Not So Spicy Taco Dip

chipsWhat You Need:

3 C of prepared bean dips
1 1/2 C of chive and onion sour cream
2 tomatoes, chopped
1 1/2 C of Mexican cheese blend
1 large bag of tortilla chips

How to Make It:

In the bottom of a serving bowl put the bean dip.
Over the bean dip spread the sour cream
The tomatoes are sprinkled over the sour cream.
Over the tomatoes spread the cheese.
Serve as a dip with the chips.

Makes 12 servings

This recipe will satisfy any kids taste for tacos. A few ideas for additions to your dip are taco flavored meat, olives, onions and lettuce.

Make Ahead Ham & Cheese Roll Ups

8 slices of white bread
2 (2.5 oz) pkg. cooked ham sliced thin
8 (1 oz.) sticks of string cheese
1 C of honey mustard salad dressing

How to Make It:

The crust is removed from each slice of bread.
Roll each slice of bread with a rolling pin until about 1/4 inch thick.
Between the 8 slices of bread divide the ham.
On each slice of bread place a stick of string cheese on the edge. The bread is rolled over the cheese and ham.
Into the roll put 4 toothpicks about 1 inch apart.
Cut each roll with a serrated knife into 4 sections.
The honey mustard is served for dipping.

Makes 32 roll ups

Make these rolls the night before a big party. Cover tightly and put in refrigerator until time to serve. You may use any type of thinly sliced meats.

Magnificent Mozzarella Nibblers

3 T of flour
1/2 t of salt
1/4 t of pepper
1 egg
1 t water
1 1/2 C of fresh bread crumbs
1 (8 oz.) block of mozzarella cheese, cubed
Canola oil

How to Make It:

In a zip lock baggie put the flour.
The salt and pepper are added.
Seal the baggie and shake to combine.
In a shallow bowl put the egg and water and whisk to combine.
In another shallow bowl place the bread crumbs.
With the canola oil fill a deep fryer and heat to 375 degrees.
In the flour mixture place a few cheese cubes and shake to cover lightly.
The flour coated cheese cubes are dipped in the egg mixture shaking off any excess.
The egg covered cheese cubes are rolled through the bread crumbs and coated lightly on all sides.
The cheese cubes are dropped into the heated oil.
Fry, turning occasionally to brown evenly or until the cheese begins to melt this takes about 2 minutes.
Using paper towels drain the cubes before serving.

Makes 8 servings

After frying each batch of cheese cubes check the oil to be sure it is at 375 degrees before adding more. It will take too long to cook if the oil is not hot enough. This will cause the cheese to shrink and ooze before the coating is nice and a crispy brown.

Preparation Time: approximately 20 minutes
Frying Time: approximately 2 minutes per batch
Draining Time: approximately 5 minutes per batch

From the Heart Fondue

What You Need:

2 T half and half
1 T butter
2 T light rum, divided
8 oz. semi sweet chocolate, chopped

How to Make It:

Place the half and half into a small sauce pan over medium heat.
Add the butter and 1 T of rum and bring the mixture to a slow simmer.
Once simmering, remove the pan from the heat.
Add the chocolate and whisk until the chocolate has completely melted and the mixture is smooth.
Pour in the remaining rum and whisk until combined.
Transfer to a small fondue pot or a custard cup place on a heated serving plate.

Serving Size: 4

This is the perfect dipper for fresh strawberries, raspberries or even fortune cookies. If the chocolate becomes too thick for dipping whisk in 1 t of half and half at a time until you achieve the desired consistency.

Romaine Lettuce Hearts Finger Salad

What You Need:

2 hearts of Romaine lettuce
1 T pecans, toasted
1 small red pepper
1/4 C Italian cheese, shredded
1 C Balsamic Vinaigrette dressing

How to Make It:

Separate the leaves of each heart and place them on 2 salad plates.
Sprinkle the top of the lettuce with 1/2 T of the pecans per plate.
Slice the red pepper in half and remove the seeds and core.
Slice each half into half then cut with a heart shaped cookie cutter.
Place the red pepper hearts on top of both salads.
Top each salad with 1/8 C of the cheese.
Divide the dressing into 2 small bowls.

Serving Size: 2

By placing the dressing on the side you can use your fingers to dip the lettuce and pepper hearts. This can be so romantic especially if you’re feeding each other.

