture and stir until moist clumps begin to form.
Lightly flour your hands and knead the dough 6 times or until it holds together well.
Roll out the dough to 1/2 inch thickness on a lightly floured surface.
Dip a round cookie cutter into some flour and cut out 12 biscuits.
Lightly spray a baking sheet with a non stick cooking spray and lay the biscuits on the sheet.
Bake 10 minutes or until the tops are golden brown.

Makes 12 biscuits

Mom will be wondering just how hard you worked to make these little gems. Add a sausage patty or a slice of bacon or ham and an egg and she will have the perfect breakfast biscuit.

Old Fashion Baking Soda Biscuits

What You Need:

1 stick of unsalted butter, melted and divided
2 C of flour
3 t baking powder
1/2 t baking soda
1/2 t salt
1/2 t sugar
4 T of cold unsalted butter, cut into pieces
3/4 C buttermilk

How to Make It:

Place the oven temperature at 450 degrees.
Brush a baking sheet with 2 T of the butter.
Place the flour, baking powder and soda into a large bowl.
Add the salt and sugar and blend all the ingredients together well.
Use a pastry blender and cut in the cold butter until the mixture become crumbly.
While tossing with a fork slowly add the buttermilk to the mixture.
Stop adding the buttermilk when the mixture begins to hold together.
An additional 1/2 T of buttermilk should then be added so the dough holds together.
Flour your hands and knead the dough in the bowl 6 times.
Turn the dough out onto a lightly floured surface and pat the dough out to form a 1/2 inch thick rectangle.
Use a round cutter dusted lightly with flour to cut out the biscuits from the dough.
Lay the cut out biscuits onto the prepared baking sheet.
Bake until the tops are a golden brown about 10 minutes.
Brush the top of each biscuit with the remaining melted butter.

Serves: 12 biscuits depending on the size
