Dreamy Double Chocolate Malts

What You Need:

1 pint chocolate swirl ice cream, softened
1/2 C of milk, divided
1 pint of chocolate ice cream, softened
1/2 C of malted milk balls, chopped
2 tbsp malted milk powder
Canned whipped topping

How to Make It:

Place the chocolate swirl ice cream into the blender.
Pour 1/4 C of milk over the ice cream.
Blend the mixture until smooth.
Pour into 4 glasses and top each glass with 1 tbsp of the chopped milk balls.
Place the glasses in the freezer.
Place the chocolate ice cream into the blender and pour in 1/4 C of milk.
Add the malted milk powder and blend until smooth.
Spoon the chocolate malt mixture into each of the glasses.
Add a squirt of whipped topping and garnish with the remaining malted milk balls.

Makes 4 servings

Who doesn’t love a good malt? The kids will enjoy making these tasty treats. Use their favorite ice cream flavors for something a little different each time they make them. Its ok you can enjoy one with them YUM!

The Little Chef’s Salad

What You Need:

I head of lettuce, shredded
2 tomatoes, chopped
1 cucumber, sliced thin
4 hard boiled eggs, chopped
4 slices of deli chicken cut into thin strips
4 slices of deli turkey cut into thin strips
1 (8 oz.) pkg. mild cheddar cheese, shredded

How to Make It:

Place the lettuce into a large salad bowl.
Add the tomatoes and cucumbers and toss to combine.
Spread the chopped egg over the top.
Add the chicken and turkey slices and top with the shredded cheese.

Makes 4 servings

Kids love to cook for Mom and Dad and this salad is easy for them to throw together for a Saturday lunch. It’s also a great way to use up leftovers in the fridge. Let them add any of their favorites including leftover fresh veggies, diced ham or diced steak and don’t forget the dressings.

Pepperoni Pizza Pizzazz

What You Need:

1 (12 oz.) can refrigerated flaky biscuits
1 C of pizza sauce
80 pepperoni slices
1 C of mozzarella cheese, shredded

How to Make It:

Spray a cookie sheet with a non stick cooking spray and preheat the oven to 400 degrees.
Separate the biscuits into 10 individual biscuits and then separate each biscuit into 4 pieces.
Place the biscuits on the prepared cookie sheet.
Spread 1 tsp of pizza sauce over each of the biscuits
Add 2 slices of pepperoni and 2 tsp of cheese to each biscuit.
Bake 8 minutes or until the cheese has melted and tops are golden brown.

Makes 40 mini pizzas

These are a great snack for kids to make if they are having company over. They also work great as a party snack. Let the kids make them with all their favorite toppings or just with cheese if they prefer.

Surprise in the Middle Muffins

What You Need:

1 (6.4 oz.) pkg. of banana nut muffin mix
1/2 C of water
1/4 C quick cooking oats
2 tbsp vegetable oil
1 egg
24 milk chocolate candies

How to Make It:

Heat the oven to 350 degrees.
Place 24 liners in a mini muffin tin and spray them lightly with a non stick cooking spray.
Place the muffin mix into a mixing bowl.
Add the water, oats and oil into the bowl.
Add the egg and stir until the ingredients are blended together well.
Fill each muffin cup 2/3 full of the batter.
Gently press 1 chocolate candy into the middle of each cup until it’s covered with the batter.
Bake the muffin for 15 minutes or until the tops puff back when lightly touched.
Remove the muffins and let them cool in the pan for 2 minutes.
Remove to wire racks and allow them to cool for at least 5 minutes before eating.

Makes 24 mini muffins

One of the best ways to teach a child how to cook is by baking. This recipe is very simple and makes a great beginning recipe for children just learning to cook. These muffins will disappear pretty quickly but just in case there are leftovers they can be frozen and reheated in the microwave for 10 second on high.

Just for Kids Pizza Quesadillas

What You Need:

8 flour tortillas
1 C of pizza sauce
1 C of cheddar cheese, shredded

How to Make It:

Lay 4 tortillas into a non stick skillet and place over low heat.
Spread 1/4 C of sauce evenly over each tortilla.
Sprinkle each tortilla with cheese.
Place a second tortilla over the top.
Cook 5 minutes or until the bottom is lightly browned.
Carefully flip the tortilla and cook an additional 3 minutes or until nicely browned.
Remove and cut into triangles.

Makes 4 servings

Kids of all shape and sizes enjoy a good pizza but when they can make it themselves it’s even better. These quesadillas are perfect for them to make. They can add any of their favorite pizza toppings. Make sure they don’t fill them to full though or all the goodies will end up in the pan instead of their quesadilla.

