Frozen Halloween Banana Bites

4 bananas, peeled and cut into bite size chunks
2 t Halloween sprinkles
2/3 C semisweet chocolate chips
2/3 C milk chocolate frosting
10 toothpicks

How to Make It:

Using wax paper cover a serving plate completely.
Put the banana chunks, cut side down onto the prepared plate.
Stick a toothpick into the center of each banana chunk.
Freeze the banana chunks for 20 minutes or until hard.
In a small cup put the Halloween sprinkles and set aside.
Put the chocolate chips in a microwave safe bowl and microwave on high 1 minute.
Take from the microwave and stir until smooth.
Stir the frosting into the melted chocolate until blended in well.
Put in microwave on high for 15 seconds.
Take from microwave and stir until the mixture becomes a dip consistency.
Dip each frozen banana in the melted chocolate until completely covered.
Roll the dipped banana chunks through the sprinkles until covered completely.
Place the bananas chunks back on the wax paper lined plate.
Put the dipped bananas in the freezer for at least 1 hour or until the chocolate has hardened.

If the chocolate mixture starts to harden before all the bananas are coated it can be heated in microwave on high for 10 to 15 seconds or until soft. Stir well before resuming the dipping.

Marvelous Chocolate Waffles

1 1/2 C of baking mix
1 C of sugar
1/3 C of baking cocoa
3/4 C of water
2 T of canola oil
2 eggs

How to Cook It:

Spray a waffle iron with a non stick cooking spray and allow the iron to heat.
Toss together the baking mix, sugar and cocoa in a large mixing bowl.
Add the water, canola oil and eggs and blend until all the ingredients are mixed together well.
Pour the batter by spoonfuls onto the heat waffle iron.
Bake 5 minutes or until the steaming stops.

Top these waffles with sliced bananas, strawberries or raspberries for a special treat. If you made more waffles than you can eat in one setting go ahead and freeze them. They are easy to reheat in the toaster or microwave.

3 C of milk
1/4 t of salt
1 1/2 C quick cooking oats
2 large bananas, sliced
2 T of peanut butter
1/2 t vanilla extract

How to Cook It:

In a small saucepan over medium heat put the milk and salt.
Bring the mixture to a steady boil then stir in the oats.
Stirring often cook 2 minutes or until thickened.
Add the bananas and peanut butter and stir until blended in well.
Add the vanilla and mix until all the ingredients are blended together.

If your kids like bananas and peanut butter they are sure to love this oatmeal. Add crunchy peanut butter if you prefer.

Angel Cake and Bananas Kabobs

1/4 C apple jelly
1/4 C apple juice
1 (11 oz.) angel food cake, cut into 2 inch cubes
3 bananas cut into 1/2 inch thick cubes

How to Make It:

Set the grill to heat to medium heat.
In a small saucepan over low heat put the jelly and juice and stir constantly until the jelly is completely melted.
Alternating between the two, add cake cubes and banana cubes onto 4 skewers until the skewers are full.
Brush the cake and banana cubes evenly with the jelly mixture.
Place the skewers on the grill for 3 minutes, turn and grill another 3 minutes or until lightly browned.

What You Need:

1/4 C sugar
1 tsp ground cinnamon
8 brown and serve rolls, cut into quarters
4 tbsp butter, melted
1 pint strawberries, hulled
2 firm bananas, peeled and cut into chunks

How to Make It:

Prepare the grill for low heat.
Toss the sugar and cinnamon together well.
Brush the rolls evenly with the butter.
Sprinkle the rolls with the cinnamon sugar mixture to coat very well.
On 4 skewers thread a strawberry, a roll piece and a banana chunk until the skewers are filled.
Grill these for 8 minutes or until the rolls are toasted, turning often for even grilling.

Crunchy Red Apple Salad

2 red apples, cored and cut into bit size pieces
4 firm bananas, halved and sliced
1/2 C of cashews, chopped
1/2 C of mayonnaise,
4 tbsp creamy peanut butter

How to Make It:

Toss together the apples, bananas and cashews.
Whisk the mayonnaise and peanut butter together in a bowl until smooth.
Fold the mayonnaise mixture into the fruit and nuts until well combined.

Makes 8 servings

Crunchy peanut butter may be used in place of the creamy peanut butter and cashews if you prefer.

Mandarin Orange Banana Casserole

What You Need:

6 bananas, peeled and cut in half lengthwise
1/2 C Mandarin orange sections
1 T brown sugar
2 T of orange juice
2 T of lemon juice

How to Make It:

Bring the oven heat to 350 degrees.
Use a non stick cooking spray and lightly grease a rectangular baking dish.
Place the bananas into the prepared dish in a single layer.
Layer the orange segments over the top of the bananas.
Sprinkle the brown sugar in an even layer over the fruit.
Whisk the orange juice and lemon juice together in a small bowl.
Pour the juice mixture over the top of the casserole.
Bake for 30 minutes being sure the casserole is completely heated through.

Serves: 6

This easy casserole is always a hit. Use the juice from the orange segments instead of regular orange juice. To give this casserole a little color, add a 1/4 C of halved Maraschino cherries on top of the orange segments.