Mini Pepperoni Hearts

What You Need:

1 (4 oz) pkg. pepperoni slices
6 large hamburger buns
1 C pizza sauce
1 C Mozzarella cheese, shredded

How to Cook It:

Place the oven temperature on 375 degrees and allow it to heat.
Place the pepperoni slices on a flat surface and use a small heart shaped cutter to cut each slice.
Lay the hamburger buns out flat on a baking sheet.
Cover each bun half with the pizza sauce.
Add the cut pepperoni hearts.
Sprinkle each bun half with the cheese.
Bake the buns for 8 minutes or until the cheese has completely melted and the bun is slightly crisp around the edges.

Serving Size: 12

These appetizers work very well at a teenagers Valentine’s party. All teenagers love pepperoni pizza and these are an easy way to give them what they want. To make more just double the recipe amounts and you can have 24 delicious treats.

Have My Heart Potato Pancakes

What You Need:

1 (14 oz) can chicken broth
1/2 t pepper
1 green onion, chopped
1 1/2 C instant potato flakes

How to Make It:

Pour the broth into a saucepan over medium high heat.
Stir in the pepper well.
Bring the broth to a brisk boil then remove from the heat.
Gently stir in the green onion.
Pour the potato flakes into the pan and let them stand until they have absorbed all the broth liquid.
Lay a heart shaped cookie cutter in a skillet over medium heat.
Fill the cookie cutter with the potato mixture.
Cook 5 minutes then flip and continue cooking 3 minutes or until browned.

Serving Size: 4

Make these heart potato cakes extra special for your Valentine by adding a spoon of applesauce with red hot candies on the top of each one.

Darling Pepperoni Pizza Bites

What You Need:

1 (4 oz) pkg. pepperoni slices
1 green pepper, diced
1 onion, diced
1 C cherry tomatoes, halved
1/4 C Italian dressing
1 C Mozzarella cheese, shredded
1 (13.4 oz) pkg. refrigerated pizza dough

How to Make It:

Place the oven on 400 degrees and allow the oven to heat while preparing the pizza bites.
Spray a large baking pan with a non stick cooking spray.
Place the pepperoni in a mixing bowl.
Add the green pepper, onion and tomatoes to the bowl and toss to combine.
Pour the dressing into the bowl and toss again to make sure all the ingredients are covered well.
Spread the mixture evenly into the prepared baking pan.
Sprinkle the cheese over the top of the entire mixture.
Unroll the pizza dough and cut it into 2 inch pieces with a sharp knife.
Lay the dough pieces over the top of the pepperoni mixture.
Bake 10 minutes or until the top is a golden brown and the mixture is heated through.
Let stand 5 minutes then invert on a large serving plate.

Serving Size: 6

Easy Valentine’s Day Recipes

When it comes to Valentine’s Day, most people go out for dinner. If you have a family this can get expensive. Try a few easy recipes to prepare a nice dinner for your loving family in no time.

Crock Pot

Get those slow cookers working. We often use it when we know we’ll be late getting home so dinner will be ready. The slow cooker is an asset on Valentine’s Day also. Most of the crock pots on the market today have a removable inner pot that is fashionable enough to serve at the table.

Cooking with a crock pot will free you up to do other fun Valentine’s Day things instead of standing in the kitchen. Some meal ideas for the slow cooker: beef roast with vegetables, chicken cacciatore, roasted chicken with vegetables, Swedish meatballs. The crock pot can be set to cook slowly (ten hours) or a bit faster (4 hours).

Cook-ahead meals

Dinner can be harried even on Valentine’s Day. Watching boiling pots and hot skillets not to mention something in the oven can absolutely fry your brain. Free your mind to enjoy this day of love by trying a dish that is easy to prepare ahead of time and just needs to be baked on Valentine’s Day.

Casseroles are the easiest make-ahead dishes. They can feature beef, chicken, or pork. Even fish like salmon or tilapia can be marinated and dressed the day before and wrapped in foil to bake on Valentine’s Day. Avoid adding milk or eggs before you are ready to cook the meal. If the dish calls for cooked meat, cook and cube the meat the day before and combine all ingredients in the casserole dish when you are ready to pop it in the oven.

Five or Fewer Ingredients

Another alternative to the slow cooker or cooking ahead is using a recipe that has five or fewer ingredients. When you have fewer ingredients, prep time is cut dramatically. While the food is baking you can occupy yourself with spending time with the family.

With so few ingredients, kids can even help with dinner. To further cut preparation time, if anything such as vegetables need to be cubed, diced, or sliced so that the day before and refrigerate them.

Pasta dishes fall into this category. Besides the pasta, you usually have sauce and some sort of meat or seafood. The pasta, sauce, and meat can all cook at the same time which saves time.

On Valentine’s Day, you want to be occupied with family and/or your sweetie. Slaving in the kitchen is not in the game plan. With a little pre-planning, you’ll spend less time in the kitchen and more time having fun.