All by Myself Lasagna Rolls

What You Need:

8 uncooked lasagna noodles
1 egg
1 (12 oz.) container of low fat cottage cheese
1 C mozzarella cheese, shredded
1/4 C Parmesan cheese, grated
1/2 tsp dried basil leaves
2 C of pasta sauce

How to Make It:

Fill a saucepan half full of water, place over high heat and bring to a boil.
Carefully place the lasagna noodles into the boiling water and bring back to a boil.
Reduce the heat to medium and cook the noodles, stirring occasionally, for 10 minutes or until tender.
Drain the noodles well and allow them to cool enough to handle.
Break the egg into a mixing bowl and beat lightly with a fork.
Stir in the cottage cheese, mozzarella cheese, Parmesan cheese and basil well.
Lay the lasagna noodles out flat.
Spread the pasta sauce evenly over each of the noodles.
Spread the cottage cheese mixture evenly over the pasta sauce leaving a little of the short ends uncovered.
Roll the lasagna from the short end tightly up over the filling.
Place the rolls seam side down into a microwavable dish and cover with wax paper.
Microwave the rolls for 2 minutes or until the cheese begins to melt.
Remove the wax paper and top with the remaining pasta sauce.
Return uncovered to the microwave and heat for 1 minute or until the sauce is heated through.

Makes 8 rolls

Children love to cook for their parents and this recipe is a great one for them to try. It’s best if they already know a little bit about cooking before they try this one as it can be a little tricky to get the noodles just right. If they wish they can brown 1 lb. of lean ground beef and stir into the pasta sauce before adding it to the rolls.

Rainbow Posies

What You Need:

1 (18 oz.) pkg. refrigerated sugar cookie dough
4 shades of colored sugar
20 pastel mint candy drops

How to Make It:

Preset the oven to 350 degrees allowing it to preheat.
Cover a cookie sheet with parchment paper.
Remove the cookie dough and separate into 20 cookies.
Place a cookie onto a cutting board and cut into 4 wedges.
Roll each wedge in a different colored sugar.
Place the wedges on the cookie sheet to form flower petals.
Continue with the remaining cookies in this same manner.
Place the cookies at least 1 inch apart on the sheet.
Bake the cookies for 15 minutes or until the edges are just turning brown.
Remove the cookies and press 1 mint, point down, into the middle of each cookie.
Allow the cookies to cool on the cookie sheet for 1 minute then move to wire racks to cool completely.

Makes 20 cookies

You don’t have to limit the kids to just 4 colors. Coloring sugar is easy and the kids will have a ball choosing different food coloring to make their pretty posies. Let them use their imagination to create cookies that are bright, pretty and are a lot of fun to eat.

Sweet Apple Dessert

What You Need:

1 crisp Gala apple
1 tbsp of sweet dried cranberries
1 tbsp of brown sugar
2 tsp of margarine
1/2 C of granola

How to Make It:

Cut the apple in half, cut out the core, scoop out the seeds and place the halves in separate bowls.
Sprinkle the cranberries evenly over both halves of the apple.
Sprinkle each apple with brown sugar.
Place 1 tsp of margarine onto each apple half.
Cover the bowls with plastic wrap leaving a little of the bowl uncovered so steam can be released.
Microwave on high for 3 minutes or until the apple is just beginning to soften.
Sprinkle with the granola before serving.

Makes 2 servings

This dessert is easy to prepare and tastes like heaven. Children enjoy being able to make fancy desserts especially for their parents. This one tops the list of easy and the kids will feel like they have made something very special with their own two hands. Be sure to use a good crisp cooking apple so it doesn’t turn mushy. Other good cooking apples besides Gala include Fuji or Braeburn. Raisins may also be substituted for the cranberries.

Fish Stick Burgers

What You Need:

18 frozen fish sticks
3/4 C of mayonnaise
2 tsp taco seasoning
6 hamburger buns
1 tomato, sliced
6 lettuce leaves

How to Make It:

Cook the fish sticks as directed on the box.
Place the mayonnaise into a mixing bowl.
Stir in the taco seasoning mix well.
Open the hamburger buns and spread the mayonnaise mixture over the buns.
Place a lettuce leave on the bottom of each bun.
Add 3 fish sticks on top of each lettuce leaf.
Place a tomato slice on each sandwich and top with the remaining bun.

Makes 6 sandwiches

Most kids love fish sticks and this is a way to change up their way of eating them while also helping them to eat a few more of those dreaded veggies. If your children prefer tartar sauce with their fish spread it on the buns instead of making the taco mix.

Red and Blue Breakfast Parfaits

What You Need:

2 (6 oz.) containers of low fat strawberry yogurt
1 C of fresh blueberries
1 C of honey cluster cereal

How to Make It:

Place the yogurt into a mixing bowl.
Fold in the blueberries.
Divide the yogurt mixture between two drinking glasses.
Top each parfait with 1/2 C of the cereal mixture.

Makes 2 parfaits

Let your children create their own favorite parfaits by using different flavors of yogurt and different fresh fruits. Not only is this a healthy way to start their day but it’s a great breakfast for the kids to fix for Mom and Dad.
