In terms of global sales, no other fruit tops bananas. This curved tropical fruit is loved the world over, but there are some interesting facts you may not know about this highly popular, and delicious, fruit.

What is it?

Banana is the common name for a number of different fruits around the world. What we think of as bananas is not necessarily the same as many other cultures. Bananas come in a variety of sizes and colors when ripe, including yellow, purple, and even shades of red. A visitor from the tropics to the United States might not even recognize those little yellow bunches in the grocery store.

History

Native to tropical South and Southeast Asia, and likely to have been first domesticated in Papua New Guinea, bananas are cultivated today throughout the tropic regions of the world. They are grown in at least 107 countries, and are harvested primarily for their fruit, and to a lesser extent to make wine and decorative plants.

Recent findings suggest that banana cultivation goes back to at least 5000 BC in the Asian regions and possibly even to 8000 BC. It is likely that other species were independently domesticated at later times elsewhere in Southeast Asia and finally into Africa.

Health Benefits

Bananas are a good source of vitamin B6, vitamin C, manganese, potassium, and iron. One new catch phrase, probiotic “friendly” bacteria, is old hat to the banana; this fruit has been “friendly” to our digestive systems long before we heard the term. Along with other fruits and vegetables, consumption of bananas may be associated with a reduced risk of a variety of cancers, including colorectal cancer and breast cancer.

Some studies have found that banana ingestion may increase the ‘feel good’ chemicals, dopamine and serotonin, in the brain. Other studies have shown positive results using bananas in the diet to treat jaundice and kidney stones. Many people who workout or play sports know the benefits of eating a banana after their workout is over. The word ‘banana’ usually refers to the soft, sweet dessert variety. By contrast, other countries grow and eat bananas with a firmer, starchier fruit, called plantains or cooking bananas. The terms ‘plantain’ and ‘banana’ in these countries are widely interchangeable which means you need to be careful when asking for a banana ? you never know which one you might get.

The banana plant is a very large flowering plant and is often mistaken for trees. Their main ‘trunk’ is actually a pseudo-stem that grows almost 25 feet tall. Each pseudo-stem can produce a single bunch of bananas, which actually grow point up rather than hanging down, making them look upside-down.

Bananas are slightly radioactive due to their high potassium content with a naturally occurring isotope, potassium-40. Proponents of nuclear power sometimes refer to the ‘banana equivalent dose’ of radiation to support their arguments for safe nuclear power.

How to eat

If you can peel it, you can eat it. Every culture has numerous ways to eat bananas, from deep frying, baking in their skin, or even steaming with rice. Pesticides are a large concern and most of us are finding that natural foods are a better way to eat. Another growing concern is genetically modified foods. Organic foods have taken a lead in the types of foods we are willing to feed our families. Yet all of these have their issues. Some make more sense than others.

Which foods to buy organic can make one wonder. There are a few simple tips to help us determine if organic is the way to go. Let’s look at a few guidelines that can help us make the right choice when we purchase food.

Organic Vegetables

Vegetables work in much the same way as fruits. Tomatoes, while technically a fruit, are usually found in the vegetable isles and are important to buy organic because of their thin outer covering. The same applies for bell peppers, mushrooms, corn, green beans, cucumbers, and leafy greens. Vegetables like asparagus, avocado, broccoli and onions are fine to buy au-natural.

According to the theory above, asparagus and broccoli should not be on this list, as they do not have thick skin. There is a reason for this we will get to in just a second. Grains are also slightly different. While most grains do not have thick outer shells, they are not as important to buy organic because there are fewer pesticides used on that type of crop due to their delicate growing conditions, which is the same reason for the asparagus and broccoli. Not many pests bother these crops, therefore no pesticide needed.

Organic Fruit

The first thing you see when you walk into a grocery store is usually a plethora of fruits and vegetables all grouped into one giant space. This is the fist situation to avoid. Look for organic produce that is separated from the traditional. The reason this is so important is because the sprayers that keep the fruits and veggies cool and moist can actually wash pesticides off of the traditional produce onto the outside of the organic produce. If there is not a separation, ask your store manager if they would mind separating it in the future.

Oranges, bananas, cantaloupe and watermelon all have one thing in common – thick outer layers. Ok, so maybe they have more than that in common, but the thick rind is what I was talking about. With thin outer layers, the actual edible fruit is exposed to pesticides, so it is more important to buy fruits like grapes, apples, berries and kiwi organic. Take a look at the outer layers and make a decision, just remember, the thicker the skin, the less important it is to buy organic.

Organic Meat and Dairy

In the meat and dairy section, beware the term ‘Natural’ as it means absolutely nothing. ‘Natural’ is not an officially monitored term by the FDA and anyone is allowed to put it on their packaging without any repercussions. The only label to look for is ‘Certified Organic’ which has been approved by the FDA to mean the packaged food is, well, certified as organic.

Just remember that produce with thick outer shells or rinds are less important to buy as organic because the outer layer will be removed before eating. As with meat, just remember that there is no guideline to go with the ‘Natural’ designation – so look for the ‘Certified Organic’ label to be sure you are getting the best protein.

