Monday Morning Weigh In

Here we are again, Monday morning and time to face that scale.  While I am usually pretty dilligent about my eating habits these days, and don’t lapse often… there are those far and few between times.

This weekends digression was the Cider Mill.  While I have the willpower of a saint and can resist chocolate, cakes and cookies… I am only human and the smell of hot out of the fryer donuts covered in sugar and cinnamon are more than my senses could take.  Now, I did not indulge myself in a dozen donuts nor guzzle  a gallon of cider, but I did partake in a piece of my daughter’s donut, several sips of a Cider Slushy (Heaven in a glass by any other name) and then to top it off…several forkfuls of the most deliciously flaky apple pie I have ever tasted (why don’t mine turn out this way?)

With that being said, I did manage to redeem myself for the rest of the day and eat my healthy food too. So how much did my littl foray into the wonders of the cider mill cost me?  Nothing really.  I went and weighed in this morning with a slight amount of dread in my heart, but was releived to find that I had lost 3.2 pounds for the week.  That makes 65.4 pounds in total so far.

I’m going to share a great recipe with you for Blackened Chicken that I love and it’s LOW FAT too (BONUS!).

What you need:
1 teaspoon paprika
1/4 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cumin
1/2 teaspoon dried thyme
1/4 teaspoon ground white pepper
1/4 teaspoon onion powder
4 skinless, boneless chicken breast halves
vegetable oil

How to do it:
Mix together the paprika, salt, cayenne, cumin, thyme, pepper and onion powder. Coat one side of the chicken breasts with mixture. Heat oil in skillet until very hot. Add chicken seasoned side down, and cook for 1 minute. Turn, and cook 1 minute on other side, this is the “blackening” step.  Place chicken on a lightly greased cookie sheet. Bake at 350 degrees F for 10 minutes or until chicken is no longer pink inside and juices are clear.  You can also use this mixture as a rub on pork, turkey, and other meats.
It’s especially great when grilling.

Healthy Mom Challenge Update- Weekly Weigh In

Well, here it is Monday.  One week since we posted our challenge on the blog.  I went to weigh in today feeling good about my progress and my effort last week.  I have been watching what I eat, and making sure that I actually do eat enough.  So what did the scale tell me today?  I am down 5.8 pounds for the week.

Here is a great low carb recipe I discovered this weekend:

Artichoke Stuffed Chicken (LOW CARB)

What You Need:

8 ounces cream cheese (0 carbs)
1 cup mayonaise (0 carbs)
1 cup sour cream (0 carbs)
1 cup Parmesan cheese (0 carbs)
1 8.5 ounce can artichoke hearts sliced into small pieces (6 carbs)
Several pieces of celery, chopped

How To Do It:

Mix the above together in a medium bowl.  This will be our filling.
You’ll also need 4 to 6 average sized chicken breasts depending on how many people you are serving. Pound chicken breasts flat using a meat tenderizer (Works great for getting some aggression out too!).

Spread the artichoke filling on top of the flattened chicken. Roll up and secure in place with a toothpick or skewer and put into baking dish. After all rolls are in place, sprinkle with parmesan cheese.  Bake at 375 degrees for 45 minutes or until chicken juices run clear.

You will most likely likely have left over filling that you can add on top of the chicken or serve it on the side at dinner time.

Healthy Mom Challenge

We have all heard of the show “The Biggest Loser”. Well, I have been on a quest to lose 87 pounds and I mentioned in my last post that I had 28 pounds to go. So while I am not necessarily in the same league as the contestants on “The Biggest Loser”, I have still gone quite a way.

I started my journey in March of this year (2009), and have made great strides to accomplish what I set out to do. For those of you who are counting, that makes 59 pounds lost so far. We all can benefit from a little support, and especially us busy moms who still have to provide meals for our family.

Eating Healthy and a Blog Give-a-Way!

It’s no secret to anyone who knows me, that for many years I have battled with my weight, and have usually been on the losing end.  I have fluctuated as little as 5 pounds to as many as 80 or more pounds of excess weight hanging on my medium build frame.  A few years ago, I decided enough was enough and I started my journey to healthier eating and a healthier life style.  I joined Medical Weight Loss, and let me tell you that was the best money I ever spent!  I have learned so much from the girls over at the Canton, MI clinic and they are always supportive and encouraging when I go in.

While Medical Weight Loss could help me lose the weight, I needed to learn how to approach that weight loss differently than I had in the past.  Being a healthy eater required that I became both educated and smart about what healthy eating actually is.  Being food smart isn’t about learning to calculate grams or fat, nor is it about studying labels and counting calories.  For me it is all about moderate eating, consisting of healthy meals at least three times per day and that what I eat is well balanced.  I needed to say good bye however to the ease of running through a drive-thru when in a pinch, or picking up a snack out of a vending machine.

Eating healthy requires quite a bit of leeway for me.  I might eat too much or not enough, consume foods that are sometimes more or less nutritious or just blow it all together. However, you should always fuel your body and your brain regularly with enough food to keep both your mind and body strong and alert.  This was something I have the hardest time remembering.

Here is what I have learned: A healthy eater is a good problem solver, we learn to solve a great many dilemmas such as how to still have foods we love but to do so on a healthy scale.  Healthy eaters have learned to take care of themselves and their eating with sound judgment and making wise decisions.  Healthy eaters are always aware of what they eat, and know the effect that it will have on their bodies.

When we are unable to take control of our eating habits, we are also likely to get out of control with other aspects of life as well.  You may find yourself spending too much, talking too much, or even going to bed later and later. I know that when I am out of control in one area of my life, generally I am out of control in many.

You should always remember that restricting food in any way is always a bad thing.  Don’t use food as a reward or punishment system…EVER.  I have fallen into that trap more times than I can count, and it usually ends in disastrous results.  Healthy eating is a way of life, something that you can do to enhance your body or your lifestyle.  If you’ve thought about making your life better, healthy eating might just be the place to start.  You’ll make life easier for yourself, those around you, and even your family.  Not to mention, for us parents… we want to practice what we preach right?