Seasoned Tropical Shrimp

1/2 of an onion, sliced thin
6 garlic cloves, crushed
1 t of ginger
1 sweet potato, halved lengthwise and sliced into 1/4 in. pieces
1 1/2 lbs. shrimp
3 bananas cut into 1/4 in. slices
1 bell pepper, cored, seeded and cut into thin strips
1/2 T of water
1 T of sugar
1 t red pepper flakes
4 T of white vinegar
1/2 t salt
1/4 t pepper
1 (10 oz.) pkg. frozen spinach
1 (14 oz.) can diced tomatoes, drained well

How to Make It:

Allow the oven to preheat to 450 degrees.
Lightly spray a cast iron Dutch oven with a non stick cooking spray.
Place the onions and garlic into the bottom of the pan and season with the ginger.
Layer the sweet potatoes into the pan.
Spread the shrimp over the top of the sweet potatoes.
Place the bananas over the shrimp.
Stick the bell pepper strips between the bananas.
Pour the water into a measuring cup then add the sugar, pepper flakes and vinegar to the cup.
Whisk the mixture until blended together well.
Pour half of the seasoned mixture over the top of the ingredients in the pan.
Place the spinach into the pan evenly over the bananas and peppers.
Top the spinach with the tomatoes.
Pour the remaining seasoned water over the top.
Cover and bake 25 minutes or until the vegetables are fork tender and the shrimp are cooked through.

Makes 4 servings

Sweet potatoes differ in size so be sure to use only enough to make a single layer in the pan. Be sure to cut away any brown spots on the bananas before slicing them. The bananas are what give this dish is tropical taste. Pineapple rings may be substituted for the bananas. You may also add a chopped Serrano pepper to the onions and garlic if you like a little spice.

3/4 C of orange juice
3 bananas

Trix cereal, crushed

How to Make It:

In a blender put the yogurt and orange juice and stir just to incorporate into the yogurt.
Break each banana into chunks and put in the blender.
The strawberries are added to the blender.
Cover the blender and blend the mixture until smooth and creamy.
The mixture is poured into glasses and the crushed cereal is put on top.

Strawberry Apple Bagel Spread

1/2 C of strawberry cream cheese, softened
1 large red apple, cored and chopped small
2 bananas, chopped small
4 cinnamon flavored bagels

How to Make It:

In a mixing bowl put the cream cheese and stir until smooth and creamy.
Coat the apples and bananas with the cream cheese.
Toast each half of a split bagel in the toaster until slightly crispy.
The toasted bagels are cut into bite size pieces.
The bagel pieces are served with the spread on the side.

Makes 8 servings

You may use any flavor bagels in this recipe. You can also toast the bagels in a 375 degree oven for about 10 minutes. Cut the bagels into bite size pieces before toasting. Coat them with melted butter and sprinkle with cinnamon. Put in the oven and turn often during baking time. Be sure to cool before serving.

Steak Dinner with Banana and Yams

2 C of water
1 (12 oz.) lean round steak
4 yams, scrubbed and sliced
8 T of barbecue sauce
4 bananas, unpeeled
4 T of honey
1 t cinnamon

How to Make It:

In the bottom of a pressure cooker put the trivet.
The water is poured over the trivet.
Trim any visible fat off the steak.
On the trivet in the cooker put the steak.
The yam slices are layered over the steak.
The cooker is brought to high pressure and cooked for 20 minutes.
Slice the bananas in half lengthwise.
Pour the honey over the banana slices and then sprinkle evenly with the cinnamon.
Place the bananas prepared side up on a piece of heavy duty foil.
Wrap the bananas in the foil and seal tightly.
Quickly cool the pressure cooker under cold water after the 20 minutes.
Spread the barbecue sauce over the yams and steak.
Lay the sealed bananas on top of the steak and yams.
Bring the cooker to high pressure and cook 10 minutes then quickly release the pressure under cold water.

The safest, fastest and easiest method of releasing the pressure in your cooker is by running cold water over it. This method takes only a few seconds and when you open the cooker no odors or dangerous steam will escape.

Brown Sugar Bananas for Kids

4 large ripe bananas, peeled
2 T of brown sugar
1/8 t of nutmeg
1 C of water

How to Make It:

Lay the bananas in a single layer into a casserole dish.
Sprinkle the brown sugar evenly over the bananas then add the nutmeg.
Tightly seal the dish with heavy duty aluminum foil.
Place the trivet into the bottom of the cooker.
Pour the water over the trivet.
Set the casserole dish onto the trivet.
Bring the pressure up to high and cook the bananas for 6 minutes.
Slowly release the pressure.

This casserole is best served warm. This may be served as a side dish or as a dessert with any meal. This is a great way to get kids to eat fruit as they love this dish. Fresh fruit cooks very quickly in a pressure cooker so be sure to keep a timer handy.

Golden Almond Oatmeal

2 C of orange juice
1 C rolled oats
1/4 C of golden raisins
1 T almonds, sliced
1 t vanilla extract
1/2 t of cinnamon
1/4 t of nutmeg

How to Make It:

Pour the juice into the pressure cooker.
Stir in the oats, raisins, almonds and vanilla until well blended.
Add the cinnamon and nutmeg and stir to combine.
Bring the pressure to high and cook 1 minute.
Remove the cooker from the heat and allow the oatmeal to stand 5 minutes.

This served on a cold winter morning will help remove the early morning chill. For a special treat try adding milk, honey, sliced bananas or orange slices.

Munchy Strawberry Mini Rounds

1/4 C creamy peanut butter
1 t honey
3 fresh strawberries, cleaned and stems removed
24 mini rice cakes

How to Make It:

In a small mixing bowl put the peanut butter and honey and mix until well combined.
Cut all the strawberries into 4 slices.
Smooth the peanut butter mixture over 1 side of all the rice cakes.
Place strawberry slices onto 12 of the coated rice cakes.
Place the remaining 12 rice cakes on top of the strawberries with the peanut butter side down.

Set these little snacks out for the kids to munch on during the Halloween party. You can also use bananas instead of the strawberries for a different treat.
